SLOW COOKER LEEK CHICKEN
A simple yet comforting chicken dinner with a rich flavorful sauce made from leeks, garlic, and butter.

Steps:
- Heat a medium-sized pan over medium-high on the stove top
- Once hot, add the oil.
- Brown the chicken on both sides; remove from heat.
- Add the carrots to the slow cooker and half the leeks.
- Place the chicken over the vegetables in the slow cooker.
- Sprinkle over the salt, pepper and garlic.
- Add the remaining leeks and pour over the butter.
- Cover and cook on LOW for 6 hours without opening the lid during the cooking time.
- Serve the chicken and carrots along side mashed potatoes or rice and drizzle over the sauce that is in the slow cooker.

Steps:
- place potatoes in slow cooker. Arrange chicken pieces on top of potato slices. Place leeks on top of chicken pieces.
- In small bowl, whisk together leek soup mix, water, garlic, paprika and pepper until well-combined. Pour over top of everything in the crock pot.
- Cover and cook on Low 5 to 6 hours or until chicken is no longer pink.
- Add salt, if needed, to taste.

- Put the veg and chicken in a slow cooker. Pour the stock over and around the chicken thighs, then mix in the gravy granules to thicken it up (the sauce will be quite thick - use less gravy if you prefer a runnier casserole).
- Switch the slow cooker to low and leave to cook for at least 4 hrs, or up to 8 hrs - try putting it on before you go to work, so that it's ready when you get home. Season well, then serve.
