CHARLEY'S SLOW COOKER MEXICAN STYLE MEAT

This recipe can be used with chicken, beef, pork and even venison. It freezes well, and can be made into burritos, tacos, or any number of other Mexican-style dishes. This dish uses a lot of spice, so please be sure to adjust to your taste.

1 (4 pound) chuck roast
1 teaspoon salt
1 teaspoon ground black pepper
2 tablespoons olive oil
1 large onion, chopped
1 ¼ cups diced green chile pepper
1 teaspoon chili powder
1 teaspoon ground cayenne pepper
1 (5 ounce) bottle hot pepper sauce
1 teaspoon garlic powder

Steps:

  • Trim the roast of any excess fat, and season with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Place the beef in the hot skillet, and brown it quickly on all sides.
  • Transfer the roast to a slow cooker and top it with the chopped onion. Season with chile peppers, chili powder, cayenne pepper, hot pepper sauce, and garlic powder. Add enough water to cover 1/3 of the roast.
  • Cover, and cook on High for 6 hours, checking to make sure there is always at least a small amount of liquid in the bottom of the cooker. Reduce heat to Low, and continue cooking for 2 to 4 hours, or until meat is totally tender and falls apart.
  • Transfer the roast to a bowl and shred it using two forks (reserve 2 cups of cooking liquid, if desired). Serve in tacos or burritos (see Cook's Note).

1 (3 pound) beef chuck roast
salt and ground black pepper to taste
2 tablespoons grapeseed oil
1 large onion, diced
4 cloves garlic, minced
1 (14 ounce) can beef broth, divided
1 (12 ounce) bottle Mexican guajillo red chile cooking sauce (such as Herdez®)
3 bay leaves

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Cut chuck roast into 3-inch cubes, removing excess fat and connective tissue. Season beef with salt and pepper.
  • Heat grapeseed oil in a large Dutch oven over high heat. Sear cubes of beef a few at a time, until well browned on all sides, about 4 minutes per batch. Reserve browned beef in a bowl. Reduce heat to medium and add onion and garlic. Cook until soft and just beginning to brown, about 10 minutes.
  • Add 1 cup beef broth to onion mixture and stir well; simmer for 1 to 2 minutes. Add beef and pour in guajillo sauce. Add a little beef broth to the empty jar, seal, and shake to release remaining sauce; pour over the beef. Pour in enough of the remaining broth to just cover the beef. Add bay leaves and bring to a gentle simmer.
  • Bake in the preheated oven, covered, until beef is fork-tender, about 2 1/2 hours.
  • Remove beef from sauce and set aside; discard bay leaves. Skim off excess fat from the top of the cooking liquid and bring to a boil to reduce slightly. Shred beef with two forks and return to cooking sauce.

1 lb baby red potatoes (about 8 potatoes)
1 boneless beef chuck roast (2 1/2 to 3 lb)
1 package (1 oz) Old El Paso™ original taco seasoning mix
2 teaspoons ground cumin
1/2 teaspoon ground red pepper (cayenne)
1/2 teaspoon salt
1/2 teaspoon pepper
1 can (14.5 oz) Muir Glen™ organic fire roasted diced tomatoes, drained

Steps:

  • Spray 5-quart slow cooker with cooking spray. Arrange onion and potatoes in slow cooker. Place beef over vegetables. Sprinkle with taco seasoning mix, cumin, red pepper, salt and pepper. Pour tomatoes over beef and vegetables.

Quick and easy preparation and great results. All you need is a green vegetable/salad and some rice or mashed potatoes, if desired.

1 1/2 cup(s) salsa, chunky style
1 can(s) 6-oz. can tomato paste
1 package(s) taco seasoning mix
1 cup(s) water
3 pound(s) beef chuck roast
1/2 cup(s) cilantro, chopped
sliced onion and carrots to layer bottom of slow cooker

Steps:

  • Spray interior of slow cooker with cooking spray.
  • In a bowl, combine the first 4 ingredients and mix well.
  • Layer onions and carrots on bottom of slow cooker and place chuck roast on top. Pour tomato mixture over the top of the roast.
  • Cook on low 6-8 hours or until roast is done to your liking.
  • Remove meat from crockpot and allow to stand for 10 minutes - then slice and serve along with onions and carrots. Stir cilantro into sauce before serving as a side sauce for the beef.
