SLOW COOKER ALBONDIGAS

Albondiga is just the spanish word for meatball, but there's no need to tell your dinner guests. Crockpot albondigas cooked with tomatoes and green chiles go great on warm flour tortillas with fresh chopped cilantro.

Number Of Ingredients 13

1/2 pound ground beef
1/2 onion, minced
2 cloves garlic, minced
1/4 cup instant rice, uncooked
1 egg
salt and pepper, to taste
4 ounces chopped green chiles, canned, drained
1 carrot, shredded
1 can (14.5 ounce size) stewed tomatoes
4 cups hot water
2 cups lowfat beef broth or water
1 teaspoon dried oregano
2 tablespoons chopped fresh parsley or cilantro

Steps:

  • In a bowl, combine beef, onion, garlic, rice, egg, salt and pepper to taste. Form into 1 1/2" meatballs. Place chilies and shredded carrots in bottom of slow cooker. Spoon tomatoes evenly on top. Place meatballs on top of tomatoes. Pour in water, broth, oregano and parsley or cilantro. Cover and cook on LOW 5 1/2 to 6 hours. Garnish with sprigs of fresh cilantro or mint, and serve with flour tortillas.

1 quart water
4 carrots, sliced
2 small potatoes, peeled and diced
1 medium onion, diced
1 ½ cups salsa, medium or hot
2 beef bouillon cubes
1 ½ pounds ground beef
⅓ cup seasoned dry bread crumbs
⅓ cup milk
1 tablespoon chopped fresh cilantro

Steps:

  • In a large stock pot, bring water, carrots, potatoes, onion, salsa, and bouillon cubes to a boil. Reduce to a medium simmer, stirring occasionally, approximately 10 minutes.
  • Mix the beef, breadcrumbs, and milk together in a bowl. Form into 1-inch meatballs, and drop into boiling broth. Once soup returns to a boil, reduce heat to medium-low.
  • Cover and cook 20 minutes, or until meatballs are no longer pink in center and vegetables are tender. Serve with sprinkled cilantro for garnish.

2 pounds ground pork
1 medium yellow onion, finely chopped (about 3/4 cup)
1 1/2 teaspoons ground cumin
1 1/2 teaspoons hot smoked paprika
5 tablespoons plain dried breadcrumbs
2 large eggs, lightly beaten
3 tablespoons chopped fresh parsley
Coarse salt and ground pepper
3 tablespoons extra-virgin olive oil
1 can (28 ounces) diced tomatoes
Rustic bread (optional), for serving

Steps:

  • In a large bowl, combine pork, 1/4 cup onion, cumin, 1/2 teaspoon paprika, breadcrumbs, eggs, and parsley. Season with salt and pepper. With a wooden spoon, gently mix to combine and, using your hands, roll into 25 meatballs (each 1 1/2 inches wide).
  • In a large nonstick skillet, heat 1 1/2 tablespoons oil over medium-high. In 2 batches, brown meatballs on all sides, 8 minutes per batch. Transfer meatballs to a 5- to 6-quart slow cooker. Add remaining onion to skillet; cook until fragrant, 2 minutes. Transfer onion to slow cooker, along with 1 teaspoon paprika and tomatoes. Season with salt and pepper. Cook on low until meatballs are tender, 5 hours. Serve with rustic bread if desired.

  • To make the meatballs, combine the first 9 ingredients—mix well so that the spices are evenly distributed. Form the mixture into 1-inch balls. Heat the oil in a pan and brown the meatballs—you don’t need to cook them all the way through, you just want to brown the outside. It’ll probably take a couple of batches. Set them aside once they’re browned.
  • To roast the poblano, place it directly over the gas flame of your stove (or in the oven under your broiler) until it starts to blacken. Rotate it so it chars evenly on all sides. Once it looks sufficiently charred, remove from the heat, place in a bowl, and cover it with a tea towel. Let it sit for 5 minutes. After 5 minutes you should be able to easily rub off the charred skin to reveal the tender roasted pepper. Then remove the seeds and ribs and dice it.
  • Add the browned meatballs, poblano pepper, onion, sweet potato, carrots, bay leaves, and chicken broth to the slow cooker and set it to low for 8 hours.
