SLOW COOKER CHICKEN WITH APPLES AND HONEY

Steps:
- Chop any large potatoes in half.
- Place potatoes in the bottom of a slow cooker. Add chicken thighs on top of potatoes, and spread apples and onion over top.
- Mix chicken broth, honey, applesauce, garlic, salt, cinnamon, cumin, and pepper together in a bowl; pour over chicken mixture.
- Cook until chicken is no longer pink at the bone and the juices run clear, 4 to 6 hours on Low, or about 3 hours on High. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C).
- Set an oven rack about 6 inches from the heat source and preheat the oven's broiler. Line a baking sheet with aluminum foil.
- Remove chicken thighs from the slow cooker and place, skin-side up, on the prepared baking sheet.
- Broil in the preheated oven until skin is crisp, 3 to 5 minutes. Serve with potatoes, apples, onions, and sauce.

- Sprinkle salt and pepper all over the inside of the chicken. Put the whole apple inside the chicken cavity and place chicken into a slow cooker, breast-side down. Pour apple juice around chicken.
- Cook on Low until chicken is no longer pink at the bone and the juices run clear, 4 to 6 hours. An instant-read thermometer inserted into the thickest part of the thigh, near the bone, should read 165 degrees F (74 degrees C). Remove from the slow cooker, cover with a doubled sheet of aluminum foil, and allow to rest in a warm area for 10 minutes before slicing.

CROCK POT CHICKEN AND APPLES
Steps:
- Gather the ingredients.
- In a small shallow bowl, combine the apple cider, nutmeg, and curry powder and set aside.
- In a small microwave-safe dish, combine the butter, onion, and garlic. Microwave on high for 1 to 2 minutes or until the onion is softened. Place this mixture in the bottom of a 3- to 4-quart slow cooker.
- Dip each chicken breast into the reserved apple-cider mixture to coat and then place them in the crock pot over the onion mixture. Pour any remaining apple-cider mixture over the chicken. Add salt and pepper to taste.
- Cover the slow cooker and cook on low for 5 to 6 hours or until the chicken is almost cooked. Add the sliced apples and cook for 40 to 50 minutes longer on low or until the apples are tender and the chicken is thoroughly cooked to 165 F as measured by a reliable meat thermometer.
- Remove the chicken and apples to a serving plate and cover with aluminum foil to keep warm.
- To make the sauce, whisk together the vinegar, broth, and cornstarch in a small bowl until well mixed and lump free and stir into the liquid in the crock pot. Cover and cook on high heat, stirring occasionally, until sauce is thickened and bubbly, about 10 to 15 minutes. Pass the sauce separately at the table.

- In 10-inch skillet, melt butter over medium-high heat. Season chicken thighs with salt. Brown chicken thighs, in batches if needed, on both sides, along with the shallots. Do not worry about cooking the chicken through. Remove chicken and shallots from skillet, and add to slow cooker.
- Remove skillet from heat; add brandy. Return skillet with brandy to heat to deglaze by scraping up brown bits from bottom. Once the bits are all scraped up, add brandy to slow cooker.
- Add chicken broth, bay leaves, thyme and apples to slow cooker. Cover; cook on Low heat setting 4 hours. After 3 1/2 hours, stir in sage. After 4 hours, just before serving, stir in crème fraîche. Serve over mashed potatoes.

- In a large skillet, heat oil over medium heat. Brown chicken thighs on both sides; sprinkle with salt and pepper.
