This Blueberry Peach Crisp is a wonderful summer dessert loaded with fruit, and delicious served warm out of the oven.

5 yellow peaches (pitted and sliced)
1 cup blueberries (about 6 oz)
1/2 lemon (zested and juiced)
2 tsp cornstarch
3 1/2 tablespoons agave nectar or honey
1 cup uncooked quick or rolled oats (*)
1/3 cup whole wheat flour (*)
1/2 cup light brown sugar (not packed)
3/4 tsp cinnamon
1/4 cup half stick butter, melted

Steps:

  • Heat oven to 375F degrees.
  • Combine peaches, blueberries, agave nectar, lemon juice and zest in large bowl. Sprinkle with cornstarch. Toss until fruit is coated.
  • Place fruit in an ungreased pie dish. Mix remaining ingredients. Sprinkle over fruit.
  • Bake about 40 minutes or until topping is golden brown and fruit is tender.
  • Serve with a scoop of ice cream or frozen yogurt, if desired.

1/2 cup sour cream
1/4 cup heavy cream
3 large eggs
2/3 cup sugar
2 tablespoons lemon juice
1 teaspoon pure vanilla extract
Pinch of salt
3 tablespoons all-purpose flour
2 peaches, pitted and chopped
1 cup mixed berries
1 9-inch store-bought graham cracker crust

Steps:

  • Preheat the oven to 350˚ F. Whisk the sour cream with the heavy cream, eggs, sugar, lemon juice, vanilla and salt in a bowl, then whisk in the flour.
  • Spread the peaches and berries in the graham cracker crust and pour in the sour cream mixture.
  • Bake until set but the center still jiggles slightly, 40 to 50 minutes. Let cool.

1/3 cup yellow cornmeal
1 1/2 teaspoons finely shredded lemon peel
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 cup Yoplait® plain fat-free yogurt
2 egg whites
1/4 cup sugar
1/4 cup honey
1/4 cup canola oil
1 cup fresh or Cascadian Farm™ frozen blueberries
1/2 cup chopped fresh peach or Cascadian Farm™ frozen unsweetened peach slices, thawed, drained, and chopped
1 tablespoon all-purpose flour

Steps:

  • Preheat oven to 350° F. Lightly coat an 8 x 8 x 2-inch baking pan with nonstick cooking spray; set aside. In a large bowl stir together the 1 cup flour, the cornmeal, lemon peel, baking powder, baking soda, and salt. Make a well in the center of the flour mixture; set aside.
  • In medium bowl combine yogurt, egg whites, sugar, honey, and oil. Add yogurt mixture all at once to flour mixture; stir just until combined. In small bowl combine blueberries, peach, and the 1 tablespoon flour; toss gently to coat.
  • Spread about half the batter in the prepared baking pan. Sprinkle with the fruit mixture. Spoon mounds of the remaining batter over the fruit mixture, then spread evenly over fruit (the batter may not completely cover the fruit).
  • Bake about 40 minutes or until coffee cake is golden brown and a toothpick inserted near the center comes out clean. Cool in pan on a wire rack for 30 minutes. Serve warm.

3 tablespoons butter, melted
1 egg
3/4 cup all-purpose flour
1 package (3 ounces) cook-and-serve vanilla pudding mix
1 teaspoon baking powder
1/2 teaspoon salt
4 to 5 medium ripe peaches, peeled and sliced
TOPPING:
2 packages (8 ounces each) cream cheese, softened
3/4 cup plus 1 tablespoon sugar, divided
1/3 cup half-and-half cream
1/2 teaspoon ground cinnamon

Steps:

  • In a large bowl, beat the milk, butter and egg. Combine the flour, pudding mix, baking powder and salt; add to milk mixture. Beat on medium speed for 2 minutes. Pour into a greased 8-in. square baking dish. Top with peaches., In a small bowl, beat the cream cheese, 3/4 cup sugar and cream. Drop by tablespoonfuls over peaches. Combine the cinnamon and remaining sugar; sprinkle over the top. , Bake at 350° for 55-60 minutes or until puffed and golden brown. Cool on wire rack for 1 hour. Refrigerate for at least 2 hours before cutting.

1/2 teaspoon salt
1 teaspoon baking powder
1 (3 1/2 ounce) package vanilla instant pudding mix
4 tablespoons butter, softened
1 egg
1/2 cup half-and-half cream
1 (29 ounce) can sliced peaches, drained (reserve the juice, can use more peaches if desired)
1 (8 ounce) package cream cheese, softened
1/3 cup sugar (can use more if desired)
1/4 tablespoon sugar
3/4 teaspoon cinnamon (or to taste)

Steps:

  • Set oven to 350 degrees.
  • Grease an an 8x8-inch baking dish, or a dish large enough to hold the mixture.
  • In a bowl, sift together flour, salt, baking powder and pudding mix.
  • Add in butter, egg and half and half cream; beat with an electric mixer for 3 minutes.
  • Pour the mixture into prepared baking dish.
  • Arrange peach slices on top of the pudding mixture.
  • In a medium mixing bowl, beat the cream cheese until fluffy.
  • Add in 1/3 cup sugar (or more for a sweeter taste), and 3 tablespoons of the reserved peach juice; beat for 3 minutes.
  • Spoon/dollop the mixture over the peaches (to within 1 inch of pan baking dish edge).
  • Mix together 1/4 cup sugar and cinnamon (to taste, can use more or less than 3/4 teaspoon).
  • Sprinkle over the top.
  • Bake for about 30 minutes, or until golden brown.
  • Chill before serving.
  • Delicious!
