Number Of Ingredients 3

2 tablespoons good olive oil
2 cups (1/2 inch diced) sourdough bread
Kosher salt and freshly ground black pepper

Steps:

  • Heat the olive oil in a large (10-inch) saute pan until hot. Add the bread and cook over medium heat, tossing frequently, until the bread is evenly toasted and browned. Sprinkle with salt and pepper.

2 garlic cloves
1 cup olive oil
3 cups 1/4-inch cubes day-old bread

Steps:

  • Halve garlic cloves. In a 12-inch skillet heat oil with garlic over moderate heat until hot but not smoking and cook bread, stirring, until golden, about 5 minutes. With a slotted spoon transfer croutons to paper towels to drain and discard garlic. Season croutons with salt. Croutons keep in an airtight container at room temperature 1 week.

4 or more thick slices of home-style white bread

Steps:

  • Preheat the oven to 350°F. Remove the crusts from the bread and slice into 1/2-inch strips and then the strips into 1/2-inch cubes, to make 4 cups. Spread the cubes in a single layer on a cookie sheet and set in the oven for about 10 minutes, turning once or twice, until lightly toasted on all sides. Spread the cubes on a tray to cool before using or freezing.
