SAVORY CHINESE WINTER SOLSTICE SOUP



Savory Chinese Winter Solstice Soup image

This traditional savory Chinese winter solstice soup is loaded with flavor, incredibly comforting, and totally hits the spot on a cold winter's night! Make it to celebrate the Winter Solstice or any night you're craving a bowl of hot delicious soup!

Number Of Ingredients 13

2 lbs. (900g) any combination of chicken bones, wings, wing tips
8 cups water
1 knob peeled ginger, (about the size of half a lemon)
1 tbs sea salt
2-3 Chinese sausages (lop cheng)
4 large dried Chinese (shiitake) mushrooms, (soaked in water for at least 4 hours)
1 lb. (454g) daikon radish
Salt to taste
3/4 cup glutinous rice flour
1/3 cup water
Chopped green onions
White pepper
Fried garlic

Steps:

  • Combine chicken pieces, water, ginger, and salt in a large pot. Bring to a boil.
  • Lower heat to medium and using a skimmer or spoon, skim the scum from the soup. Continue until scum is mostly removed.
  • Reduce heat to a low, cover pot with a lid leaving a slight gap, and simmer for 2 hours.
  • Rinse Chinese sausages. Cut each sausage in half lengthwise, then cut each side into diagonal strips.
  • Squeeze some of the liquid from the soaked Chinese mushrooms. Trim and discard the stems, then slice the mushroom caps.
  • Peel the daikon radish. Slice the daikon, creating discs approximately 1/4" thick. Lay the discs flat on the cutting board and cut them into thick strips.
  • After 2 hours of simmering, remove chicken bones, ginger, and any debris from the broth.
  • Add Chinese sausage, daikon radish, and Chinese mushrooms to the broth. Bring to a boil.
  • Simmer for 30 minutes.
  • Mix the glutinous rice flour and water until a dough forms. The dough should not be too dry or too sticky; add more rice flour or water a little at a time as necessary to achieve the correct consistency.
  • Take a piece of dough in your hands and roll into a log-like shape.
  • Break off a small chunk of dough, about the size of a grape, and drop it into the soup. Continue with as many dough balls as you choose to have in the soup. Heat through. Dough balls are cooked once they are all floating on the surface.
  • Serve hot and garnish with chopped green onions, white pepper, or fried garlic, if desired.

2 hershey's kisses for the eyes
1 hershey's hugs for the nose
10-12 mini marshmallows for the snowballs
1 peppermint candy cane

Steps:

  • 1. Place hot cocoa package, Hershey's Kisses and mini marshmallows in a plastic bag or cellophane wrap and put in the bottom of a mug. Add the candy cane stick or tape it to the outside of the mug. Then add one of the Snowman Soup poems. You can either tie it to the candy cane or stuff it inside the cup. That's it! Your gift is ready!
  • 2. Snowman Soup Poem: Frosty has melted. It's sad but true. But he left a gift for you. Little white snowballs And two dark eyes. And a nose that's quite tasty. Just give it a try. Pour the package in the mug. And add the eyes and nose. Use the candy stick to stir. Then sip it very slow!

4 large egg whites
4 large egg yolks plus 2 large eggs
1-1/2 cups sugar, divided
1 tablespoon cornstarch
6-1/4 cups whole milk, divided
2 teaspoons vanilla extract, divided
1/2 teaspoon cream of tartar
Chopped glazed pecans, optional

Steps:

