1/2 teaspoon ginger, minced
6 ounces red onions, diced
1 clove garlic, minced
6 ounces fresh snap peas, sliced on a angle
1/4 teaspoon sugar
1 -2 teaspoon soy sauce, to taste

Steps:

  • Coat bottom of hot pan with oil adding everything in order listed.
  • Stir frying over high heat.
  • Stirring each ingredient before adding the next ingredient.
  • Cook till tender crisp!

For the salad
14 ounces (4 cups) sugar snap peas
1/2 large English cucumber, cut into 1/8-inch rounds
1 small red bell pepper, stemmed and cut into 1/8-inch slices
3/4 cups canned mandarin orange segments, drained
1 small red onion, cut into 1/8-inch slices
1/2 teaspoon sesame seeds, for garnish
For the dressing
3 tablespoons soy sauce
3 tablespoons seasoned rice vinegar
1 tablespoon honey
1/2 teaspoon garlic, minced
1/2 teaspoon fresh ginger, grated
1/4 teaspoon black pepper
1 tablespoon sesame oil
2 tablespoons peanut oil, vegetable oil, or avocado oil

Steps:

  • Combine vegetables and fruit: In a large bowl, add the sugar snap peas, cucumber, bell pepper, mandarin oranges, and red onion. Set it aside, or cover with plastic wrap and refrigerate it if not serving immediately.
  • Make the dressing: In a medium bowl, whisk together the soy sauce, rice vinegar, honey, garlic, ginger, and black pepper. Slowly drizzle in the sesame oil and peanut oil, whisking constantly until fully combined.
  • Assemble and serve: Drizzle about three quarters of the dressing over the salad and toss with a large spoon to combine. Garnish with the sesame seeds. Serve the remaining dressing on the side. This salad tastes even better after the vegetables get a chance to soak up the dressing a bit, about 30 minutes to 1 hour, in the fridge.

3 tablespoons fresh lemon juice
2 tablespoons olive oil
Coarse salt and ground pepper

Steps:

  • In a large bowl, combine 1 pound trimmed sugar snap peas (strings removed, if necessary), sliced 1/4 inch thick on the diagonal, 1 cup finely chopped red onion, 3 tablespoons fresh lemon juice, and 2 tablespoons olive oil. Season with coarse salt and ground pepper. Let stand, tossing occasionally, 10 minutes.

Sugar snap peas become a star with the addition of crispy fried red onions!

1 lb sugar snap peas
1 teaspoon softened butter
1 teaspoon ginger minced
1 tsp vinegar
S & pepper
1 large red onion ( 3 cups)
1/4 cup flour
1/4 cup avocado oil

Steps:

  • Make sure the sugar snap peas are cleaned (remove any tough strings from them the best you can).
  • After the red onions are done frying, add the sugar snap peas to the hot pan, with ¼ cup water, and immediately cover with a lid. Allow it to steam (be careful with this part though so you don't get blasted in the face with steam).
  • After about 2-3 minutes, remove lid (use a glove/towel if need be), stir, then add in 1 teaspoon of butter, 1 teaspoon ginger, and 1 teaspoon of vinegar. Stir, and allow to cook lid off to blister. Another 3 minutes or so. Season with salt and lots of black pepper.
  • Remove from pan, and top with crispy red onions!

  • Heat oil in a large skillet over medium heat. Add snap peas, soy sauce, pearl onions and 1 tablespoon of water and cook 3 to 5 minutes, until vegetables are tender and golden and water evaporates. The salmon fillets, coated in a garlicky spice blend, are briefly browned, leaving fragrant, savory drippings in the pan. Those drippings then season the vegetables, infusing them as they cook. Keep an eye on the salmon, especially if you prefer it on the rare side. Thin fillets in particular are all too easy to overcook.

4 tablespoons extra-virgin olive oil
2 garlic cloves, finely grated or minced
1 teaspoon baharat spice blend , or use another warm and earthy spice blend, such as garam masala
4 (6- to 8-ounce) salmon fillets
Kosher salt and black pepper
2 medium red onions
1 pound sugar snap peas (4 cups)
Lime wedges
1/2 cup chopped fresh cilantro or mint leaves and tender stems

Steps:

  • Heat oven to 400 degrees. In a small bowl, stir together 1 tablespoon oil, garlic and baharat. Season salmon all over with salt and black pepper. Rub spice mixture all over salmon. Set salmon aside while slicing the onions and sugar snap peas.
  • Cut the onions in half root-to-stem, then peel them and slice into 1/4-inch-thick half-moons. Trim the peas and cut them in half crosswise.
  • In a large, preferably nonstick ovenproof skillet, heat 2 tablespoons oil over high heat. Add fish, skin-side down if there's skin, and cook until browned, 3 to 4 minutes. Transfer salmon to a plate, browned-side up. (Don't sear the other side; the salmon will finish cooking in the oven.)
  • Reduce heat to medium and add the remaining tablespoon of oil to the skillet. Stir in onions and cook until lightly golden, 3 minutes. Add snap peas and a pinch each of salt and pepper, stirring everything to coat with pan juices. Cook until peas have softened and browned slightly, 5 to 7 minutes. Put salmon, browned-side up, on top of peas and transfer pan to the oven. Roast until fish is just cooked through, 5 to 8 minutes longer.
  • Squeeze a little lime juice over salmon and transfer fish to serving plates. Stir herbs into peas and onions. Taste, and add more salt and lime juice, if needed. Serve with the salmon, with the lime wedges on the side.

2 tablespoons butter
1 large onion, cut into thin wedges
1/4 cup chicken broth
1/2 teaspoon dried tarragon or 1 1/2 teaspoons fresh tarragon leaves, chopped

1 (6 ounce) package frozen sugar snap peas

Steps:

  • Melt butter in a medium saucepan and add onion.
  • Cook over medium heat, stirring occasionally, until onion is softened but not transparent (about 2-3 minutes).
  • Add remaining ingredients (EXCEPT PEA PODS) and bring mixture to a boil.
  • Reduce heat to a medium heat and add Pea pods.
  • Cook until vegetables are tender (about 1-2 minutes) and heated through or to desired crispness.
