3 ¾ cups all-purpose flour
1 ½ teaspoons baking powder
1 ½ teaspoons kosher salt
1 ¼ teaspoons baking soda
1 ¼ cups unsalted butter, softened
1 ¼ cups white sugar
1 cup light brown sugar
2 large eggs, at room temperature
2 teaspoons vanilla extract
1 (12 ounce) package semisweet chocolate chips

Steps:

  • Whisk flour, baking powder, salt, and baking soda together in a medium bowl, and set aside.
  • Beat butter and sugars together in the bowl of a stand mixer fitted with a paddle attachment on medium-high speed until light and fluffy, about 5 minutes. Add eggs one at a time, scraping down sides of bowl as necessary. Beat for an additional 3 minutes. Add vanilla and beat for 10 seconds.
  • Reduce speed to low and gradually add in the flour mixture, blending just until combined. Fold in chocolate chips.
  • Scoop 1 1/2-inch balls of dough 3 inches apart onto a parchment paper-lined baking sheet; freeze for 15 minutes.
  • Meanwhile, preheat the oven to 450 degrees F (225 degrees C).
  • Bake cookies in the preheated oven, rotating halfway through, until golden around the edges and slightly gooey inside, about 8 minutes. Let stand on the baking sheet for 4 to 5 minutes, then transfer to a cooling rack.

1 cup dark brown sugar
½ cup white sugar
2 large eggs eggs
2 teaspoons vanilla extract

  • Preheat the oven to 350 degrees F (175 degrees C). Grease 2 baking sheets.

2 teaspoons vanilla extract
2 cups all-purpose flour
⅔ cup cocoa powder
¾ teaspoon baking soda
¼ teaspoon salt

½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In large bowl, beat butter, sugar, eggs, and vanilla until light and fluffy. Combine the flour, cocoa, baking soda, and salt; stir into the butter mixture until well blended. Mix in the chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

120g butter, softened
75g light brown sugar
75g golden caster sugar
1 medium egg
1 tsp vanilla extract
180g plain flour
½ tsp bicarbonate of soda
150g dark chocolate, cut into chunks

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line two baking sheets with parchment. Cream the butter and sugars together until very light and fluffy, then beat in the egg and vanilla. Once combined, stir in the flour, bicarb, chocolate and ¼ tsp salt.
  • Scoop 10 large tbsps of the mixture onto the trays, leaving enough space between each to allow for spreading. Bake for 10-12 mins or until firm at the edges but still soft in the middle - they will harden a little as they cool. Leave to cool on the tray for a few mins before eating warm, or transfer to a wire rack to cool completely. Will keep for three days in an airtight container.

2 C minus 2 T (8 1/2 oz) cake flour
1 2/3 C (8 1/2 oz) bread flour
1 1/4 t. baking soda
1 1/2 t. baking powder
1 1/2 t. coarse salt
2 1/2 sticks (1 1/2 C) unsalted butter
1 1/4 C (10 oz) light brown sugar
1 C plus 2 T (8 oz) granulated sugar
2 large eggs
2 t natural vanilla extract
1 1/4 lbs. bittersweet chocolate discs or feves, at least 60% cacao

Steps:

  • Sift flours, baking soda, baking powder and salt into a bowl. Set aside. Using a mixer with paddle attachment, cream butter and sugars together until very light, about 5 min. Add eggs, one at a time, mixing well after each addition. Stir in vanilla. Reduce speed to low, add dry ingredients and mix just until combined, 5 to 10 seconds. Drop chocolate pieces in an stir in just until combined, without breaking them up. Press plastic wrap against dough and refrigerate, ideally 24 to 72 hours. (Sophie has done it after 6 hours and it has turned out fine.) When ready to bake, preheat oven to 350 degrees. Line a baking sheet with parchment paper. Set aside. Scoop into good-sized balls. The recipe says it makes 18 3 1/2 oz balls, but we find it makes at least twice that number of generous-sized cookies. Sprinkle a couple of crystals of sea salt on each ball. Bake until golden brown but still soft, 18-20. Transfer sheet to wire rack for 10 min, then slip cookies onto another rack to cool a bit more. Eat warm, if possible.
