Growing up, my husband always had pork chops that were were pan-fried or baked, but he knew they could be better. So he combined his love of grilling with the desire to create his own signature sauce, and the result was this recipe. -Vicky Drnek, Rome, Georgia

1/4 cup water
1/4 cup ketchup
1 tablespoon Dijon mustard
1 tablespoon molasses
1-1/2 teaspoons packed brown sugar
1 teaspoon Worcestershire sauce
1/4 teaspoon kosher salt
1/4 teaspoon chipotle hot pepper sauce
1/8 teaspoon pepper
PORK CHOPS:
1-1/4 teaspoons mustard seed
1-1/4 teaspoons smoked paprika
1-1/4 teaspoons whole peppercorns
1 teaspoon onion powder
1 teaspoon garlic powder
1/2 teaspoon kosher salt
1/4 teaspoon cayenne pepper
1-1/2 teaspoons brown sugar
4 bone-in pork loin chops (7 ounces each)

Steps:

  • In a small saucepan, mix first nine ingredients; bring to a boil over medium heat. Reduce heat; simmer, uncovered, until slightly thickened, about 10 minutes, stirring occasionally. Reserve 1/4 cup sauce for serving., Using a mortar and pestle or spice grinder, crush seasonings with brown sugar. Rub mixture over chops., Place chops on an oiled grill over medium heat. Grill, covered, until a thermometer reads 145°, 5-6 minutes per side, brushing top with remaining sauce after turning. Let stand 5 minutes before serving. Serve with reserved sauce.

These thick pork chops have a smoky flavor, are very moist and tender, and the rub is easy to make. A family favorite, always requested at BBQs. I like to serve these chops with loaded baked potatoes and a garden salad.

1 tablespoon seasoned salt (such as LAWRY'S®)
1 teaspoon ground black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon ground paprika
2 teaspoons Worcestershire sauce
1 teaspoon liquid smoke flavoring
4 bone-in pork chops (1/2 to 3/4 inch thick)

Steps:

  • Preheat an outdoor grill for medium heat, and lightly oil the grate.
  • In a bowl, mix together the seasoned salt, black pepper, garlic powder, onion powder, paprika, Worcestershire sauce, and smoke flavoring until thoroughly combined. Rinse pork chops, and sprinkle the wet chops on both sides with the spice mixture. With your hands, massage the spice rub into the meat; allow to stand for 10 minutes.
  • Grill the chops over indirect heat until no longer pink inside, about 12 minutes per side. An instant-read thermometer should read at least 145 degrees F (63 degrees C). Allow chops to stand for 10 more minutes before serving.

There are pork chops and then there are smoked pork chops. The rub has just the right amount of sweetness and saltiness that complements the smoky flavor perfectly. Oak is my wood of choice for these but feel free to substitute any hard wood chips.

1 ½ teaspoons kosher salt
1 ½ teaspoons light brown sugar
1 ½ teaspoons ground black pepper
1 teaspoon paprika
½ teaspoon ground mustard
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon oregano
6 bone-in center-cut pork chops (about 1-inch thick)

Steps:

  • Preheat the smoker to 250 degrees F (120 degrees C). Add wood chips according to manufacturer's directions.
  • Combine salt, brown sugar, pepper, paprika, ground mustard, garlic powder, onion powder, and oregano in a small bowl. Stir until evenly combined. Sprinkle over both sides of each pork chop.
  • Place pork chops directly on the smoker grate. Smoke for 2 hours 30 minutes. Remove chops from the smoker and let rest for 10 minutes.

Marinated pork chops with a creamy, tangy southwest-flavored sauce, great on the grill! Perfect for a quick weeknight dinner (baste with sauce while cooking) or for Once A Month Cooking (chops are marinated before cooking)!

6 (5 -6 ounce) boneless pork loin chops, 5-6 oz. each or 1/2 inch thick
1/2 cup mayonnaise
1/2 cup plain nonfat yogurt
2 tablespoons lime juice
1 teaspoon dried cilantro (or 1 Tbsp. fresh cilantro)
1 teaspoon garlic, minced
1 teaspoon dried chipotle powder
1 tablespoon chopped chipotle chile in adobo (to taste)

Steps:

  • In a small bowl, blend together: mayonnaise, yogurt, lime juice, cilantro, garlic, and chipotle chili powder.
  • Measure 1/2 cup of mixture to a small container, and add up to 1 tablespoon chopped chipotles, to taste.
  • Set aside; this will be the sauce after the chops are cooked.
  • For immediate cooking: Preheat grill (or broiler) and cook chops to desired doneness, about 10 minutes total, turning often and brushing with first mayonnaise-chipotle mixture.
  • Serve with reserved sauce.
  • For OAMC: Place pork chops and first mayonnaise-chipotle mixture into gallon freezer bag and seal.
  • Place sauce mixture into small freezer-safe container or bag and seal.
  • Place both bags together into another gallon freezer bag.
  • Label, date and freeze.
  • To cook: Thaw completely. Preheat grill (or broiler) and cook chops to desired doneness, about 5 minutes per side.
  • Serve with reserved sauce.

  • Prep. Trim excess fat. If you have loin chops, there is a band of fat around the perimeter. Beneath the fat is a thin layer of connective tissue called silverskin. You need to remove it because as it cooks it shrinks and causes the meat to form a cup. The fat will not penetrate the meat so there is no reason to leave it on unless you like eating the fat. In that case, cut at least two slits through the fat and the silverskin right down to the meat.
  • Fill a 1 gallon plastic zipper bag with the brine, add the chops, place the bag in a bowl to catch any leaks, and refrigerate for 1 to 2 hours. Thinner chops will take half that time. While they are brining, setup your grill for 2-zone or indirect cooking or fire up the smoker, and shoot for 225°F in the indirect zone.
  • Season the chops with black pepper, but no salt (they have enough from the brine). Don't bother with your favorite barbecue rub. Not needed.
