SMOKED SALMON CARBONARA

If you've got leftover smoked salmon trimmings, use them up in this creamy, indulgent pasta dish

200g quick-cook spaghetti
1 tsp butter
1 garlic clove , crushed
150ml double cream
2 eggs , beaten
3 tbsp freshly grated parmesan
120g pack smoked salmon trimmings
½ small bunch chives , snipped

Steps:

  • Cook the spaghetti. Meanwhile, melt the butter in a small pan, add the garlic and gently sizzle for 1 min. Remove from the heat.
  • Lightly beat the cream, eggs, softened garlic and half the Parmesan in a bowl. Stir in the smoked salmon trimmings.
  • Drain the pasta well and return to the pan. Add the salmon mixture and the chives, then toss well so the heat from the pasta lightly thickens the sauce. Serve scattered with the remaining Parmesan and plenty of black pepper.

Creamy Smoked Salmon Pasta image

This is a lighter version of pasta carbonara. For people who want the flavor but not the bacon, smoked salmon is the perfect substitute!

Number Of Ingredients 10

6 tablespoons butter
½ onion, finely chopped
2 tablespoons all-purpose flour
2 teaspoons garlic powder
2 cups skim milk
½ cup grated Romano cheese
1 cup frozen green peas, thawed and drained
½ cup canned mushrooms, drained
10 ounces smoked salmon, chopped
1 (16 ounce) package penne pasta

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
  • Melt butter in a large skillet over medium heat. Saute onion in butter until tender.
  • Stir flour and garlic powder into the butter and onions. Gradually stir in milk. Heat to just below boiling point, and then gradually stir in cheese until the sauce is smooth. Stir in peas and mushrooms., and cook over low heat for 4 minutes.
  • Toss in smoked salmon, and cook for 2 more minutes. Serve over pasta.

  • Cook the spag according to the instructions on the packet. In the last 4 minutes of cooking time, add the frozen peas into the spaghetti to cook through.
  • Beat the eggs in a bowl with the finely grated parmesan, chives, garlic powder, salt and pepper.
  • Drain the spaghetti and peas, but keep 250mls/1 cup of the pasta water back - you'll use this later. Keep the pasta and peas in the colander.
  • Using the pan which you cooked the spaghetti and peas in, pop back on the heat and spray with low calorie cooking spray. Flake the hot smoked salmon fillets into the pan and heat through for a few minutes.