  • Place egg whites in a large bowl; let stand at room temperature 30 minutes. In a large heavy saucepan, whisk egg yolks, eggs, 1 cup sugar and cornstarch until blended; stir in 4 cups milk. Cook over medium-low heat 10-15 minutes or until mixture is just thick enough to coat a metal spoon and a thermometer reads at least 160°, stirring constantly. Do not allow to boil. Remove from heat immediately. Strain through a fine-mesh strainer into a large bowl., Place bowl in an ice-water bath. Stir occasionally for 5 minutes. Stir in 1-1/2 teaspoons vanilla. Press plastic wrap onto surface of custard. Refrigerate until cold, about 1 hour., For snowballs, add cream of tartar to egg whites; beat on medium speed until foamy. Gradually add remaining sugar, 1 tablespoon at a time, beating on high after each addition until sugar is dissolved. Stir in remaining vanilla. Continue beating until stiff glossy peaks form., In a large heavy skillet, bring remaining milk barely to a simmer over medium-low heat. Working in batches and using two soup spoons, drop meringue by 1/3 cupfuls into milk; poach meringues 4-6 minutes or until firm to the touch, turning once. Using a slotted spoon, remove meringues to paper towels to drain. Repeat with remaining meringue, making a total of 12 snowballs. (Discard remaining milk.) If desired, serve with pecans.

1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

1/2 teaspoon plus 1/2 cup butter, softened and divided
1-3/4 cups sweetened shredded coconut, divided
4 ounces cream cheese, softened
3-3/4 cups confectioners' sugar
8 ounces white candy coating, chopped
2 tablespoons shortening

Steps:

  • Line a 9x5-in. loaf pan with foil. Grease foil with 1/2 teaspoon butter; set aside. Pulse 3/4 cup coconut in a food processor until coarsely chopped. Add cream cheese and remaining butter; pulse until blended. Gradually add confectioners' sugar; pulse until blended. Press into prepared pan. Refrigerate, covered, at least 3 hours. , Microwave candy coating and shortening until melted; stir until smooth. Cool slightly. Using foil, lift coconut mixture out of pan. Gently peel off foil; cut into 36 pieces. Taking a few pieces at a time, roll each into a ball; keep remaining pieces refrigerated., Using a toothpick, dip balls one at a time in melted coating mixture, allowing excess to drip off. Roll in remaining coconut; place on waxed paper-lined baking sheets. Refrigerate until set. Store in an airtight container in refrigerator.

400g white chocolate , broken into pieces
100g rich tea biscuit
50g white Malteser
50g mini marshmallow
50g dried cranberries
50g cake crumbs (we used shop-bought Madeira cake)
3 tbsp golden syrup
100g desiccated coconut
edible glitter (optional)

Steps:

  • Melt the chocolate in a bowl over a pan of simmering water. Meanwhile, crush the biscuits and Maltesers in a large bowl with a rolling pin.
  • Add mini marshmallows, dried cranberries and cake crumbs, then the chocolate and golden syrup. Mix well. Tip desiccated coconut onto a plate. Drop large spoonfuls of mixture onto the plate, then roll them around, coating in coconut and shaping into balls. Place on a baking tray and chill for 30 mins before serving. Sprinkle with edible glitter if you like.

I've been making these popular treats for 40 years, much to my family's delight. They look impressive with chocolate and coconut wrapped around a chewy marshmallow center, yet they're surprisingly simple to assemble.

1/2 cup butter, cubed
1 can (14 ounces) sweetened condensed milk
3 tablespoons baking cocoa
1 teaspoon vanilla extract
2 cups graham cracker crumbs (about 32 squares)
3-1/2 cups sweetened shredded coconut, divided
32 to 35 large marshmallows

Steps:

  • Line a baking sheet with waxed paper; set aside. , In a large saucepan, combine the butter, milk, cocoa and vanilla. Cook and stir over medium heat until butter is melted and mixture is smooth. Remove from the heat; stir in cracker crumbs and 1-1/2 cups coconut. Let stand until cool enough to handle., Using moistened hands, wrap about 1 tablespoon of mixture around each marshmallow (dip hands in water often to prevent sticking). 100ml advocaat
100ml ginger syrup
Babycham , to top up the glass

Steps:

  • First make a ginger syrup. Combine 100ml water with the golden caster sugar and a handful of sliced ginger in a pan and bring to the boil. Cool the mixture and strain through a sieve.
  • Fill a highball glass with ice and pour the advocaat and ginger syrup into a cocktail shaker. Shake well, pour into the glasses, top with Babycham and serve.
