LOADED BAKED OMELET MUFFINS



Loaded Baked Omelet Muffins image

These easy, mini baked omelets are perfect to make ahead for the week.

nonstick cooking spray
9 large whole eggs
1/4 teaspoon kosher salt
black pepper
3 strips cooked chopped bacon
3 tablespoons thawed frozen spinach (drained)
3 tbsp diced tomatoes
3 tbsp diced onion
3 tbsp diced bell pepper
2 oz shredded cheddar

Steps:

  • Preheat the oven to 350F. Spray the muffin tins with cooking spray.
  • In a large bowl whisk the eggs, season with salt and pepper.
  • Mix in the remaining ingredients.
  • Fill and place tins on a cookie sheet and bake 20 to 25 minutes, until set.

1 (10 ounce) package frozen chopped spinach - thawed, drained, and squeezed dry
1 cup diced bell peppers
1 cup shredded Cheddar cheese
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 12 muffin cups with cooking spray.
  • Mix egg substitute, spinach, bell peppers, Cheddar cheese, salt, and black pepper together in a bowl; spoon into the prepared muffin cups.
  • Bake in the preheated oven until tops begin to turn golden brown, about 25 minutes.
