WEEKNIGHT SHRIMP BOIL
This quick shrimp boil recipe packs all the fun of a beach-party meal into an easy weeknight dinner. Chicken sausage cuts calories and the leek adds extra veggies.

- Combine water, Old Bay and lemon juice in a large pot. Bring to a boil. Add potatoes and cook until almost tender, 15 to 20 minutes.
- Add shrimp, sausage, corn and leek; cook, stirring occasionally, until the shrimp are pink and the vegetables are tender-crisp, 5 to 6 minutes.
- Using a slotted spoon and tongs, divide the shrimp, sausage and vegetables among 4 serving bowls. Drizzle each portion with 2 tablespoons of the cooking liquid. Serve with butter, if desired.

SHEET PAN SHRIMP BOIL RECIPE BY TASTY

- Preheat oven to 400˚F (200˚C).
- In a large pot of boiling salted water, cook potatoes until just tender and parboiled, about 10-13 minutes. Stir in corn during the last 5 minutes of cooking time and drain well.
- In a small bowl, combine butter, garlic, and Old Bay Seasoning.
- Place potatoes, corn, shrimp and sausage in a single layer onto a greased baking sheet. Gently toss with the butter mixture.
- Bake for 12-15 minutes, or until the shrimp are opaque and corn is tender.
- Serve immediately with lemon wedges, and sprinkle with parsley.

- In a stockpot, combine the first 5 ingredients; add potatoes, cauliflower, onions, carrots and peas. Bring to a boil. Reduce heat; simmer, uncovered, until vegetables are tender, 12-15 minutes., Stir in shrimp and spinach; cook 3-5 minutes longer or until shrimp turn pink. Drain; transfer to a large serving bowl. SHRIMP BOIL

Steps:
- Fill a large pot with 4 quarts of water. Squeeze the lemon juice into the water and add the squeezed lemon halves. Add the Old Bay, garlic and onion. Tie the thyme sprigs together with kitchen twine and add to the pot. Cover and bring to a boil, then reduce to a simmer and cook about 5 minutes.
- Add the potatoes to the pot and cook until just tender, about 10 minutes. Add the corn and cook 5 more minutes.
- Meanwhile, slice along the back of each shrimp through the shells; remove the veins and rinse the shrimp. Add to the pot, cover and cook until the shrimp curl and are just opaque, 2 to 3 minutes. Transfer the shrimp and vegetables with a slotted spoon or skimmer to a large bowl. Add the butter and about 1 cup broth to the bowl and toss until the butter is melted. Transfer the shrimp and vegetables to a platter. Serve with the remaining broth, lemon wedges and hot sauce, if desired.
BEER SHRIMP BOIL
Steps:
- In a large pot, bring the beer, water, shrimp boil seasoning, salt, peppercorns and the juiced lemon halves to a boil over medium heat. Allow mixture to boil covered for 10 minutes. In the meantime, melt butter in a small saucepan and add the lemon juice. Add the shrimp to the pot of boiling beer, cover, and turn off heat. Check shrimp after 3 minutes for a pink color throughout. Using a slotted spoon, remove the shrimp and transfer to serving bowls.
- Add 1/2 cup of the beer boiling liquid to the butter and simmer for 2 minutes, then transfer to small serving bowls. Serve the warm shrimp with the butter dipping sauce on the side, and don't forget the empty bowls for the shrimp shells. Enjoy!
- Serving Suggestion: I love a great loaf of French bread with this to sop up the yummy sauce!
SHRIMP BOIL
Seafood boils are a mainstay of Southern cooking, the type of shellfish varying by region. Shrimp boils are most commonly associated with Low Country (South Carolina) cooking, while crawfish is a specialty of Louisiana. In most of these one-pot dishes, new potatoes and corncobs (and sometimes onion wedges and sausages) are first cooked in the pot, often on the grill, and the shellfish added at the end. Then everything is piled onto a platter and served with lemon wedges, melted butter, and hot sauce on the side. Despite the name of the preparation, shrimp shouldn't actually be boiled (or even poached), since they will toughen if overcooked. And the point at which they turn from perfectly cooked to overcooked is very hard to detect when in boiling water. Here, the cooking water is spiked with a few simple aromatics, but you could use Old Bay Seasoning (follow the suggestions on the package for the amount) for classic peel-and-eat shrimp. Or replace the water with Court Bouillon (page 231). Serve chilled shrimp with cocktail sauce (recipe below) or as an ingredient in salads.

