Ingredients
1 lb chicken breast boneless, skinless
1 package frozen broccoli, broken apart
1 can reduced fat cream of mushroom soup
2 tablespoons fat free mayo
1/2 cup shredded cheddar cheese
1/4 cup crumbled crackers (optional)

Steps:

  • Instructions 1. You need to cook your chicken and cut it into bite sized(ish) pieces - this is how I do it. Some people boil or bake, but for this recipe I cut mine up (with scissors!) and brown in a skillet. It's just faster, and with an 18-month old screaming for dinner, speed is key. Any method will work though. Do what it is best for you. 2. Cut chicken into bite-sized pieces. Yes, I use scissors (these are chicken specific scissors to avoid contamination). I use scissors to cut virtually everything. Even pizza. I can thank my mom for that. 3. Place pieces of chicken in your skillet and cook until there is no more pink in the centers. This is clearly over one pound of chicken. Boneless/Skinless breasts always seem to come in two poundish sized packages so I cook the entire amount and freeze half so I can skip this step next time 4. In a small baking dish combine 2 tablespoons of light mayo 5. One can of reduced fat cream of mushroom soup. (There is no possible way to get a picture of this that doesn't look like a blob coming out of a can, I'll spare ya) 6. a bag of frozen broccoli 7. a 1/2 cup shredded cheese 8. one pound of cooked bite-sized chicken 9. Mix everything together and level. Be careful mixing, your dish will be pretty full. But I'd rather be careful mixing than dirty another a dish I'll have to clean! 10. Now, this next step is optional - but I did it once and it stuck. If you have any sort of crackers crumble about 1/4 cup over the top of the mixture to add some crunch. In this case, I had reduced fat cheese-its on hand. 11. bake at 350°F for 20-25 minutes Calories: 310

1 cup light mayonnaise
1 teaspoon dried minced garlic
1 teaspoon dried minced onion
salt and ground black pepper to taste
1 ½ cups shredded Parmesan cheese, divided
2 ½ cups whole wheat rigatoni
1 pound skinless, boneless chicken breasts, cubed into bite-sized pieces
½ cup Italian-seasoned panko bread crumbs

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Coat a medium-sized casserole dish with cooking spray.
  • Bring a large pot of lightly salted water to a boil. Cook rigatoni in the boiling water, stirring occasionally until tender yet firm to the bite, about 8 minutes. Drain and set aside.
  • Mix mayonnaise, garlic, onion, salt, and pepper together in a medium-sized bowl. Add 1 1/4 cup Parmesan cheese; mix well. Mix in cooked pasta and chicken, making sure everything is evenly coated.
  • Transfer mixture to the prepared casserole dish. Sprinkle with remaining 1/4 cup Parmesan cheese and panko bread crumbs. Cover with aluminum foil.
  • Bake in the preheated oven for 30 minutes. Remove from the oven, uncover, and replace in the oven. Bake until chicken is no longer pink in the center and juices run clear, about 10 minutes more. Let stand for 1 to 2 minutes before dishing out.

I love Alfredo sauce but at 40 grams of fat per serving. I don't eat it often. I came up with this dish,and according to my calculations. I reduced the fat down to 10 grams per serving. This dish does not taste low fat at all. It is delicious,and full of flavor,and very creamy! I hope you all enjoy my reduced fat version.

4 cup(s) fresh broccoli florets
3 - good size chicken breast halves poached and chopped.
3 cup(s) skim milk
8 tablespoon(s) half and half
4 tablespoon(s) butter
1/3 cup(s) flour
2 teaspoon(s) dried basil
2-3 pinch(es) ground black pepper
2-1/2 teaspoon(s) garlic salt
1/2 - medium sweet onion chopped
3 - garlic cloves chopped,or grated
3/4 cup(s) parmesan cheese divided
1/2 cup(s) reduced fat mozzarella cheese,or fat free
1/2 cup(s) italian panko bread crumbs
12 ounce(s) box of penne pasta cooked,aldente,or tri color pasta

Steps:

  • Poach chicken in a sauce pan in water,or Fat free chicken broth. Boil until cooked. Rinse and cut broccoli. Combine the Broccoli with the chopped chicken . Salt and pepper the chicken,and set aside.(You may use Precooked breast from a store bought rotisserie chicken as well.)
  • In a large sauce pan. Pour the skim milk in with the half and half. Place butter in a cup and microwave until melted. Add the flour to form a paste. Add the paste to the milk./ half and half mixture. Add 1/2 cup of Parmesan cheese, Basil,Garlic,salt,and a good amount of black pepper.
  • Stir over medium- high heat squishing the flour mixture in to the milk to dissolve. Cook until thick like sauce. Remove from heat. Cook the pasta,and drain. Mix the pasta with the chicken and broccoli.
  • In a non stick fry pan. Saute the onion in about 5-6 tablespoons of water. Cook until translucent,and slightly brown. If you need to, add more water. Add onion to the sauce when water is evaporated.
  • place the garlic in the pan and heat for about 30 seconds until fragrant. Do not over brown. Add this to the sauce and stir well.
  • Pour the sauce over the chicken and broccoli. Mix and toss really well together. Mix the bread crumb with the Parmesan cheese,salt,and pepper.
  • Pour half the pasta mixture in to a oil sprayed 9x13 inch pan. Sprinkle the Mozzarella over the layer. Top with the rest of the pasta. Sprinkle the bread crumb mixture on top. Bake at 350 degree's for about 50 minutes or until Bread crumbs are lightly browned. Serve!!

2 cups cubed cooked chicken or turkey
1 can (10-3/4 ounces) condensed cream of chicken soup, undiluted
1/2 cup mayonnaise
1/2 cup grated Parmesan cheese
1/2 teaspoon curry powder
1 cup cubed bread
2 tablespoons butter, melted

Steps:

  • In a small saucepan, cook broccoli in water until crisp-tender; drain. Place in a greased 11x7-in. baking dish; set aside. , Combine the chicken, soup, mayonnaise, cheese and curry powder; spoon over broccoli. Top with bread cubes and butter. Bake, uncovered, at 350° for 25-30 minutes or until heated through.
