Chicken thighs get delish with a family-pleasing, super-easy crock pot recipe. Only one step, start in the morning, ready when you get home. Just add your favorite rice.

¾ cup hot salsa
¼ cup chunky peanut butter
¾ cup light coconut milk
2 tablespoons lime juice
1 tablespoon soy sauce
1 teaspoon white sugar
2 tablespoons grated fresh ginger
2 pounds skinless chicken thighs
½ cup chopped peanuts, for topping
2 tablespoons chopped cilantro, for topping

Steps:

  • Combine the salsa, peanut butter, coconut milk, lime juice, soy sauce, sugar, and ginger in the crock of a slow cooker; mix well. Place the chicken in the sauce, spoon mixture over chicken to coat.
  • Place the lid on the cooker and set to LOW. Cook until chicken is very tender and sauce has thickened, 8 to 9 hours. A meat thermometer, inserted into the thickest part of a thigh should read at least 160 degrees F (70 degrees C). Garnish with peanuts and cilantro before serving.

Tastes just like the curry you would get at a Thai restaurant, made right at home in your slow cooker. 6 medium carrots, chopped
3 stalk(s) celery chunks
8 chicken thighs, skinless and boneless* see notes
1 pkg butternut squash, frozen
2 Tbsp fresh ginger, minced
2 Tbsp thai red curry paste, see photo
3 Tbsp brown sugar or honey
3 Tbsp fish sauce
2/3 c rice, long-grain/wild rice blend see picture
2 c chicken stock
1 Tbsp salt
1 large red bell pepper, cubed set aside
1 medium onion, diced set aside
TOPPINGS
1 can(s) coconut milk, see notes
1 bunch cilantro, fresh, chopped
1 lime, cut in wedges
peanuts, chopped

Steps:

  • 1. Line your 6 quart slow cooker with a slow cooker cooking bag for easier cleanup. Assemble all of your ingredients.
  • 2. Layer the first 11 ingredients in the order listed in the crockpot. Set the pepper and onion aside to add in later. Set the toppings and coconut milk aside.
  • 3. Set the slow cooker on high for 2 1/2 hours, then add the pepper and onion and cook on low for 1 1/2 hours. You can also cook it on low for 6 hours; check at the five hour mark to see if the chicken is cooked.
  • 4. Once the chicken and vegetables are cooked, shred the chicken with two forks, discarding the bones*. Add the coconut milk, stir and taste for seasoning.
  • 5. Serve with a squeeze of lime, cilantro, and chopped peanuts, if desired.
  • 6. *I used bone-in, skinless chicken for extra flavor. Just remove the bones when you shred the chicken. You can also sub four large chicken breasts

1 1/2 pounds chicken legs, separated into drumsticks and thighs, skin removed
Salt to taste
2 tablespoons vegetable oil
1 cup minced onion
5 cloves garlic, peeled
1 tablespoon grated gingerroot
1 cup sliced carrots
1 cup 1-inch pieces red bell pepper
1 cup sliced mushrooms
1 to 2 teaspoons red curry paste, or to taste
2 (14-ounce) cans 'light' unsweetened coconut milk
1/2 teaspoon galanga root powder
1/2 teaspoon dried lemongrass flakes
1 teaspoon ground cumin
1 bay leaf
1 cup broccoli florets
1/2 cup canned bamboo shoots, drained
1/2 cup canned water chestnuts, drained
8 ears canned baby corn, drained
Fresh lemon juice, to taste
1/4 cup minced fresh cilantro
1/4 cup minced fresh mint

Steps:

  • Pat the chicken dry and season with salt. In a casserole set over moderately high heat, warm the oil until it is hot, add the chicken and cook it, turning, until no longer pink. Transfer chicken to a plate. Add the onion to the casserole and cook it, stirring occasionally, for 3 minutes. Add the garlic and gingerroot and cook, stirring, 1 minute. Add the carrots, bell pepper, mushrooms, and salt to taste, and cook the mixture, stirring occasionally, for 5 minutes more. Return the chicken to the pan, add the curry paste and cook the mixture, turning and stirring, 1 minute. Add the coconut milk, galanga root powder, lemongrass flakes, cumin, and bay leaf. Bring mixture to a boil, and simmer, stirring occasionally, for 20 minutes. Add the broccoli, bamboo shoots, water chestnuts, corn, and salt to taste, and simmer the mixture, stirring occasionally, for 10 minutes, or until chicken is cooked through. Discard bay leaf. Before serving, stir in the lemon juice, cilantro, and mint.

6 skinless, boneless chicken breast halves - cut into 1/2 inch strips
1 large red bell pepper, seeded and sliced into strips
1 large onion, coarsely chopped
½ cup chicken broth
¼ cup soy sauce
1 tablespoon ground cumin
3 cloves garlic, minced
½ teaspoon red pepper flakes
salt and pepper to taste
2 tablespoons cornstarch
⅔ cup creamy peanut butter
1 tablespoon soy sauce
¼ cup lime juice
3 green onion, chopped
¼ cup chopped fresh cilantro
½ cup chopped roasted peanuts

Steps:

  • Place the chicken breast strips, bell pepper and onion into a slow cooker. Pour in the chicken broth and 1/4 cup of soy sauce, then season with cumin, garlic, red pepper flakes, salt and pepper. Stir to blend, then cover and cook on Low for 4 1/2 to 5 hours.
  • Remove 1 cup of the liquid from the slow cooker, and mix this with the cornstarch, peanut butter, 1 tablespoon of soy sauce and lime juice. This should blend into a fairly thick sauce. Stir the sauce back into the slow cooker, and place the lid on the pot.
  • Cook on High for 30 minutes. Garnish with green onions, cilantro and peanuts before serving.

1 lb boneless skinless chicken breast, cut into bite-size pieces
1 lb boneless skinless chicken thighs, cut into bite-size pieces
2 cups mushrooms, halved (I like crimini)
2 cups water
1 cup frozen small whole onions (or 3/4 cup chopped onion)
1 cup celery, sliced, 1/2 inch slices
1 1/2 cups carrots, thinly sliced
1 teaspoon paprika (make sure to use good quality paprika for full flavor!)
1/2 teaspoon salt, to taste
1 teaspoon dried rubbed sage
1/2 teaspoon dried thyme
1/2 teaspoon pepper, freshly ground, to taste
14 1/4 ounces chicken broth
6 ounces tomato paste
1/2 cup low sodium chicken broth or 1/2 cup vegetable broth
3 tablespoons cornstarch
2 cups frozen green peas or 2 cups frozen edamame soybeans
1 cup cubed extra firm tofu (optional)

Steps:

  • Combine first 14 ingredients in an electric slow cooker.
  • Cover with lid and cook on high setting for 4 hours or until carrot is tender.
  • Combine the water and cornstarch in a small bowl, stirring with a whisk until blended.
  • Add cornstarch mixture and frozen peas or edamame (and tofu, if using) to the slow cooker, stir well.
  • Re-cover and cook on high-heat setting an 30 additional minutes.
  • Serve with hot cooked rice.
  • Note: I don't eat much meat and prefer more vegetables, so I often add extra firm cubed tofu at the last 30 minute mark. Tasty! Also good with small new potatoes added at the beginning, which is another good way to stretch the recipe. :).
