I would definately suggest to add a small can of green chilis and maybe a dash of red pepper flakes to the cheese mix at the begining! It was a tad bland but still really good! I used one can of the cheese soup and one can of the southwest cheese soup!:)

2 (10 1/2 ounce) cans cheddar cheese soup
1 cup water
2 cups chunky salsa
1 1/4 cups uncooked converted white rice
12 ounces cooked chicken, chopped into small pieces
15 98% fat free fajita size flour tortillas (1 point each)

Steps:

  • Mix soup, water, salsa, rice and chicken in slow cooker. Cover and cook on LOW 6 to 7 hours or until rice is done. Spoon 1/2 cup rice mixture down center of each tortilla. Fold tortilla around filling.
  • Serves: 15 (1/2 Cup Rice + 1 Tortilla).
  • Per Serving: 210 Calories; 3g Fat (12.1% calories from fat); 11g Protein; 36g Carbohydrate; 3g Dietary Fiber; 17mg Cholesterol; 704mg Sodium. Exchanges: 1 Grain (Starch); 1/2 Lean Meat; 1/2 Vegetable. WWP: 4.

  • Stir the soup, water, picante sauce, rice and chicken in a 4-quart slow cooker.
  • Cover and cook on LOW for 7 to 8 hours or until chicken is cooked through.

1-1/2 pounds boneless skinless chicken breast halves
2 cups chicken broth
3/4 cup creamy Caesar salad dressing
1/2 cup shredded Parmesan cheese
1/4 cup minced fresh parsley
1/2 teaspoon pepper
6 flour tortillas (8 inches)
2 cups shredded lettuce
Optional: Salad croutons, cooked crumbled bacon and additional shredded Parmesan cheese

Steps:

  • Place chicken and broth in a 1-1/2- or 3-qt. slow cooker. Cook, covered, on low 3-4 hours or until a thermometer inserted in chicken reads 165°. Remove chicken and discard cooking juices. Shred chicken with 2 forks; return to slow cooker., Stir in dressing, Parmesan, parsley and pepper; heat through. Serve in tortillas with lettuce and, if desired, salad croutons, crumbled bacon and additional shredded Parmesan cheese.

3/4 cup Old El Paso™ Thick 'n Chunky salsa
1 can (15 oz) Progresso™ black beans, drained, rinsed
1 package (9 oz) frozen cooked chicken breast strips, thawed, cubed
1 container (8 oz) sour cream
1 medium red bell pepper, chopped (1 cup)
3 medium green onions, sliced (3 tablespoons)
Large tortilla chips

Steps:

  • Spray 3- to 4-quart slow cooker with cooking spray. In cooker, place cheese, salsa, beans and chicken.
  • Cover; cook on Low heat setting 2 hours, stirring once halfway through cooking.
  • Stir in sour cream, bell pepper and onions. Increase heat setting to High. Cover; cook about 45 minutes longer or until mixture is hot.
  • Serve with tortilla chips. Topping can be kept warm on Low heat setting up to 2 hours; stir occasionally.
