I dedicate this recipe to Inge1505 her recipe#128500 Smoked Sausage, Peppers & Tomatoes it inspired this recipe This recipe is quick easy and tasty.. I served it for dinner but It would make a nice lunch too Use any favorite smoked sausage mild if you don't care for spicy. Use any tortilla corn, white, jalapeno or like I did whole wheat.. If you want more spice add a few drops of hot sauce to the stir fry. If you like serve this on a "Sub" bun instead of a tortilla. Throw in some tomatoes too!

2 hungarian smoked sausage, apprx 6-inch each, casing removed
1/2 green sweet pepper, sliced
1/2 red pepper, sliced
3/4 cup button mushrooms or 3/4 cup larger mushroom, sliced
3 garlic cloves, minced
1/2 cup onion, chopped
1/4 cup zesty Italian salad dressing
salt & pepper
2 tortillas

Steps:

  • Brown the sausages lightly, add peppers, onion, garlic and mushrooms.
  • Stir fry for apprx 5 minutes.
  • Pour in the Italian dressing, let it bubble and reduce to nearly nothing - stir the veggies and sausage. as the dressing reduces.
  • Season with Salt & Pepper.
  • Place a sausage and half the veggies on a tortilla, roll and enjoy.

1 (1 1/4 lb) package Italian sausage
1 cup dry white wine
1 medium onion, sliced
1 garlic clove, minced
2 medium red bell peppers, cut into strips
1 (8 ounce) package sliced fresh mushrooms
2 (8 ounce) cans tomato sauce

Steps:

  • Brown sausage in a 10-inch cast-iron skillet; add wine.
  • Bring to a boil; cover, reduce heat, and simmer 10 minutes or until sausage is done.
  • Uncover, bring to a boil, and reduce wine by two-thirds. Remove sausage, reserving drippings in skillet; keep sausage warm.
  • Add onion, garlic, bell pepper, and mushrooms to skillet; saute until tender. Return sausage to skillet; add tomato sauce. Simmer 8 minutes or to desired consistency.

Steps:

  • Saute sausage in a large skillet over medium-high heat for 3 minutes, turning occasionally.
  • Add olive oil, onion, peppers and oregano, cooking until tender, about 3 minutes.
  • Remove from heat, stir in Parmesan cheese.

  • Preheat a very large cast iron or heavy-bottomed skillet over medium/medium-high heat (6/10 on the heat scale,) then add 2 Tablespoons extra virgin olive oil and potatoes. Season generously with salt and pepper then saute, flipping occasionally with a spatula, until potatoes are crispy and tender, 12-14 minutes, turning heat down slightly if potatoes begin to burn before they’re tender. Scoop potatoes onto a plate then set aside.
  • Turn heat to high then add remaining Tablespoon oil to the skillet. Add sausage, peppers, onions, and mushrooms then season lightly with salt and pepper and saute until vegetables are tender, 10-12 minutes, flipping with a spatula occasionally and turning heat down when vegetables begin to soften. Add garlic and basil then saute for 1 more minute. Add potatoes back into the skillet then stir to combine.
