MEATLOAF PIZZAIOLA WITH PARMESAN CORN AND ZUCCHINI



Meatloaf Pizzaiola with Parmesan corn and zucchini image

Pizzaiola may sound like pizza, may look like pizza... but as you can see, this is a meatloaf! It actually means "meat in pizza style" and that's perfectly what this is, with a tender meatloaf dotted with pepperoni, and cheese and sauce on top. A name's a name, but flavor is forever.

Number Of Ingredients 10

10 oz. Ground Beef
1 Zucchini
5 oz. Corn Kernels
2 oz. Marinara Sauce
Info 1½ oz. Mozzarella Cheese Slices
Info ¼ cup Italian Panko Blend
½ oz. Pepperoni
Info ½ oz. Grated Parmesan
2 Garlic Cloves
1 tsp. Onion Salt

Steps:

  • Before You Cook If using any fresh produce, thoroughly rinse and pat dry Turn oven on to 425 degrees. Let preheat, at least 10 minutes Prepare a baking sheet with foil and cooking spray Ingredient(s) used more than once: onion salt Cooking Guidelines To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures: Steak and Pork 145° F (rest cooked meat, 3 minutes) | Seafood 145° F | Chicken 165° F | Ground Beef 160° F | Ground Turkey 165° F | Ground Pork 160° F Customize It Instructions If using Impossible burger, follow same instructions as ground beef in Steps 2 and 3, baking in hot oven until heated through, 15-18 minutes. 1 Prepare the Ingredients Trim zucchini ends, quarter, and cut into 1/2" wedges.Coarsely chop pepperoni.Mince garlic. 2 Make the Meatloaves In a mixing bowl, combine ground beef, pepperoni, panko, and half the onion salt (reserve remaining for vegetables). Form into two evenly-sized meatloaves. 3 Bake the Meatloaves Transfer meatloaves to prepared baking sheet. Bake in hot oven until browned, 15-18 minutes.Carefully remove from oven. Top meatloaves with marinara sauce and a mozzarella slice each.Bake again in hot oven until mozzarella is melted and meatloaves reach a minimum internal temperature of 160 degrees, 2-4 minutes.While loaves bake, cook vegetables. 4 Cook the Vegetables Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.Add zucchini to hot pan and stir occasionally until slightly tender, 3-4 minutes.Add garlic, corn, and remaining onion salt. Stir occasionally until tender and heated through, 3-4 minutes.Remove from burner. 5 Finish the Dish Plate dish as pictured on front of card, topping vegetables with Parmesan. Bon appétit!

1/2 cup tomato sauce
2 large eggs, lightly beaten
1/4 cup ketchup
1 teaspoon Worcestershire sauce
1 small onion, chopped
1/3 cup crushed saltines (about 10 crackers)
3/4 teaspoon minced garlic
1/4 teaspoon seasoned salt
1/8 teaspoon seasoned pepper
1-1/2 pounds lean ground beef (90% lean)
1/2 pound reduced-fat bulk pork sausage
SAUCE:
1/2 cup ketchup
3 tablespoons brown sugar
3/4 teaspoon ground mustard
1/4 teaspoon ground nutmeg

Steps:

  • Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 4- or 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first nine ingredients. Crumble beef and sausage over mixture and mix well (mixture will be moist). Shape into a loaf. Place meat loaf in the center of the strips., In a small bowl, combine sauce ingredients. Spoon over meat loaf. Cover and cook on low 3-4 hours or until no pink remains and a thermometer reads 160°. Using foil strips as handles, remove the meat loaf to a platter.

This recipe is anything but regular old meatloaf! Everyone will love this moist version made in the slow cooker, with milk, mushrooms, and a little sage for extra flavor.

2 eggs
¾ cup milk
⅔ cup seasoned bread crumbs
2 teaspoons dried minced onion
1 teaspoon salt
½ teaspoon rubbed sage
½ cup sliced fresh mushrooms
1 ½ pounds ground beef
¼ cup ketchup
2 tablespoons brown sugar
1 teaspoon ground mustard
½ teaspoon Worcestershire sauce

Steps:

  • Combine eggs, milk, bread crumbs, onion, salt, sage, and mushrooms in a large bowl. Crumble ground beef over mixture and stir well to combine. Shape into a round loaf; place in a 5-quart slow cooker. Cover and cook on Low until a meat thermometer reads 160 degrees F (71 degrees C), 5 to 6 hours.
  • Whisk ketchup, brown sugar, mustard, and Worcestershire sauce in a small bowl; spoon sauce over meat loaf. Return to slow cooker and cook on Low until heated through, about 15 minutes. Let stand 10 minutes before cutting.

2 eggs
1 jar (14 ounces) pizza sauce, divided
1 cup shredded mozzarella cheese
1 cup Italian-seasoned bread crumbs
1/4 teaspoon garlic salt
1/8 teaspoon pepper
2 pounds ground beef
1/2 pound bulk Italian sausage

Steps:

  • In a large bowl, beat eggs. Add 3/4 cup of pizza sauce, cheese, bread crumbs, garlic salt and pepper; mix well. Combine beef and sausage; add to egg mixture and mix well. Press into a 9x5-in. loaf pan. Bake at 350° for 1-1/4 hours. Drain. Spoon remaining pizza sauce over meat loaf; bake 15 minutes longer or until no pink remains. Let stand 10 minutes before slicing.

Our favorite meatloaf recipe does great in the slow cooker. Made with familiar flavorings that have stood the test of time, this meatloaf is as classic as it gets. And it's about as easy as it gets, too-just toss together the ingredients, set your loaf in a foil-lined slow cooker and forget it! Your meal will be ready in 3 to 4 hours, and you don't need to be stuck in the kitchen in the meantime. And lucky you if there are leftovers-we love using this for meatloaf sandwiches the next day!

1 1/2 lb lean (at least 80%) ground beef
1 cup milk
1 teaspoon chopped fresh sage leaves or 1/4 teaspoon dried sage leaves
1/2 teaspoon salt
1/2 teaspoon ground mustard
1/4 teaspoon pepper
1 clove garlic, finely chopped, or 1/8 teaspoon garlic powder
1 egg
3 slices bread, torn into small pieces
1 small onion, chopped (1/4 cup)
1/2 cup ketchup

Steps:

  • Line 4 1/2- to 5-quart slow cooker with foil. Spray foil with cooking spray.
  • In large bowl, mix all ingredients except ketchup. Shape mixture into loaf, and place in center of slow cooker. Spread ketchup over top.
  • Cover; cook on Low heat setting 3 to 4 hours or until meat thermometer inserted in center of loaf reads 160°F. Remove meatloaf from slow cooker to serving platter. Cut into pieces to serve.