- COMBINE THE WATER with carrot, celery, lemon juice and reserved lemon half, thyme, peppercorns, and a generous amount of salt, in a large (5-quart) stockpot. Bring to a rolling boil, then add shrimp. When the water is almost at a boil again, which should take about 1 1/2 minutes, the shrimp should be bright pink and curled; immediately remove the shrimp with a slotted spoon, and serve.
- If you plan on serving the shrimp cold, in shrimp cocktail or salad, immediately shock them in an ice-water bath to stop the cooking. Peel and devein, if desired (page 122). Chill in the refrigerator, covered, until ready to serve, up to 1 day.
- Using the side of a chef's knife, mash 1 small garlic clove with 1/4 teaspoon coarse salt to form a paste. Pulse 2 coarsely chopped medium tomatoes (1 3/4 cups) in a food processor until coarsely pureed. Transfer to a fine mesh sieve and let drain for 10 minutes, reserving liquid. Return tomatoes to food processor. Add 4 1/2 teaspoons freshly grated horseradish (or to taste), 1/2 teaspoon finely grated lemon zest, 1 tablespoon plus 1 teaspoon fresh lemon juice, 1 teaspoon coarse salt, 1 1/4 teaspoons Worcestershire sauce (or to taste), 1 1/2 teaspoons Tabasco sauce (or to taste), and the garlic paste. Pulse to combine. Add 2 tablespoons extra-virgin olive oil and process until combined. Add up to 1/4 cup reserved liquid to mixture to adjust to desired consistency. Chill until ready to serve. (Makes about 3/4 cup)
- Cooking the shrimp in their shells will increase the flavor-and is necessary for peel-and-eat servings. But when used in salads or shrimp cocktail, the shrimp will have a neater appearance if peeled and deveined before cooking (the shells slip off easier when raw).
SPICY SHRIMP BOIL WITH LEMON BUTTER
In this very spicy, very messy shrimp feast, diners peel their own shrimp, then dunk them in hot sauce-spiked shrimp broth, a bowl of melted lemon butter or both. Many shrimp boils call for adding corn, sausage and potatoes to the pot. This one focuses solely on the shrimp, though feel free to add the other ingredients if you'd like to bulk it up. Crusty bread for serving is a must, both to sop with the last bits of broth and butter, and as a palate-soother, for when the building heat of the cayenne and hot sauce starts to burn.

- Bring 6 cups water with the onion, garlic, Old Bay, peppercorns, salt and cayenne to a boil in a large pot. Cover and simmer for 10 minutes to allow the flavors to develop.
- Meanwhile in a small pot, melt the butter. Squeeze the juice from half a lemon into the pot. Stir in shallot, if using, and season butter to taste with hot sauce and salt. Set aside for serving.
- Squeeze juice from the other half the lemon into the large pot, then toss in squeezed lemon half. Stir in 1 tablespoon hot sauce and shrimp. Bring just to a simmer (not a boil), then lower the heat so the mixture continues to simmer for 1 to 2 minutes, until shrimp are bright pink and cooked through.
- Use tongs or a slotted spoon to transfer shrimp to a large serving bowl or platter. Taste shrimp broth and add more salt and hot sauce if necessary.
- Strain shrimp broth into serving bowls. Divide melted butter into small bowls, one per guest.
- To serve, give each guest a bowl of spicy shrimp broth and a small bowl filled with seasoned butter for dipping. Guests should peel shrimp and dunk in broth, butter or both. Serve with bread on the side and plenty of napkins, and a bowl for the shrimp shells.

SOP IT UP SHRIMP BOIL
I'm not all that sure of the amounts, because on beach vacays we basically throw it all into the pot. The shrimp was usually fresh off the boat and the Corona's were ice cold... Buen provecho!

- If you have whole shrimp, remove the heads but leave the shells on and the tails intact. Devein if necessary. (I always buy the deveined raw shrimp, as they're easier to peel)
- In a pot large enough to hold the shrimp, melt the butter. Add the lemon zest, juice, garlic, dressing and pepper. Add red pepper flakes, if using. Stir to combine. Bring to a boil and then to a low simmer for 2-3 minutes to meld the flavors.
- Add the shrimp and simmer for 4-5 minutes. Don't overcook or the shrimp will be tough. Taste the sauce and adjust seasoning as needed (lemon juice, pepper, etc.).
- To serve, ladle into individual serving bowls and sprinkle with the chopped parsley. Serve with lots of crusty bread to sop up the amazing sauce. A bottle of Louisiana style hot sauce on the side is good, too, for those that like a bit of a kick. And of course, the lemon wedges.

- In a small bowl, combine the coriander seeds, mustard seeds, red pepper flakes, dill weed, allspice, salt, and bay leaves.
- Add the spice mix to a large pot with 3 quarts of water, then add the potatoes. Bring to a boil and cook for 15 minutes.
- Add the corn and boil for 10 minutes. Add the sausage and cook for another 5 minutes.
- Remove a potato from the pot and check to see if it's fully cooked. If not, continue to cook them until the potatoes are done.
- Stir in the shrimp and lemon juice. Place the lid on the pot and cook for 3 minutes, or until the shrimp are pink and cooked through.
- Drain the ingredients from the pot. Serve the shrimp boil on a newspaper-lined table, sprinkled all over with parsley, with cocktail sauce and garlic butter on the side.
