1/2cup1/2 cup coarsely chopped onion
1/2cup1/2 cup chopped parsley
55 celery stalks, chopped
1bottle1 bottle rose wine
10cups10 cups cold water
1teaspoon1 teaspoon black pepper
2tablespoon2 tablespoon salt
1tablespoon1 tablespoon ground allspice
1/2teaspoon1/2 teaspoon cumin seeds
44 bay leaves
1tablespoon1 tablespoon wine vinegar
1head1 head green cabbage, cored and quartered
11 loaf French bread, cut into 1-inch slices
2525 whole fresh mint leaves, with stem-essential

Steps:

  • Combine pot roast, garlic, tomato sauce, onion, parsley, celery, rosé, water, black pepper, salt, allspice, cumin, bay leaves, vinegar, and cabbage in a large pot Cover and simmer 6 hours. During last hour, uncover the pot. At serving time, cover bottom of large, shallow serving dish with bread slices. Lay lightly bruised mint leaves on top of the bread so each piece is touched by mint flavor. Ladle the hot sopas on top and eat immediately.

1 (3 pound) beef pot roast
1 onion, diced
1 cup fresh mint leaves
2 cloves garlic, minced, or more to taste
2 teaspoons ground cinnamon
2 teaspoons ground allspice
2 bay leaves, or more to taste
salt and ground black pepper to taste
water to cover
1 head cabbage, quartered, or more to taste

Steps:

  • Place pot roast, onion, mint, garlic, cinnamon, allspice, and bay leaves in a large pot. Season with salt and pepper. Pour in enough water to cover the roast. Cook over medium heat until roast is tender, adding more water if needed, about 4 hours.
  • Stir cabbage wedges into the pot. Simmer until cabbage is tender, about 30 minutes.

This is a traditional Portuguese soup served in homes, and especially at the Holy Ghost Feast, a yearly celebration. I don't get to there any more, but at least I have the recipe! Some of the true afficionados use several kinds of beef, including liver. All ingredient amts are estimates, as are the number of servings.

3 lbs rump roast (size is an estimate)
2 (4 ounce) cans tomato sauce
2 cups red wine
3 -4 small white onions
3 -4 stalks celery & leaves
3 -4 cabbage leaves
1 head garlic
2 tablespoons pickling spices, tied in a cheesecloth
water, to cover all
salt and pepper
fresh mint leaves (optional)
Portuguese bread

Steps:

  • Combine everything and add enough water to cover all.
  • Let cook slowly all day (at least 8 hours).
  • Remove cheesecloth bag and discard.
  • To serve, put the sliced meat and sauce(soupas) over sliced bread.
  • Sprinkle with chopped mint if desired.

5 pounds beef chuck roast, bone-in
1 ½ cups red wine
4 cloves garlic, peeled, smashed
1 ½ cup water
2 large Vidalia or yellow Spanish onions, thickly sliced
2 cups finely chopped peeled very ripe tomatoes *
¼ cup ketchup
2 tablespoons tomato paste
1 2-inch piece of cinnamon
10 whole cloves
10 Jamaican allspice kernels
2 two medium bay leaves
¼ teaspoon cumin seeds
Coarse salt
8-10 mint leaves
Thickly sliced, day old Portuguese, Italian, Spanish or Greek or crusty artisan bread

Steps:

  • Day before: 1. Place the roast in a non-reactive pot with tight fitting lid such as a Dutch oven. Pour the wine over and toss in the garlic, a pinch of crushed dried red pepper and the 1 bay leaf. Cover and marinate several hours or overnight, turning the meat over occasionally. Next Day: 1. Stir in the water and toss in the onion slices. Mix the tomatoes and ketchup with the tomato paste into the pan. 2. Place the cinnamon stick, cloves, Jamaican allspice, cumin and remaining bay leaves in a square of cheese cloth. Tie it up with a piece of kitchen string.and place in the pot. Sprinkle the salt over. 3. Make sure liquid comes half-way up the side of the roast. If not, add additional wine and water in equal parts. 4. Cover and bring to a boil over medium-high heat. Reduce the heat to medium-low and turning the meat occasionally, simmer until the meat is falling-off -the- bone tender, about 3 hours. 5. To serve, remove the meat and pull it off the bone in pieces. Place a thick slice or two of bread in each soup plate topped with a mint leaf or two. Ladle a generous amount of broth over the bread to soften followed with topping it off with pieces of meat.

4 thick generous slices beef shin, about 700g/1lb 9oz
plain flour, for dusting
2 tbsp sunflower oil
3 medium onions, halved and thinly sliced
2 tsp caster sugar
6 garlic cloves, sliced
700ml beef stock (made with 2 cubes)
3 tbsp Worcestershire sauce
4 large flat mushrooms, thickly sliced
chopped parsley, to serve

Steps:

  • Dust the beef in flour, then set aside. Heat the oil in a large pan. Add the onions and fry for 5 mins. Add the sugar and cook for 5-10 mins, stirring frequently, until the onions are caramelised. Stir in the garlic for the final few mins.
  • Pour in the stock and stir in the Worcestershire sauce. Add the beef and mushrooms, then season, adding plenty of black pepper. Cover and cook gently for 2 hrs until the meat is tender. Can be chilled for up to 3 days. To freeze, cool and store in freezer bags. Thaw and reheat in a pan. Serve scattered with parsley.

I usually make this for special holidays and events! This is a old recipe from some friends in the Azore Islands. My wife loves it and can't get enough.

1 liter water (add some more as you see you need)
1 1/2 kg beef, Cut with some fat
1 kg beef bones with marrow
3 onions
3 garlic cloves
1 chicken
1 head white cabbage
400 g bread
9 potatoes
3 tablespoons butter
1/2 teaspoon salt
3 bay leaves
8 mint leaves

Steps:

  • Cook the meats in a large stock pot, adding the chicken last.
  • Add the cabbage, the potatoes.
  • Cut the bread (prefereably portuguese bread) and put some butter over it, a leaf of mint and pour the broth over.
  • When the bread has absorbed the liquid pour some more with the cabbages until is juicy.
  • When is ready to go to the table put the meats on top and the rest of the gravy.
