SLOW COOKER ANGOSTURA-PEACH JAM
This is adapted from Hensperger's Not Your Mother's Slow Cooker Cookbook. It's great to set this up to cook while you're doing other stuff around the house, and makes about 80 oz (10 cups). I set it to figure nutrition info based on a 1-oz (2 tbsp) serving. (And to peel peaches: use a paring knife to make a small X in the bottom of the peach; blanch in boiling water for about 1 minute; transfer to a bowl of ice water. The skin should slip right off.)

Steps:
- Mix chopped peaches and lemon juice in the slow cooker.
- Sprinkle with pectin and let rest for about 20 minutes.
- Mix in sugar, cinnamon, and cloves.
- Set slow-cooker to cook for about 2 1/2 hours on low; stir twice during the cooking.
- Remove slow-cooker lid and cook an additional 2-3 hours over high heat (until it reaches desired consistency.) Add Angostura bitters toward the end of the cooking.
- Pack into sterilized jars and process in a water-bath canner for 10 minutes (or more, depending on altitude.).

BLUSHING PEACH JAM
This looks too pretty to eat, but don't be fooled. It's delicious! This blend of peaches and raspberries is delightful on biscuits or scones. Even drizzled over vanilla ice cream.

Steps:
- Prepare 1/2 pint jars, lids, and water bath.
- Combine peaches, raspberries, lemon juice, and sugar in a large pot. Stir to combine. Bring slowly to a boil, stirring until sugar dissolves.
- Stir in liquid pectin. Return to a rolling boil. Boil hard 1 minute, stirring contantly. Remove from heat. Skim foam if necessary.
- Ladle hot jam into prepared jars, leaving 1/4-inch headspace. Cap, and process 10 minutes in boiling water bath.

NO-SUGAR-NEEDED PEACH JAM

Steps:
- BRING boiling-water canner, half full with water, to a simmer.
- Wash jars and screw bands in hot soapy water; rinse with warm water.
- Pour boiling water over flat lids in saucepan off the heat.
- Let stand in hot water until ready to use. Drain jars well before filling.
- PEEL, pit and finely chop or grind peaches. Measure exactly 3 cups prepared peaches into 6- or 8-quart saucepot.
- Stir in water.
- Gradually add pectin, stirring until well blended.
- BRING mixture to full rolling boil (a boil that doesn't stop bubbling when stirred) on high heat, stirring constantly. Boil exactly 1 minute, stirring constantly.
- Remove from heat.
- Stir in SPLENDA® Granular.
- Skim off any foam with metal spoon.
- LADLE immediately into prepared jars, filling to within 1/8 inch of tops. Wipe jar rims and threads.
- Cover with 2-piece lids.
- Screw bands tightly.
- Place jars on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 to 2 inches. Add boiling water, if necessary.).
- Cover; bring water to gentle boil.
- PROCESS 10 minutes.
- Remove jars and place upright on towel to cool completely.
- After jars cool, check seals by pressing middle of lid with finger. (If lid springs back, lid is not sealed and refrigeration is necessary.).
- ADDED INFO 3/10/07.
- Great Substitute:
- Prepare as directed, substituting 1 thawed can (12 oz.) frozen white grape juice or apple juice concentrate for the 3/4 cup water.
- Makes about 4 (1-cup) jars or 64 servings, 1 tablespoons each.

- Inversion Method:

- To peeled, pitted, and crushed peaches add 2 T.lemon juice.
- Let stand while preparing raspberries.
- Crush raspberries and add remaining 2 T. lemon juice.
- Combine peaches and raspberries with sugar in a heavy kettle.
- Mix well and bring to a boil.
- Boil hard for 1 minute.
- Remove from heat and add pectin.
- Stir well and skim off foam.
- Add the almond extract and stir well again.
- Pour into clean, hot, sterile jars.
- Process in boiling water bath for 10 minutes at altitudes up to 1000 feet sea level.

SLOW COOKER BACON JAM
This recipe is from Martha Stewart. It is to die for!!!!! So great on hamburgers, or with cheese and crackers. Or served with biscuits. The uses are endless! You can even place in jars to give as gifts.

Steps:
- In a large skillet, cook bacon over medium-high, stirring occasionally, until fat is rendered and bacon is lightly browned, about 20 minutes. With a slotted spoon, transfer bacon to paper towels to drain.
- Pour off all but 1 tablespoon fat from skillet and add onions and garlic. Cook until onions are translucent, about 6 minutes.
- Add vinegar, brown sugar, maple syrup, and coffee and bring to a boil, stirring and scraping up browned bits from skillet with a wooden spoon, about 2 minutes. Add bacon and stir to combine.
- Transfer mixture to a 6-quart slow cooker and cook on high, uncovered, until liquid is syrupy, 3 1/2 to 4 hours.
- Transfer to a food processor; pulse until coarsely chopped.
- Let cool, then refrigerate in airtight containers, up to 4 weeks.
