Provided by Kare for Kitchen Treaty

Time 8h50m

Number Of Ingredients 14

1 14.5- ounce can white cannelloni beans (drained)
1 14.5- ounce can diced fire-roasted tomatoes
2 cups diced summer squash (about 2 small)
1 1/2 cups diced (peeled Russet potato (about 1 medium) (unpeeled Yukon gold or red potatoes would also be great))
1 cup diced onion (about 1 small)
2 cloves garlic (minced)
2 teaspoons Italian seasoning
1/2 teaspoon smoked paprika
1/2 teaspoon kosher salt
4 cups water
1 small rind Parmesan cheese (optional)
Additional salt and freshly ground black pepper
7-8 fresh basil leaves
1/4 pound Andouille sausage

Steps:

  • Add the beans, tomatoes, squash, potato, onion, garlic, Italian seasoning, smoked paprika, 1/2 teaspoon salt, a quick grind or two of black pepper (or a hefty pinch), water, and the Parmesan rind to the Crock Pot. Stir.
  • Cook on low for 8 - 10 hours.
  • Taste and add additional salt and pepper if desired.
  • Remove the Andouille sausage from the casing and brown in a medium saucepan. Using a spoon, remove grease from the pan.
  • Add a little less than half of the soup - about 3 1/2 cups - to the saucepan with the sausage. Stir and, over medium heat, bring to a low boil. Simmer for 20 minutes.
  • Tear basil leaves over both batches and stir.
  • Serve with additional basil leaves and shredded Parmesan cheese, if desired.

SMOKY WHITE BEAN SOUP RECIPE

Smoky White Bean Soup Recipe image

Soups are the most comforting dishes for fall and winter nights. But if you want to do homemade soup right, you have to spend hours letting the broth simmer or leave it in the slow cooker all day. Not anymore! You might not believe us, but this Smoky White Bean Soup is ready from start to finish in just 25 minutes. That's less time than it takes Mama to put her face on! Not only is this recipe super quick, but it cooks in one pot. A 25-minute, one-dish recipe that's comforting and filling is a winner in every sense of the word. This recipe starts with one of our favorite things-bacon-but only one thick-cut slice of bacon, so make it an extra thick slice. This recipe is so easy because that you're not chopping your time away. Pre-chopped onion, pre-chopped celery, one minced garlic clove, and a teaspoon of chopped fresh thyme are next in the pan, and they cook right in the bacon drippings. Talk about yum. Add chicken broth, cannellini beans, one chopped and seeded plum tomato, one bay leaf, salt, and pepper, and you're done. Really, we wouldn't lie! This soup only simmers for eight minutes after it's brought to a boil, and it's ready to eat. This recipe is so easy to whip up the fastest lunch or dinner ever, and you can make it ahead to take to work for the most comforting brown-bag lunch in the office.

Time 25m

Yield Serves 2 (serving size: 1 1/4 cups)

Number Of Ingredients 11

1 thick-cut bacon slice, chopped
1/2 cup chopped yellow onion
1/4 cup chopped celery
1 minced garlic clove
1 teaspoon chopped fresh thyme
1 1/2 cups chicken broth
1 (15-oz.) can cannellini beans, drained and rinsed
1 seeded and chopped plum tomato
1 bay leaf
1/4 teaspoon kosher salt
1/4 teaspoon black pepper

Steps:

  • Cook the chopped bacon in a medium saucepan over medium until crispy, about 6 minutes. Remove bacon, and drain on paper towels, reserving drippings in skillet. Cook the onion, celery, garlic, and thyme in the reserved drippings in saucepan until beginning to soften, about 3 minutes. Stir in the chicken broth, cannellini beans, chopped plum tomato, bay leaf, and kosher salt and black pepper. Bring to a boil over medium-high; reduce heat medium-low, and simmer, stirring occasionally, 8 minutes. Serve hot.

SLOW-COOKER WHITE BEAN PARMESAN SOUP

Slow-Cooker White Bean Parmesan Soup image

Parmesan rinds are magic. After a long braise, that hard, waxy scrap infuses the entire soup with its rich, distinctive flavor. Here, they make a wholesome soup taste like an incredible indulgence. So don't ever throw them away. They keep in the freezer indefinitely. The wheat berries here are also a great match for the slow cooker. While they may not be the most glamorous grains, they hold their shape and take a conveniently long time to get tender. You can find them at many grocery or natural-foods stores, as well as online. But you can also substitute farro or spelt (whole grains but not pearled). Just note that they'll cook faster and may end up quite soft after an 8-hour cook time.

Categories     dinner, lunch, weekday, soups and stews, main course

Time 10h

Yield 4 to 6 servings

Number Of Ingredients 16

1 pound dry cannellini beans, soaked overnight and drained
Kosher salt and black pepper
8 ounces Parmesan, hard rinds cut off and reserved, the rest grated for serving
1 cup wheat berries
1/4 cup olive oil
1 large onion, finely chopped
1 fennel bulb, cored and finely chopped, fronds roughly chopped and reserved
3 celery stalks, sliced 1/2-inch thick
6 garlic cloves, roughly chopped
1 teaspoon fennel seeds
1 teaspoon red-pepper flakes
2 sprigs fresh rosemary
1/2 cup dry white wine
6 cups chicken stock or broth
Leaves from 1 small bunch flat-leaf parsley, chopped
Juice of 1 large lemon

Steps:

  • Put the soaked, drained beans in a 5- to 8-quart slow cooker, and season them generously with salt and pepper. Add the Parmesan rinds and the wheat berries.
  • Warm the oil in a large skillet over medium-high heat. Add the onion, season generously with salt, and cook, stirring occasionally, until softened, about 5 minutes. Add the fennel. Continue to cook, stirring often, until the fennel is softened and the onion is lightly browned, about 5 more minutes. Add the celery and garlic, and cook, stirring, until just softened, about 1 minute. Add the fennel seeds and red pepper, and cook, stirring constantly, until combined and fragrant, about 1 minute. Add the rosemary and the wine and let the wine bubble until the pan is almost dry, about 2 minutes.
  • Scrape the mixture from the skillet into the slow cooker. Add the stock, and season it: Add 1/2 teaspoon salt, if you are using low-sodium broth, or 1 teaspoon salt, if using homemade unsalted stock. (Do not add salt now if you are using fully salted broth.) Stir to combine, and cook on low until the wheat berries are tender and the beans are creamy, about 8 to 10 hours. (Taste the beans to make sure they are creamy; they can vary in their cooking time depending on their age.) The soup can hold well on warm for 1 to 2 additional hours.
  • Before serving, remove and discard the rosemary sprigs. Stir in the parsley, lemon juice, and reserved fennel fronds. Taste and add salt and pepper if necessary. Serve in bowls topped generously with grated Parmesan.

SUMMER SQUASH AND SAUSAGE STEW

Summer Squash and Sausage Stew image

This simple squash and sausage stew represents my idea of the perfect summer supper. It's very comforting, relatively fast, wonderfully flavorful, and helps solve a problem that's existed since neighbors started planting gardens: what to do with all that squash! Serve it with a big slice of crusty bread for dipping into the broth.
