BBQ SMOKED BAKED POTATOES



BBQ Smoked Baked Potatoes image

These smoked potatoes are prepared with a herb and spice rub and are perfect served alongside barbecued or grilled meats.

8 potatoes, preferably Yukon Gold
1 cup bacon grease , softened but not melted
2 tablespoons dried sage
2 tablespoons granulated garlic
2 tablespoons dried parsley
2 tablespoons kosher, or sea salt
2 tablespoons black pepper
2 tablespoons brown sugar
2 tablespoons paprika

Steps:

  • Gather the ingredients.
  • Wash and dry potatoes.
  • Rub warm, soft bacon grease into the skin of each potato, covering completely.
  • Mix the rest of the ingredients together in a small bowl. Roll each potato in the herb mixture, making sure to cover it completely. Puncture each potato several times using a fork.
  • Place the potatoes on ​the hot grill in a smoker, and smoke for 1 hour at 250 F, turning once.
  • Remove potatoes from the smoker and wrap each in a double layer of heavy-duty aluminum foil. Seal the foil and place back in the smoker for another 1 to 1 1/2 hours or until the potatoes are tender in the center when poked with a knife or skewer.

Smoked potatoes are seasoned with salt and pepper and drizzled with olive oil then get wrapped in foil and cooked on a smoker.

4 large baking potatoes such as russets, chopped into 1 inch cubes
2 tablespoons of olive oil
Salt and Pepper to taste
Herbs of choice like parsley, dill or chives

Steps:

  • Preheat smoker to 225 F.
  • Rinse and dry potatoes. Cut your potatoes in 1-inch sized cubes.
  • Combine the potatoes with olive oil, salt, and pepper in a bowl. Toss to coat all the potatoes.
  • Place the potatoes on some foil and fold in each side to make some handles. The foil also helps to easily transfer the potatoes to the smoker.
  • Smoke the potatoes for up to 2 to 3 hours. Potatoes can be smoked alongside whatever meat you are smoking.
  • Potatoes are done when they can be pierced easily to the center.

3/4 cup process Cheddar cheese sauce (from 15-oz jar)
1/2 cup shredded Cheddar cheese (2 oz)
2 cups frozen bell pepper and onion stir-fry (from 1-lb bag)
2 cups refrigerated cooked diced potatoes with onions (from 20-oz bag)
1 lb fully cooked smoked beef sausage, cut into 1 1/2-inch pieces

Steps:

  • Heat gas or charcoal grill. Cut 4 (18x12-inch) sheets of heavy-duty foil; spray with cooking spray.
  • In medium bowl, mix cheese sauce and cheese. Stir in stir-fry vegetables and potatoes. Arrange 4 sausage pieces and 1 cup potato mixture on center of each foil sheet. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packets on grill. Cover grill; cook over medium-low heat 20 to 25 minutes, rotating packets 1/2 turn after 10 minutes, until potatoes are tender. To serve, cut large X across top of each packet; carefully fold back foil to allow steam to escape.

2 tablespoons butter or margarine
1 cup shredded Cheddar cheese (4 ounces)

2 medium green onions, sliced (2 tablespoons)

Steps:

  • Heat coals or gas grill for direct heat. Place potatoes on 30x18-inch piece of heavy-duty foil. Sprinkle with salt. Dot with butter. Sprinkle with cheese and bacon chips.
  • Wrap foil securely around potatoes; pierce top of foil once or twice with fork to vent steam. Cover and grill foil packet, seam side up, 4 to 6 inches from medium heat 45 to 60 minutes or until potatoes are tender. Sprinkle with onions.

1 cup shredded smoked or regular Cheddar cheese (4 oz)
2 tablespoons Betty Crocker™ Bac~Os® bacon flavor bits or chips
2 medium green onions, sliced (2 tablespoons)

Steps:

  • Heat gas or charcoal grill. Cut 30x18-inch piece of heavy-duty foil. Place potato chunks on foil; sprinkle with salt. Cut butter into small pieces; sprinkle over potatoes. Sprinkle with cheese and bacon bits.
