Homemade BBQ Chicken Pizza image

This is a recipe for classic BBQ chicken pizza with tangy BBQ sauce, chicken, and red onion. Gouda cheese gives the homemade pizza the most delicious smoky flavor and cilantro adds a touch of freshness. My pizza dough recipe makes enough for two 12-inch pizzas. Toppings listed are enough for one 12-inch pizza. Freeze the rest of the pizza dough for another time.

1/2 recipe homemade pizza crust
1-2 teaspoons olive oil
1/3 cup + 2 Tablespoons your favorite BBQ sauce
1 cup chopped or shredded cooked chicken (about one 8-ounce breast)
2/3 cup shredded mozzarella cheese
2/3 cup shredded smoked gouda cheese
1/2 small red onion, thinly sliced
optional: chopped fresh cilantro for topping

Steps:

  • Prepare pizza dough through step 5, including preheating the oven to 475°F (246°C). Cover the shaped dough lightly with plastic wrap and allow it to rest as the oven preheats.
  • To prevent the pizza toppings from making your pizza crust soggy, brush the shaped dough lightly with olive oil. Using your fingers, push dents into the surface of the dough to prevent bubbling. Top the dough evenly with 1/3 cup BBQ sauce. Toss the cooked chicken with the remaining BBQ sauce, then scatter all around the pizza. Add the cheeses and red onion.
  • Bake pizza for 12-15 minutes. Remove from the oven and top with fresh cilantro, if desired. Slice hot pizza and serve immediately.
  • Cover leftover pizza tightly and store in the refrigerator. Reheat as you prefer. Baked pizza slices can be frozen up to 3 months. See pizza crust recipe for instructions on freezing the pizza dough.

Had some leftover BBQ sauce and some left over chicken, but not much of either so I made pizza. Don't overcook the bacon before you put it on the pizza since it will cook in the oven, too. Use your favorite BBQ sauce but go easy on it...a little goes a long way. Adjust the amount to the thickness of your crust. I use about a third of a cup for a thin crust, use more for thick.

1/3 cup barbecue sauce
1 tablespoon barbecue sauce
1 small grilled chicken breast, shredded
1 small onion, halved and sliced
4 slices bacon, cooked and crumbled
1 cup smoked gouda cheese, shredded
1 cup mozzarella cheese, shredded

Steps:

  • Preheat oven to 400.
  • Combine chicken breast with 2 T of barbecue sauce.
  • Spread crust with 1/3 cup barbecue sauce; more if you like it saucy!
  • Top with chicken, onions, bacon and cheese.
  • Bake 10-12 minutes or until crust is lightly browned and cheese is melted and bubbly.

1 teaspoon extra-virgin olive oil, plus more for brushing
1/2 pound prepared pizza dough, at room temperature
1/3 cup plus 2 tablespoons dark barbecue sauce
1 8-ounce skinless, boneless chicken breast
Kosher salt and freshly ground pepper
2/3 cup grated smoked gouda cheese (about 3 ounces)
2/3 cup grated part-skim mozzarella cheese (about 3 ounces)
1/2 small red onion, thinly sliced
Fresh cilantro, for topping

Steps:

  • Brush a large bowl with olive oil. Shape the pizza dough into a ball, add it to the bowl and turn to coat with the oil. Cover tightly with plastic wrap and set aside in a warm place, 30 to 40 minutes.
  • Position racks in the upper third and middle of the oven. Place a pizza stone or inverted baking sheet on the top rack and preheat the oven to 425 degrees F for at least 30 minutes.
  • Meanwhile, lay out a sheet of parchment paper and brush with olive oil. Transfer the ball of dough to the parchment and roll it out into a 10-inch round, stretching it with your hands as needed. Lightly brush the dough with olive oil, cover with another piece of parchment and set aside to let rise slightly, about 30 minutes.
  • While the dough rises, mix 2 tablespoons barbecue sauce and 1 teaspoon olive oil in a small bowl. Put the chicken in a baking dish, season with salt and pepper and brush with the barbecue sauce mixture. Bake on the middle oven rack until cooked through, about 20 minutes. Let cool, then cut into 1/2-inch cubes.
  • Uncover the dough and spread with the remaining 1/3 cup barbecue sauce, leaving a 3/4-inch border. Top with the chicken, gouda, mozzarella and red onion. Slide the pizza (on the parchment) onto a pizza peel or another inverted baking sheet, then slide onto the hot stone or baking sheet; bake until the cheese melts and the crust is golden, 20 to 25 minutes. Sprinkle with cilantro.

2 tablespoons olive oil
1 medium red onion, sliced
1 tube (13.8 ounces) refrigerated pizza crust
3/4 cup barbecue sauce
2 cups shredded cooked chicken breast
6 bacon strips, cooked and crumbled
1/4 cup crumbled Gorgonzola cheese
2 jalapeno peppers, seeded and minced
1 teaspoon paprika
1 teaspoon garlic powder
2 cups shredded part-skim mozzarella cheese

Steps:

  • Preheat oven to 425°. In a large skillet, heat oil over medium heat. Add onion; cook and stir 4-6 minutes or until softened. Reduce heat to medium-low; cook 20-25 minutes or until deep golden brown, stirring occasionally., Unroll and press dough onto bottom and 1/2 in. up sides of a greased 15x10x1-in. baking pan. Bake 8 minutes., Spread barbecue sauce over dough; top with chicken, cooked onion, bacon, Gorgonzola cheese and jalapenos. Sprinkle with paprika and garlic powder; top with mozzarella cheese. Bake pizza 8-10 minutes or until crust is golden and cheese is melted. Freeze option: Bake pizza crust as directed; cool. 1/4 cup yellow cornmeal
1 pound pizza dough, homemade or store-bought
1/2 cup plus 2 tablespoons favorite bbq sauce (we love Stubb's)
2 cups leftover shredded rotisserie chicken
1 cup shredded smoked cheddar cheese
1 cup shredded whole milk mozzarella cheese
1/2 cup diced red onion
Kosher salt and freshly ground pepper, to taste
3 tablespoons chopped fresh cilantro leaves

Steps:

  • Preheat oven to 450 degrees F. Lightly coat a baking sheet or pizza pan with olive oil. Working on a surface that has been sprinkled with cornmeal, roll out the pizza into a 12-inch-diameter round. Transfer to prepared baking sheet or pizza pan. Using a small ladle, spread bbq sauce over the surface of the dough in an even layer, leaving a 1/2-inch border. Top with chicken, cheeses and onion; season with salt and pepper, to taste. 2 garlic cloves , peeled finely
grated zest and juice of 1 lemon
2 tbsp Kashmiri spice mix, or good-quality curry powder
1 dried bird's-eye chilli , seeded and crushed, or a pinch of chilli flakes
3 tbsp olive oil
12 chicken thighs , bone in, skin on
2 large bunches each rosemary and thyme
2 branches fresh bay leaves

Steps:

  • Make the marinade. Smash the garlic with a little salt using a pestle and mortar. Add the lemon zest and juice, the spice mix, chilli, oil and a good grinding of black pepper. Mix to a paste. This can be done in a mini food processor.
  • Toss the chicken in the marinade and set aside while you light the barbecue. When the barbecue's hot, lay the bunches of herbs on the grid and put the chicken, skin side up, on top. Close the lid, if your barbecue has one, and cook the chicken on the smouldering herbs for about 10 minutes until the meat starts to colour. Turn the chicken and continue to cook for a further 20-30 minutes, turning as necessary, until it is slightly charred from the burnt herbs and cooked through to the bone.
