El Sombrero Cornbread image

This moist, cheesy cornbread is easy to stir together and pop in the oven just before dinner. Vary the number of peppers to suit your taste. -Joan Hallford, North Richland Hills, Texas

Number Of Ingredients 9

1-1/2 cups cornmeal
3 teaspoons baking powder
1/2 teaspoon salt
2 large eggs
1 can (14-3/4 ounces) cream-style corn
1 cup sour cream
1/2 cup canola oil
1-1/2 cups shredded cheddar cheese, divided
3 jalapeno peppers, seeded and finely chopped

Steps:

  • In a large bowl, combine the cornmeal, baking powder and salt. In another bowl, whisk the eggs, corn, sour cream and oil. Stir into dry ingredients just until moistened. Fold in 1 cup cheese and jalapenos., Transfer to a greased 9-in. square baking pan. Sprinkle with remaining cheese. Bake at 350° for 35-40 minutes or until a toothpick inserted in the center comes out clean. Serve warm.

1 flour tortilla (6 inch)
1 tsp. butter
1 egg
2 Tbsp. KRAFT Mexican Style Finely Shredded Four Cheese
1 Tbsp. sliced green onions
1/4 tsp. soy sauce

Steps:

  • Use 1-1/2-inch cookie cutter to cut hole in center of tortilla.
  • Melt butter in small skillet on medium heat. Add tortilla and cutout; cook 2 min. on each side or until each is browned on both sides. Remove cutout from skillet; set aside.
  • Slip broken egg into hole in tortilla; cover. Cook 3 min. or until egg white is set and yolk is cooked to desired doneness. Sprinkle with cheese; cook, covered, 1 min. or until melted. Remove from heat.
  • Top with tortilla cutout and onions; drizzle with soy sauce.

Yummy, sombrero-shaped appetizers. Also good to serve alongside a complimentary soup in the winter.

Number Of Ingredients 8

8 ounces light cream cheese
1/4 cup diced green pepper
1/2 cup diced red pepper
1/4 cup diced onion
1 1/2 cups grated jalapeno jack cheese
1 cup finely diced cooked chicken or 1 cup crumbled browned ground beef
3 tablespoons salsa (your favourite kind)
5 (10 inch) tortillas (any flavour, coloured ones look great esp. if you mix up the colours)

Steps:

  • Combine first 7 ingred. in small bowl. Should make 3 cups filling.
  • Divide and spread filling on tortillas. Roll up tightly, jelly-roll style. Wrap in plastic wrap. Chill for overnight. Remove plastic wrap.
  • Place on greased baking sheet. Bake in 350' oven for 15 minutes until hot and cheese is starting to melt. Let sit for 5 minutes before cutting. Cut each roll into 5 pieces. Pop back into oven for 5-10 minutes or until the appetizers start to make a "sombrero" shape! Makes 25 appetizers.

10 large eggs, beaten
1 1/2 cups milk
1 pkg (6 oz.) OSCAR MAYER Louis Rich Southwestern Chicken Strips, cut into small pieces
1 can (4 oz.) diced green chilies, drained
1 cup KRAFT shredded Monterey Jack cheese
1/2 tsp salt
1/2 tsp pepper
4 slices white bread, toasted and cubed
Topping:
8 slices OSCAR MAYER Bacon, fried and crumbled
1/2 cup KRAFT Shredded Cheddar Cheese

Steps:

  • Combine beaten eggs, milk, small chicken pieces, drained chilies, Monterey Jack cheese, salt, pepper, and toasted cubed bread in a bowl. Stir until mixed together.
  • Grease a 9 by 13 inch glass pan. Pour ingredients into pan and bake at 350 degrees F for 30 to 40 minutes, or until center is set.
  • Remove from oven and sprinkle with fried crumbled bacon and cheddar cheese. Return to oven. Bake for an additional 5 or 10 minutes. Remove from oven and cool for 5 minutes. Cut into squares.
