Quiche quickly became my specialty. If you like smoked salmon, this dish will both surprise you and impress your guests. Best served with Caesar salad.

Number Of Ingredients 8

1 (9 inch) pie crust pastry
8 ounces smoked salmon, or more to taste, broken into small pieces
5 ounces cream cheese
1 teaspoon dill
8 eggs, or more to taste
¾ cup milk
salt and ground black pepper to taste
1 (8 ounce) package shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Press pie crust pastry into a pie dish.
  • Bake in the preheated oven until lightly golden, 10 to 12 minutes.
  • Arrange salmon into the baked pie crust to cover evenly. Spread cream cheese over over salmon layer using your hands. Sprinkle dill over cream cheese layer.
  • Beat eggs, milk, salt, and pepper together in a bowl; pour over cream cheese layer just below crust edge. Sprinkle mozzarella cheese over egg layer.
  • Bake in the preheated oven until quiche is set and middle has risen, 40 to 50 minutes. Cool for 5 minutes before slicing.

Number Of Ingredients 25

Emeril's ESSENCE Creole Seasoning (also referred to as Bayou Blast):
3 1/4 cups grated, cooked potato or frozen hashbrown potatoes, thawed and squeezed dry
2 tablespoons melted butter, plus 1 tablespoon whole butter
1 tablespoon Essence, recipe follows
1/4 cup finely grated Parmesan
2 medium leeks, halved and thinly sliced, about 1 cup
1/2 teaspoon minced garlic
4 ounces cream cheese, at room temperature
2 teaspoons fresh lemon juice
3 eggs
1 cup heavy cream
6 ounces smoked salmon
2 tablespoons chopped fresh dill
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme
Combine all ingredients thoroughly.
Yield: 2/3 cup

Steps:

  • Preheat oven to 425 degrees F. Lightly grease a 9-inch deep-dish glass pie plate. In a bowl, combine the potatoes, 1 tablespoon of the melted butter and Essence, and toss to combine. Add the Parmesan and toss to combine. Press the potato mixture into the prepared pie plate, spreading to evenly cover the bottom and up the sides. Bake until the potatoes are golden brown, 25 to 30 minutes. Remove from the oven and cool on a wire rack. Reduce the oven to 350 degrees F. Pour the remaining tablespoon of butter into a small skillet over medium heat. Add the leeks and saute until softened, about 4 minutes. Add the garlic and cook for 30 seconds. Remove from the heat. Place the cream cheese in a large bowl and using a wooden spoon, stir in the leeks and lemon juice. Add the eggs, 1 at a time, stirring just until combined. Add the cream, salmon, dill, salt, and pepper and mix well. Pour the cream cheese-salmon mixture into the cooled potato crust and bake for about 30 minutes, until golden and the batter is set. Cool quiche for 20 minutes before serving. Serve warm or chilled.

1/2 lb center cut salmon fillet
1/2 lb small red potato, peeled and finely diced
2 tablespoons butter
2 scallions, minced (white part only)
1 unbaked 9-inch deep dish pie pastry
3 tablespoons minced fresh dill
1/4 cup white wine
salt and pepper
1 cup heavy cream
4 large eggs

Steps:

  • Put the salmon in medium skillet; add enought water to cover (or use half water/half white wine); bring to a simmer, cover, and poach over low heat for about 30 minutes or until flaky.
  • Transfer salmon to a plate or shallow dish; peel the skin away and discard; remove any bones and dark flesh; flake salmon and set aside.
  • Put the potatoes in a saucepan; add enough water to cover.
  • Bring to a boil, lower heat and cook until tender; drain.
  • In a medium skillet, melt the butter over medium heat; add in scallions; cook/stir for 2 minutes; take skillet from heat.
  • Sprinkle to cooked potatoes over the bottom of pie shell.
  • Spoon the scallions over the potatoes.
  • In a mixing bowl, stir together the flaked salmon, dill, and 1/4 cup white wine; season with salt and pepper.
  • Spoon mixture over the onions and potatoes.
  • In another mixing bowl, add the cream and eggs; whisk until well blended.
  • Pour into pie shell.
  • Bake in a 350° oven for about 35-40 minutes or until set and golden (may need to cover pie shell edges with foil to keep from getting too brown).
  • Cut into pie wedges and serve.

1 (9 inch) prepared pie crusts
4 ounces smoked salmon, chopped
1 small shallot, minced
1 cup gruyere cheese, shredded (4 oz.)
1 tablespoon flour
1/4 cup parmesan cheese, grated
1 cup milk
1 cup cream
4 large eggs
1/4 teaspoon nutmeg
1/4 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Preheat oven to 375º Farenheit.
  • Bake pie crust shell for 10 minutes.
  • Reduce oven temperature to 350º.
  • In a large bowl whisk together eggs, milk, cream, nutmeg, salt and pepper.
  • In small bowl mix together, Gruyere, Parmesan, shallots and flour.
  • Sprinkle the cheese mixture and salmon over the bottom of the WARM pie shell.
  • Pour egg mixture into warm pie shell.
  • Bake on middle shelf until quiche is lightly browned and knife inserted 1 inch from the edge comes out clean, 40 to 50 minutes.
  • The center should be set, but soft like gelatin (it will set up after removing from the oven).
  • Transfer to a baking rack and cool.
  • Serve warm or at room temperature.
