Number Of Ingredients 12

6 cups diced peeled red potatoes
3 large onions, finely chopped
6 celery ribs, finely chopped
3 cups water
6 cans (6-1/2 ounces each) minced clams
1-1/2 cups butter, cubed
1-1/2 cups all-purpose flour
8 cups half-and-half cream
1/4 cup red wine vinegar
2 tablespoons minced fresh parsley
3 teaspoons salt
1/4 teaspoon pepper

Steps:

  • In a stockpot, combine the potatoes, onions, celery and water. Drain clams, reserving juice; set clams aside. Add juice to potato mixture. Bring to a boil. Reduce heat; cover and simmer for 10 minutes or until potatoes are tender. , Meanwhile, in a large saucepan, melt butter over medium heat. Whisk in flour. Cook and stir for 5 minutes or until lightly browned. Gradually stir in cream. Bring to a boil; cook and stir for 2 minutes or until thickened. Gradually stir into potato mixture., Add the vinegar, parsley, salt, pepper and clams. Cook 5-10 minutes longer or until heated through.

10 quarts water
3 tablespoons salt
8 pounds red potatoes, peeled and cubed
6 large onions, chopped
1 cup butter, cubed
4 large carrots, grated
16 cans (6-1/2 ounces each) chopped clams
3 cans (12 ounces each) evaporated milk
1/2 cup minced fresh parsley
1 to 2 tablespoons pepper
2 pounds bacon strips, cooked and crumbled

Steps:

  • In two stockpots, bring water and salt to a boil. Carefully add potatoes; cook until tender (do not drain). In another large pan, saute onions in butter until tender. Add onions and carrots to potato mixture; heat through. , Drain clams if desired. Add the clams, milk, parsley and pepper to vegetable mixture; heat through. Just before serving, stir in bacon.

Clam chowder is a rich and creamy soup, bursting with the flavours and textures of shellfish, bacon and potatoes. Serve with crusty bread for a starter

Number Of Ingredients 11

1½ kg clams or a mixture of clams and cockles
50g butter
150g unsmoked bacon lardons, cubed pancetta or chopped streaky bacon
1 onion , finely chopped
sprig of thyme
1 bay leaf
1 tbsp plain flour
150ml milk
150ml double cream
2 medium potatoes - about 250 grams, cut into cubes
chopped parsley and crusty bread to serve

Steps:

  • Rinse the clams in several changes of cold water and drain well. Tip the clams into a large pan with 500ml of water. Cover, bring to the boil and simmer for 2 mins until the clams have just opened. Tip the contents of the pan into a colander over a bowl to catch the clam stock. When cool enough to handle, remove the clams from their shells - reserving a handful of empty shells for presentation if you want. Strain the clam stock into a jug, leaving any grit in the bottom of the bowl. You should have around 800ml stock.
  • Heat the butter in the same pan and sizzle the bacon for 3-4 mins until it starts to brown. Stir in the onion, thyme and bay and cook everything gently for 10 mins until the onion is soft and golden. Scatter over the flour and stir in to make a sandy paste, cook for 2 mins more, then gradually stir in the clam stock then the milk and the cream.
  • Throw in the potatoes, bring everything to a simmer and leave to bubble away gently for 10 mins or until the potatoes are cooked. Use a fork to crush a few of the potato chunks against the side of the pan to help thicken - you still want lots of defined chunks though. Stir through the clam meat and the few clam shells, if you've gone down that route, and simmer for a minute to reheat. Season with plenty of black pepper and a little salt, if needed, then stir through the parsley just before ladling into bowls or hollowed-out crusty rolls.

6 tablespoons butter
2 cups onions, finely diced
2 cups leeks, finely diced
2 cups celery, finely diced
1 cup carrot, finely diced
2 teaspoons garlic, minced
1/4 teaspoon ground pepper
1/4 teaspoon salt
1/4 teaspoon paprika
3/4 teaspoon thyme
2 teaspoons parsley
2 teaspoons dried celery flakes
5 -6 cups potatoes, small dice
8 ounces clam juice
4 cups water
6 1/2 ounces minced clams (juice reserved)
4 tablespoons red wine vinegar
6 cups half-and-half
1 cup flour
1 teaspoon Tabasco sauce

Steps:

  • In a large stockpot, saute onions, leeks, celery carrot and garlic in butter over medium heat until tender (~10 minutes).
  • Add potatoes, clam juice (including juice drained from minced clams), spices, vinegar and water to stockpot. Bring to a boil, stirring occasionally.
  • Reduce heat, cover and simmer 15-20 minutes (until potatoes are tender).
  • Combine 3 C half and half with flour, then add to stockpot.
  • Add clams, remaining half and half and Tabasco to stockpot and stir to combine well.
  • Heat through, stirring to mix. As it heats through soup will thicken.
  • Be sure to taste chowder before serving and season further with additional salt and pepper if needed.
  • Serve and enjoy!

1 ½ cups water

2 (10 ounce) cans minced clams

Steps:

  • Place diced bacon in large stock pot over medium-high heat. Cook until almost crisp; add onions, and cook 5 minutes. Stir in water and potatoes, and season with salt and pepper. Bring to a boil, and cook uncovered for 15 minutes, or until potatoes are fork tender.
  • Pour in half-and-half, and add butter. Drain clams, reserving clam liquid; stir clams and 1/2 of the clam liquid into the soup. Cook for about 5 minutes, or until heated through. Do not allow to boil.

This recipe was given to me by a bachelor who enjoys cooking, and making large quantities when he does.. It freezes well, and he makes up many individual servings for himself. I was never very fussy about clam chowder, but have to admit, I love the flavor of this one. I think the spicey clamato juice is the key to awesome flavor.

3 (14 ounce) cans clam broth
1 (28 ounce) can clams
1 (14 ounce) can clams
2 liters of extra spicy clamato juice
84 ounces diced tomatoes
1 lb bacon, diced
2 cups dice onions
2 cups diced carrots
4 cups diced potatoes
1/3 cup pot barley
1/3 cup rice
2 -3 drops Tabasco sauce (to taste)
pepper (to taste)
Tabasco sauce, to suit taste

Steps:

  • Saute lightly, onions and bacon.
  • Drain clams reserving juice.
  • In a large stock pot, boil clamato juice, clam broth and drained broth from clams.
  • When broth and clamato come to a boil, add bacon and onions.
  • Bring back to boil,then add barley, rice,and carrots.
  • Bring back to boil and then simmer for 1/2 hour.
  • Now add tobasco, pepper and potatoes.
  • Simmer again for another 45 minutes.
  • Add clams.
  • Thicken soup if desired (equal amounts of flour and water mixed together.
