BASIC SOFRITO

Number Of Ingredients 6

2 tablespoons olive oil
12 scallions, white and light green part only, finely chopped
1 small yellow onion, finely chopped
1 large tomato, cored and chopped
1/2 cup chopped cilantro leaves
Salt and freshly ground black pepper

Steps:

  • Heat the oil in a medium skillet over medium heat. Add the scallions, onions and tomato. Cook until the onions are soft and golden and the tomatoes have broken down, about 10 minutes, stirring often. Add cilantro, and salt and pepper.
  • Transfer to a bowl. Use warm or at room temperature.

  • Mix all ingredients in a bowl (except shrimp), beating with a fork to mix thoroughly.
  • Toss the shrimp with the sauce and serve cold.

1 fresh coconut
1 ounce coconut rum
1 ounce rum
1 ounce tequila
1 ounce gin
1/2 ounce grenadine
1 slice lemon

Steps:

  • Cut 3 inch hole in the coconut.
  • Pour in the tequila, rum and gin.
  • Add several ice cubes and stir in the grenadine.
  • Throw in a slice of lemon and a straw.
  • ENJOY.

In the Dominican Republic, sofrito can be made any number of ways. Here is a version using tomatillos that is so good. Make a batch once or twice a week and you'll have a great, healthy seasoning base that will amp up any dish. Adapted from Global Table Adventure.

1 green pepper, cut in large chunks
1 red pepper, cut in large chunks
1 red onion, cut in large chunks
3 green onions, sliced
2 tomatillos, quartered
2 roma tomatoes, quartered
1/2 bunch cilantro, roughly chopped
1/2 bunch parsley, roughly chopped
6 garlic cloves, quartered
salt and pepper (optional)

Steps:

  • Roughly cut up all ingredients.
  • Toss the wettest ones in a large food processor and give them a couple of quick pulses. This moistness will help process the rest of the ingredients(the tomatoes and tomatillos).
  • Next, add the herbs - parsley and cilantro.
  • Then, add as many of the other ingredients as you can fit.
  • Give the processor several whirs and stirs. Keep adding whatever didn't fit before and pulse until you get a coarse blend. Some sofritos are really chunky, some are like a paste. You decide.
  • Season with salt and pepper if you like, but it may be best to season the dish it goes in, in order to have more control.
  • Refrigerate and use as needed.

From the blog "Aunt Clara's Kitchen". Posted to save, as it looks wonderful. This is typical of the Semana Peninsula. The recipe calls for small whole fish, one per serving, although I imagine it would also work well with fillets or steaks.

6 (1/2 lb) red snapper (cleaned) or 6 (1/2 lb) grouper (cleaned)
1 teaspoon crushed fresh garlic
1 teaspoon ground annatto seed
1 1/2 teaspoons salt
4 tablespoons neutral vegetable oil
2 sweet bell peppers, cut into strips (I'd use red, yellow or orange)
1 onion, cut into strips
4 cups coconut milk
2 tablespoons chopped fresh cilantro

Steps:

  • Cut diagonal slices into fish about 1 1/2 inches apart.
  • Combine the annatto, garlic and salt and rub onto the fish, rubbing into the slashes.
  • Heat oil in a large skillet over medium heat. Cook fish lightly on one side, then turn and cook the other side. It should color slightly, but won't be done.
  • Lower the heat and add the peppers and onion, and cook until the onions are transparent.
  • Add the coconut milk and simmer until reduced by half. Rotate the fish, being careful to keep it whole.
  • Taste sauce and add additional salt, if desired. Remove from heat, plate with hot rice, and garnish with chopped cilantro.

1 cup sofrito sauce (Sofrito(Dominican Republic))

2 (15 ounce) cans red kidney beans
1 cup stock (or water)
salt
pepper

Steps:

  • Heat up some oil in a medium pot.
  • Add sofrito and cook past the point where it releases all its juices.
  • To the point where it starts to get toasty. That is the yummy bits that will make your beans incredible.
  • Next, add the beans.
  • And splash in water or stock(stock preferred).
  • Simmer gently until the beans are tender and flavorful. This takes about an hour.
  • Season generously!

1 head of garlic, peeled

  • Peel Garlic, onions, and chop all ingredients. add all ingredients to food processor or blender thoroughly blend ingredients to an even consistency.
