SMOKED SAUSAGE AND APPLE BAKE



Smoked Sausage and Apple Bake image

An easy and delicious blend of smoked sausage, apples, onions, and sauerkraut that everyone will love! This is great served with potatoes and cornbread. If you do not wish to use brandy, a good quality apple cider may be substituted for it in the gravy.

1 pound smoked sausage, sliced
2 Granny Smith apples - peeled, cored and sliced
½ teaspoon ground cinnamon, or to taste
½ large onion, sliced
1 (16 ounce) can sauerkraut, drained
½ cup heavy cream
½ cup apple brandy

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Brown the sausage in a large skillet over medium heat. Set aside.
  • Make a layer of sliced apples in the bottom of a 2 quart casserole dish. Sprinkle with a bit of the cinnamon. Layer half of the onion, then half of the sauerkraut over the apples. Place all of the sausage slices over the sauerkraut, reserving the drippings in the pan. Cover the sausage with the remaining sauerkraut, onion, and top with apple slices. Sprinkle the remaining cinnamon over the top.
  • Pour the heavy cream and brandy into the skillet with the sausage drippings. Place over medium heat, and stir to remove the bits of sausage flavor from the bottom. Pour over the sausage and apple casserole.
  • Cover, and bake for 1 hour in the preheated oven. Let stand for a few minutes before serving.

2 pounds Italian sausage
¾ cup packed brown sugar
1 cup chunky applesauce
1 onion, chopped

Steps:

  • Preheat oven to 325 degrees F (165 degrees C).
  • In a large skillet, fry sausage until it is browned. Drain well. Cut the sausage into bite-size pieces.
  • In a small casserole dish, combine sausage, brown sugar, applesauce, and onion.
  • Bake at 325 degrees F (165 degrees C) for 45 minutes. Serve with toothpicks for easy nibbling.

We have this often for an imprompto lunch, after it's cooked I pour it in a slow cooker to keep warm throughout the afternoon so we can 'pick' at it. We think these are very good. Do not substitute for smoked sausage cocktail weiners, they are too overpowering.

2 tablespoons butter
1 onion, chopped
1/2 cup apple jelly
1/2 cup packed brown sugar
2 lbs kielbasa, cut into 1 inch slices
3 tart apples, peeled, cored and sliced
2 tablespoons water
1 tablespoon cornstarch

Steps:

  • Melt butter in a skillet over medium-high heat. Saute onion until golden.
  • Stir in jelly and brown sugar until dissolved add kielbasa. Reduce heat to medium-low cook for 15 minutes or until mixture thickens, stirring occasionally.
  • Add apples, cover and heat 10 minutes more or until apples are tender.
  • Combine water and cornstarch in a small bowl, stir into apple mixture. Heat until thickened 2-3 minutes. Remove from heat and keep warm until serving time.

1 small apple, peeled and cut into 24 thin slices
6 thin slices Gouda cheese, quartered

  • Preheat oven to 375°. Unroll crescent dough and separate into 8 triangles; cut each lengthwise into 3 thin triangles. On the wide end of each triangle, place 1 slice apple, 1 folded piece cheese and 1 sausage; roll up tightly., Place 1 in. apart on parchment-lined baking sheets, point side down.
