Time 30m

Number Of Ingredients 12

1½ cups uncooked basmati rice
6 chicken thighs
1 ½ tsp mixed herbs
2 tsp smoked paprika
1 tsp onion powder
1 tsp garlic powder
2 tbsp Olive oil
1 cup onion chopped (any types of onion would work for this recipe.)
1 tbsp butter
3 cups low sodium chicken stock.
Salt and pepper to taste
1/2 cup green onions to garnish (sub with chives, parsley or coriander)

Steps:

  • To a small mixing bowl, add smoked paprika, mixed herbs, garlic powder, onion powder, salt and black pepper and mix to combine. Rinse the rice until the water runs clear and set aside.
  • Add the chicken thighs to a bigger bowl and add the seasoning reserving about a teaspoon for later. Mix until the chicken is well coated.
  • Heat up olive oil on medium high heat, carefully add the chicken, skin side down and sear for about 3 minutes on each side until golden brown. Remove the chicken and place on a plate and set aside. (You can blot the oil with kitchen towel if it looks too much at this point as the chicken releases its own oil too)
  • Sauté the chopped onions in the hot oil until soft and translucent, add the butter, and stir until melted. stir in the rinsed rice and toast for about a minute or two making sure it doesn't stick to the bottom of the pan. Pour the chicken stock over the rice, add the reserved seasoning, and stir to combine. Deglaze the bottom of the pan while stirring by scraping the bottom of the pan. This way the rice doesn't burn when cooking.Taste and adjust seasoning to taste at this point
  • Arrange the chicken thighs over the rice then cover the pot with its lid and cook on low-medium heat for about 15 to 20 minutes depending on the type of rice you are using. When the rice is done, it would be tender, fluffy and the water would be absorbed too.
  • Garnish the rice with chopped green onions, cover and let it stand for another 3 minutes. fluff the rice with a fork, serve and enjoy!

Time 2m

Yield 2 serving(s)

Number Of Ingredients 10

2 cups cold cooked rice
1 cup pork, diced and cooked or 20 small shrimp, raw
1 egg, lightly beaten
4 tablespoons frozen peas and carrots, thawed
2 stalks green onions
1 tablespoon salt
1 tablespoon broth or 1 tablespoon water
1 teaspoon light soy sauce
1 pinch white pepper
2 tablespoons peanut oil

Steps:

  • Measure cold rice for each serving (cook only four or five servings at a time, to cook more repeat, keeping each batch warm in an oven and stir together all of the batches at the end and serve). Break any lumps apart in the cold rice rather than doing it while cooking.
  • Measure all other ingredients separately as they will be added individually.
  • Cooking Instructions:.
  • Heat wok or deep skillet hot and dry.
  • Add sufficient oil depending upon number of servings.
  • After oil is heated add the shrimp (if using shrimp) and cook for 60 seconds (more time if cooking larger quantity).
  • Push shrimp (if used) aside and add lightly beaten egg and stir gently for 30 seconds.
  • Push Shrimp (if used) and egg up on wok side and add precooked rice in the center. After about 20 seconds or enough time for the rice to start to warm, then stir to remove any remaining lumps for about 60 seconds.
  • Add peas and carrots stir while cooking for 15 seconds.
  • Add Salt and continue stirring for 5 seconds.
  • Add cut up chicken or Ham and continue stirring for about 10 seconds.
  • Add Green Onion and stir for another 15 seconds ( By now egg and shrimp on the sides will have been stirred into the mixture).
  • If the rice is still dry add broth or water and continue lightly stirring for another 15 seconds.
  • Add Light Soy Sauce and stir for another 15 seconds.
  • Add pinch of White Pepper and stir for another 15 seconds.
  • Remove to warming or serving platter.

  • In a shallow bowl, mix together the olive oil, sugar, oregano, paprika, onion powder, garlic powder, thyme, salt and pepper. Add the chicken and coat each piece evenly with the seasoning. Set aside, allowing the flavours to absorb into the meat. If time allows, marinade overnight for a deeper flavour.
  • Spray a large baking dish (10-inch x 15-inch OR 25 x 35 cm) with nonstick cooking oil spray. Add the onion, garlic, oil, salt, pepper, HOT boiled broth, hot water and butter into the dish. Mix well to melt the butter and combine. Stir in the rice.
  • Arrange thighs in the dish over the rice, cover with foil and bake for 30 minutes. Uncover, spray chicken with oil and bake for an additional 25-30 minutes or until the chicken is cooked right through to the bone and rice is soft.
