This soulful soup, made with a Polish twist, uses kielbasa for a hearty meal to enjoy on those cool autumn evenings.

1 bunch kale, stems removed and discarded
1 tablespoon olive oil
8 ounces kielbasa sausage, sliced thin
1 bunch green onions, sliced
3 cups chicken broth
1 (15.5 ounce) can white beans, drained and rinsed
½ teaspoon salt
1 pinch ground black pepper to taste
1 pinch grated Parmesan cheese, or to taste

Steps:

  • Roll kale leaves into tight tubes and cut crosswise into 1/4-inch strips.
  • Heat oil in a large, heavy saucepan over medium heat. Cook and stir kielbasa in hot oil until browned, about 5 minutes. Stir green onion with sausage; cook until onions soften, about 3 minutes. Add kale; cook and stir until kale wilts, about 3 minutes.
  • Pour chicken broth over kielbasa mixture; add beans and stir. Bring the mixture to a boil, reduce heat to low, and cook at a simmer until kale is completely tender, about 15 minutes. Season mixture with salt and pepper and top with Parmesan cheese.

1 onion, diced
1 package (12 oz.) kielbasa
1 Tb extra virgin olive oil
2 cloves garlic, minced
1 can (15 oz) fire roasted, diced tomatoes
2 cans (15 oz) white beans (navy, great northern or cannelini) - rinsed & drained
3 cups chicken broth
1/2 tp salt
1/2 tsp black pepper
1 tsp rosemary

Steps:

  • To begin, cut the kielbasa int 1/2 inch pieces.
  • In a Dutch oven, heat the oil. Toss in the onion and kielbasa and cook over medium heat until the kielbasa is slightly browned in spots and the onions are translucent.
  • Add in the garlic and tomatoes. Cook for 5 minutes.
  • Add in all of the remaining ingredients. Bring it to a boil, reduce to a medium low heat and let it cook together for 5 minutes.
  • Enjoy!

3 cups sliced smoked kielbasa sausage
3 cans (45 oz), drained and rinsed white northern beans
2 cans (28 oz) low sodium chicken stock
2 tbsp olive oil
2 tbsp unsalted butter
1 cup small diced yellow onion
1 cup small diced celery
¾ cup small diced carrots
1 tbsp deseeded and minced jalapeño pepper
1 tbsp minced fresh garlic
2 tbsp corn meal
salt
to taste pepper

Steps:

  • In a heavy duty pot or Dutch oven, heat the olive oil and butter until the butter is melted.
  • Next, add onion, carrot, and celery.
  • Cook the vegetables in the oil for 3-5 minutes or until the onions are translucent.
  • Then add the jalapeño, corn meal and garlic.
  • Cook for an additional 1-2 minutes.
  • Finally, add the chicken stock, white beans and sausage.
  • Simmer on medium low heat for 30-35 minutes until the beans are tender and the sausage is heated through

2 C. Nueske's Kielbasa, sliced thin (1/2 lb.)
1 C. onion, diced
1 C. carrots, diced
1 C. celery, diced
2 tsp. fresh thyme
4 cans Cannelli beans

Steps:

  • Puree one can of Cannnelli beans in blender. Place this puree in large saucepan along with the rest of the ingredients. Simmer for 25 minutes. Serve hot.

1 can (16 ounces) kidney beans, rinsed and drained

2 medium green peppers, chopped
2 medium onions, chopped
2 celery ribs, chopped

1-1/2 teaspoons salt

1 pound dried navy beans, rinsed
1 tablespoon olive oil
1 pound smoked pork sausage, sliced into 1/2-inch pieces
2 cups chopped onions
1 1/2 tablespoons minced garlic
2 bay leaves
2 sprigs fresh thyme
8 cups chicken stock
3 cups water
2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
1/2 teaspoon ground cayenne pepper
Loaf of crusty bread, for garnish

Steps:

  • Soak beans in cold water to cover, overnight (8 to12 hours). Drain beans and rinse well.
  • In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add the sausage and saute for 5 to 6 minutes, or until browned. Remove the sausage from the skillet and reserve. Add the onions and cook 2 to 3 minutes, stirring occasionally. Add the garlic and cook, stirring, an additional minute.
  • Add the browned sausage back to the stockpot. Stir in the beans, bay leaves, and thyme. Add the chicken stock, water, salt, pepper, and cayenne. Bring soup to a boil; reduce heat to a simmer and cook, partially covered for 2 1/2 to 3 hours, stirring occasionally. Skim off any fat, as necessary, if desired. (The cook time may vary depending on the beans, but they should be tender and falling apart when finished.)
  • Adjust seasonings with salt and pepper, if needed. Using a potato masher or the flat side of a spoon, gently mash the beans against the bottom and sides of the stockpot, leaving some of the beans whole and some mashed. Continue to simmer the soup for 30 minutes, uncovered, or until desired consistency.
  • Ladle the soup into bowls. Serve hot, with crusty bread slices.
