SLOPPY JOES
Recipe video above. Everybody loves Sloppy Joes - and they're easy to make from scratch! I like making it with crushed tomato and less ketchup, and skipping the flavoured canned tomato sauces. Ideal freezer food, and to scale up to make for gatherings. SWEETNESS: Sloppy Joes are typically quite sweet, this is less sweet than most. But if you want it with just a bit of sweetness, skip the brown sugar and add it in gradually towards the end, adjusting to taste.

Steps:
- Melt butter in a large pot over high heat.
- Ad garlic and onion, cook for 2 minutes until onion is almost translucent.
- Add capsicum and cook for 2 minutes until softened.
- Add beef and cook, breaking it up as you go, until it changes from red to brown.
- Add remaining ingredients. Mix well, then turn heat down to medium low (or low for strong stoves).
- Cover and cook for 30 minutes, stirring once or twice to make sure it doesn't catch on the base. (If in rush, cook 15 minutes without lid)
- Remove lid and give it a good stir for a minute. Mixture should be thick, not runny and saucy (see video). Adjust salt to taste.
- Toast rolls. Butter if desired (I don't).
- Pile on lots of filling, immediately top with cheese (heat should semi melt, otherwise pop under broiler/grill). Top with lid and serve immediately!

HOMEMADE SLOPPY JOES
Despite the name of this iconic retro dish, the secret to a great sloppy joe is a thick, rich, almost dry consistency, which allows the sandwich to be eaten with your hands. Serve on hamburger buns.

Steps:
- Place ground beef and onion in a large skillet. Turn heat to medium and cook and stir the mixture constantly until the beef is browned and forms small crumbles, about 10 minutes.
- Stir in garlic and green bell pepper; cook and stir until softened, 2 to 3 minutes. Add 1 cup water and stir, scraping the pan to dissolve any brown flavor bits from the bottom of the skillet.
- Mix in ketchup, Worcestershire sauce, brown sugar, Dijon mustard, salt, and black pepper. Add 1 more cup water and return mixture to a simmer. Reduce heat to low and simmer, stirring occasionally, until the liquid has evaporated and the mixture is thick, about 40 minutes.
- Season with salt , black pepper, and cayenne pepper to taste.

MY FAMILY'S FAVORITE SLOPPY JOES (PIZZA JOES)
I've tried many recipes, this is the best. I once 'dec-tupled' (10x) this recipe to sell sandwiches at a craft fair at my church. People were waiting in line to buy leftovers. Freezes well, goes up to the lake or camping well and is a hit on Halloween...it's no-fail. Easy to double, triple, etc. I've been making Joes this way for over 20 years. ***03-08-09, I just reinvented this recipe tonight when I went to make it for dinner and found I didn't have an 8-oz. can of tomato sauce (shame on me). The family was upset with me when I subbed an 8-oz. can of pizza sauce and told them to suck it up and call them 'Pizza Joes' and then served them up with shredded mozzarella cheese on the toasted buns, top and bottom. They loved it. I left out the BBQ sauce in this preparation and just used a 1/2 cup ketchup. Pizza Joes are good to go!

- Drain the fat, who needs it?.
- Stir in remaining ingredients, simmer covered, 15-20 minutes, stirring occasionally.
- If Joes appear too'loose', leave cover off and let moisture evaporate.
- Cook until it's the consistency you like for serving on toasted buns, with french fries and cole slaw.

- In a Dutch oven, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, relish and soup mix; heat through. Serve immediately on buns, or cool mixture before placing in a freezer container. SLOPPY JOES MY WAY
This is very close to the way my Mom made Sloppy Joes for us when I was young (many years ago). I have added the onion rings for a crunchy surprise and they are oh, so good!

Steps:
- Brown ground beef.
- Add onions and continue browning.
- Add garlic (be careful not to burn the garlic).
- Add the rest of the ingredients except for the Buns and the French's French Fried Onions.
- Simmer the sauce for at least 30 minutes to enhance the flavour.
- Slice the buns and toast them if you prefer. (Sometimes I toast them in the oven with butter and garlic).
- Add the meat mixture to one side of the bun.
- Top the meat with some FFF onions.
- Add the top of the bun and serve.
