Orange Salad with Dates, Mint, and Chiles image

5 oranges, such as a mix of navel and blood oranges
6 large dry dates, such as deglet noor or amber, quartered and pitted
2 ounces feta, thinly sliced
3 tablespoons extra-virgin olive oil
Coarse salt and freshly ground pepper
5 sprigs mint
1/2 small chile, such as serrano (ribs and seeds removed, if less heat is desired), thinly sliced into rings

Steps:

  • Remove peel and pith from oranges with a sharp knife. Slice into thin rounds; remove seeds. Arrange on a platter with dates and cheese. Drizzle with oil; season with salt and pepper. Sprinkle with mint and chile; serve.

Spiced Oranges and Dates image

Fresh oranges and dates in a spiced syrup. Recipe modified from a Woolworths Fresh Magazine recipe. I love fresh dates and this makes for a great fresh fruit dessert. Great served with fresh Greek yogurt or custard. You can add some orange liquer to make this extra special (add with the water and sugar). To toast your almonds- add them to a dry pan and heat them until fragrant and toasted. keep turned or tossed as they will toast quickly. Vegan suitable if served without the custard or yogurt

1 cup sugar
3/4 cup water
4 oranges, peeled with the pith removed
orange peel- from one orange, cut into thin strips
4 whole cloves
4 slices fresh ginger
2 star anise
1 cinnamon stick, broken
8 fresh dates, pitted and halved
1/4 cup toasted sliced almonds

Steps:

  • Add the water and sugar to a saucespan. Stir over heat until the sugar has dissolved. Add the peel from one orange. cloves, ginger, star anise and cinnamon stick pieces. SImmer 10 minutes or until a syrup forms. Remove from the heat.
  • Slice the oranges into thick rounds. Remove the pits from the dates and cut the dates into halves. Add the oranges and dates to the sugar syrup. Set aside for 20 minutes.
  • Spoon the fruit onto one large platter to serve -- or into serving bowls. Sprinkle the toasted almonds over the top.
  • Serve with yogurt or custard.

I went to Morocco and being a Cooking Instructor I went crazy trying out all the food and making sure I got recipes! Moroccans have a sweet tooth and besides all the pastries and Baklava I found this tart. It is sweet but devine! It may seem a long process but basically its a pie crust, a filling and a topping. I have headed each stage on the ingredient list. It is one of my popular desserts......

- pastry
450 gram(s) cake flour
150 gram(s) castor sugar
300 gram(s) butter
1 large egg - beaten
- filling
4 large eggs
150 gram(s) castor sugar
180 milliliter(s) fresh cream
1 - juice of 1 orange
- grated zest of 1 orange and 1 lemon
- topping
5 - teabags - ceylon is best
150 gram(s) castor sugar
3 stick(s) cinnamon - about 5cm each
6 - oranges - firm - peeled and sliced in circles
150 gram(s) chopped dates
150 gram(s) flaked almonds - lightly toasted
30 milliliter(s) lemon juice

Steps:

  • PASTRY: Place dry ingredients into a bowl,rub in butter with fingertips - mixture should be like coarse breadcrumbs. Add egg and mix to form stiff dough. (Can be made in food processor). Roll into ball and refridgerate for 20 minutes. Grease and line 2 x 22cm Pie dishes - Roll out pastry and line pie dishes - bake blind for about 15-20 minutes in a preheated oven at 180 degrees celsius and set aside to cool.
  • FILLING: Whisk eggs and sugar until creamy. Add remaining ingredients and pour into cooled pie shells and bake in preheated oven - 180 degrees celsius - until puffed and golden - 25 -30 minutes. Keep an eye on oven.
  • TOPPING: Heat 500ml water and teabags in a saucepan. Simmer gently for 5 minutes - remove teabags. Add sugar and cinnamon to tea and simmer for 5 minutes more. Add orange slices and Lemon juice and simmer gently 3 more minutes - remove the orange slices gently with a slotted spoon. Allow liquid to simmer until reduced and a nice syrup is formed.
  • TO SERVE: Arrange orange slices in overlapping circles on top of baked tart - Brush gently with the syrup. Sprinkle with chopped dates and toasted Almonds. Serve slices of the tart with plain yogurt or whipped cream, Garnish with grated orange zest.

MACERATED ORANGES WITH DATES AND PISTACHIOS



Macerated Oranges with Dates and Pistachios image

Dates and pistachios are a nice complement to the slices of macerated oranges.

Number Of Ingredients 4

2 oranges
1/2 teaspoon orange blossom water
12 Medjool dates
2 cups salted pistachios, in the shell

Steps:

  • Section the oranges by slicing off peel and cutting away each section from the membrane. Place in a medium-size serving bowl. Add orange blossom water and toss to coat. Cover and refrigerate until ready to use.
  • Serve the dates and nuts on a platter alongside the bowl of chilled oranges.

1 teaspoon rose water

Steps:

  • Arrange orange segments or slices on a serving platter.
  • Arrange dates on top of oranges.
  • Sprinkle with toasted almonds.
  • Drizzle with rose water.
  • Cover and refrigerate for at least 3 hours.
  • Garnish with mint leaves before serving.
  • NOTE: Rose water is a distillation or rose petals and can be purchased in Middle Eastern grocery stores.
  • It has an intense flavor and fragrance of roses.
  • It has been used for hundreds of years in the Middle East.
