PANNA COTTA AL MANGO
Steps:
- Pour the cream and milk into a heavy saucepan. Add the gelatin sheets.
- Place the pan over medium heat and stir until gelatin dissolves. Do not boil. Add sugar and honey and continue to stir until the sugar has melted.
- Just before cream and milk come to a boil, remove the pan from the heat. Pour the mixture through a strainer into a bowl to remove foam and to ensure a velvety consistency.
- Let cooked cream cool down and add 3/4 of the mango. Ladle into wine glasses and chill in the refrigerator for 6 hours.
- Add the remaining mango on top of the individual glasses as garnish just before serving.

- Divide the grapes into the bottom of 4 parfait glasses. Spoon one-eighth of the yogurt over the grapes. Divide the mango pieces evenly on top of the yogurt. Spoon the remaining yogurt on top. Sprinkle the top of the parfaits with 1 tablespoons each toasted pumpkin seeds and crushed amaretti cookies. Serve the parfaits immediately or refrigerate uncovered for up to 1 hour.
MANGO PARFAIT
Steps:
- In a food processor or blender puree the mango until smooth and transfer it to a bowl. Add the lime juice, honey, and cinnamon to the mango puree and stir to combine. Chill until ready to assemble parfaits. To assemble parfaits: In parfait or stemmed glasses spoon a 1-inch-thick layer of yogurt, top with a layer of mango and repeat layering. Chill until ready to serve. Garnish with fresh mint leaves, if desired.

- Process mango in a food processor until smooth, then pass through a fine sieve into a bowl to yield 200gm. Add yoghurt, whisk to combine and refrigerate until required.
- Stir caster sugar and 60ml water in a small saucepan over medium-high heat until sugar dissolves. Bring to the boil and cook until mixture reaches 121C on a sugar thermometer (6-8 minutes). Meanwhile, whisk yolks in an electric mixer on low speed. Gradually add sugar syrup and whisk until cooled to room temperature (4-5 minutes). Fold in mango mixture, then fold in cream mixture and spoon into an 8cm x 20cm loaf tin lined with plastic wrap. Smooth top, freeze until firm (3-4 hours).
- For palm sugar caramel, stir palm sugar, vanilla bean and seeds and 80ml water in a small saucepan over medium-high heat until sugar dissolves. Bring to the simmer, add Malibu (be careful as hot caramel will spit), cook until amber-caramel coloured (20-25 minutes), set aside to cool, remove vanilla bean.
