S'MORE QUESADILLAS
In this Southern twist on a fireside classic, flour tortillas replace traditional graham crackers; be sure to buy the large size and portion out to guests after grilling.

Steps:
- Heat a grill or grill pan. Place 4 tortillas on a clean work surface; scatter each with chocolate pieces and marshmallows. Place the 4 remaining tortillas on top, press them together to seal. Grill until tortillas are browned and chocolate and marshmallows are melted and gooey, about 30 seconds per side. Cut into wedges, and serve.

How about a dessert quesadilla? Try this simple but delicious one out! Easy to make indoors or on the grill.

Steps:
- Place graham crackers in food processor and pulse till fine crumbs. Pour out onto flat plate.
- Heat pan or griddle to med. high. Lightly coat one side of tortilla with spray oil or melted butter. Lay sprayed side down on top of graham cracker crumbs and press to coat.
- Now spray or brush pan or griddle with spray oil or butter then lay tortilla coated side down on pan, place a generous amount of mini morsels on tortilla and then marshmallows. Repeat process with second tortilla and lay coated side up on top of marshmallows. Place a lid on top and cook until chocolate starts melting (make sure griddle is not too hot or it will burn tortilla). Flip and brown other side of tortilla while marshmallows melt.

- Place length of wax paper on counter surface. Butter one side of tortilla. Place buttered side down on wax paper. Lightly sprinkle cayenne pepper on half of tortilla, if desired. Spread graham cracker crumbs on same half of tortilla.
- Remove chocolate bars from wrappers; break into sections. Position chocolate bar sections on half of tortilla, breaking to fit, so that they don't extend beyond edge of tortilla. Evenly sprinkle 1/2 cup marshmallows over chocolate. Fold tortilla to cover filling.
- Heat ovenproof skillet several minutes on medium low heat. Carefully add quesadilla; heatseveral minutes or until tortilla is golden brown and crisp, turning once.
- In skillet, top quesadilla with cinnamon sugar and remaining marshmallows. Place in oven on low broil for 1 minute or until marshmallows are lightly browned.

- Spread butter on one side of the tortilla. Sprinkle generously with cinnamon sugar. Place tortilla, butter side down, on the griddle.
- Add the chocolate, marshmallows, and graham cracker crumbs to one-half of the tortilla. When the tortilla has browned, fold the other side of the tortilla over the filling. Heat until chocolate and marshmallows are melted. Flip the tortilla to finish toasting the other side of the tortilla if necessary.
