2 teaspoons olive oil
1 cup onion, thinly sliced
2 medium sweet potatoes, peeled and cut into 1/2-inchx1/2-inch thick strips (about 1 lb)
1/2 cup vegetable stock
salt
fresh ground pepper

Steps:

  • Heat oil over medium heat in a nonstick skillet.
  • Cook onions, stirring occasionally, until softened and golden (about 5 minutes).
  • Add sweet potatoes and stock to skillet; cover tightly; simmer, stirring every 5 minutes, for about 15 minutes or until tender.
  • Season with salt & pepper to taste.

2 tablespoons butter
2 medium sweet potatoes, peeled and shredded (about 4 cups)
1 garlic clove, minced
1/2 teaspoon salt, divided
1/8 teaspoon dried thyme
2 cups fresh baby spinach
4 large eggs
1/8 teaspoon coarsely ground pepper

Steps:

  • In a large cast-iron or other heavy skillet, heat the butter over low heat. Add sweet potatoes, garlic, 1/4 teaspoon salt and thyme; cook, covered, until potatoes are almost tender, 4-5 minutes, stirring occasionally. Stir in spinach just until wilted, 2-3 minutes., With the back of a spoon, make 4 wells in potato mixture. Break an egg into each well. Sprinkle eggs with pepper and remaining salt. Cook, covered, on medium-low until egg whites are completely set and yolks begin to thicken but are not hard, 5-7 minutes.

8 small sweet potatoes (about 7 ounces each)
1/2 cup butter, melted
3 tablespoons finely chopped shallot
3 garlic cloves, minced
1-1/2 teaspoons salt
1/2 teaspoon fresh ground pepper
2 teaspoons minced fresh parsley
2 teaspoons minced fresh thyme
2 teaspoons minced fresh sage
1/2 cup soft whole wheat bread crumbs
1/4 cup grated Parmesan cheese
1/2 cup chopped toasted nuts, optional

Steps:

  • Preheat oven to 425°. Cut thin slices lengthwise from bottom of sweet potatoes to allow them to lie flat; discard slices. Place potatoes flat side down; cut crosswise into 1/8-in. slices, leaving them intact at the bottom. Arrange sweet potatoes in a 12-in. cast-iron or other ovenproof skillet., Stir together next 5 ingredients. Spoon half the butter mixture evenly over sweet potatoes. Bake 35 minutes. , Meanwhile, add herbs to remaining butter mixture. Toss bread crumbs with Parmesan. Remove skillet from oven. Spoon remaining butter mixture over potatoes; top with bread crumb mixture. Return to oven until potatoes are tender and topping is golden brown, 10-12 minutes. If desired, top with toasted nuts.

1 lb sweet potato, peeled and sliced or diced
1/2 teaspoon orange rind, finely shredded
1/2 cup orange juice
1 tablespoon molasses or 1 tablespoon brown sugar
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/8 teaspoon ground allspice

Steps:

  • In a large skillet bring 1 inch of water to boiling.
  • Add sweet potatoes; reduce heat.
  • Cover and simmer for 20 minutes or till tender.
  • Drain well.
  • Meanwhile, for sauce, in a small bowl combine orange peel, orange juice, molasses or brown sugar, salt, cinnamon, and allspice.
  • Pour over potatoes skillet.
  • Cook and stir gently till bubbly.
  • Simmer, uncovered, for 5 minutes or till potatoes are glazed, spooning sauce over potatoes occasionally.
  • Makes 4 servings.
  • NOTE: If desired, substitute one 18-ounce can sweet potatoes for fresh sweet potatoes.
  • Cut potatoes into 2-inch pieces.
  • Place in a 1-quart casserole.
  • Pour sauce over sweet potatoes.
  • Bake, uncovered, in a 350 degree oven about 30 minutes or till heated through and sauce is bubbly.

1 tablespoon olive oil
2 medium sweet potatoes, cubed (about 1/2-inch cubes)
1/2 medium onion, finely chopped
1 garlic clove, minced
2 cups cubed cooked chicken
1 can (15 ounces) black beans, rinsed and drained
1 medium zucchini, chopped
1 cup reduced-sodium chicken broth
1 cup salsa
1/2 large sweet red pepper, chopped
1 teaspoon ground cumin
1 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
Optional: Sour cream and minced fresh cilantro

Steps:

  • In a large skillet, heat oil over medium-high heat. Add sweet potatoes and onion; cook and stir until lightly browned, 5-8 minutes. Add garlic; cook 1 minute longer. Stir in chicken, black beans, zucchini, broth, salsa, red pepper and seasonings., Bring to a boil; reduce heat. Simmer, covered, until sweet potatoes are tender, 10-12 minutes.
