PAN SEARED PORK CHOPS WITH BEER
If there was ever a recipe to make the man in your life ecstatic it is my Pan Seared Pork Chops with Beer. It is great for Father's Day, his birthday or the classic I was wrong, makeup meal. It combines his favorite things in one skillet.

Steps:
- Season both sides of the pork chops with salt and pepper and House Seasoning Blend.
- Add olive oil to a large skillet and heat over medium high heat until pan is hot and oil is shimmering.
- Add pork chops to pan and sear for about 3 minutes on each side or until browned (they don't have be cooked through since they will simmer longer).
- Remove chops from the skillet.
- Add onions and garlic to pan and saute until softened and translucent.
- Add flour to skillet and stir for 1 minute.
- Stir in beer, brown sugar, ketchup, thyme and bay leaf.
- Add pork chops back into the skillet; simmer uncovered for 10 minutes or until pork chops are fully cooked, flipping once.
- Sauce will thicken as the chops simmer.

- Combine flour, salt, and pepper in a large resealable plastic bag. Add pork chops and shake well to coat thoroughly.
- Melt butter in a large skillet over medium-high heat. Add olive oil and heat until sizzling. Add pork chops in a single layer. Saute until browned on one side, 1 1/2 to 2 minutes. Turn pork chops over and cook for an additional 1 1/2 to 2 minutes. Transfer pork chops to a plate.
- Add beer, vinegar, mustard, brown sugar, and rosemary to the skillet and mix well. Bring to a boil over medium-high heat. Return pork chops to the skillet, cover, and reduce heat to medium-low. Simmer until pork chops are no longer pink in the center, 10 to 12 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).
- Transfer pork chops to a plate. Increase heat to medium and boil pan juices in the skillet until thickened, whisking often, about 3 minutes. Top pork chops with sauce.

- Sprinkle pork chops with salt and pepper. In a large skillet, heat oil over medium heat; brown chops on both sides. , Mix ketchup, brown sugar and beer; pour over chops. Bring to a boil. - Take the pork chops out of the refrigerator and season on both sides with salt - we use just less than 1/4 teaspoon of fine salt per pork chop. Set the chops aside to rest for 30 minutes.
- Meanwhile, make the spice rub. In a small bowl, mix the flour, chili powder, garlic powder, onion powder, smoked paprika, and 1/2 teaspoon of black pepper.
- After 30 minutes, use a paper towel to pat the pork chops dry, then rub both sides of the chops with the spice rub.
- Heat the oil in a skillet (with a lid) over medium-high heat. When the oil is hot and looks shimmery, add the pork. Cook until golden, 2 to 3 minutes.
- Flip the pork so that the seared side is facing up. If there is a fattier side of the pork, use kitchen tongs to hold the chops, fat-side-down until it sizzles and browns slightly; about 30 seconds.
- Reduce the heat to low, then cover the skillet with a lid. Cook 6 to 12 minutes or until an instant-read thermometer reads 145° F when inserted into the thickest part of the chop. Cook time depends on the thickness of the chops, so check for doneness at 5 minutes, then go from there, checking every 2 minutes after that. If you do not have a thermometer, you will know they are done, if, when cutting into the chops, the juices run clear.
- Transfer pork chops to a plate, then cover loosely with aluminum foil. Let the pork rest for 5 minutes.
- While the pork rests, make the pan sauce. Increase the heat to medium-high, then add the chicken stock, vinegar, and honey. Use a wooden spoon to scrape the bottom of the pan so that any stuck bits of pork come up.
- Bring the sauce to a simmer and cook until reduced by half. Taste, then adjust the seasoning with additional salt, vinegar, or honey.
- Slide the skillet off of the heat and when the sauce is no longer simmering, swirl in the butter.
- Slide the pork chops back into the pan and spoon some of the sauce on top. Alternatively, slice the chops, then place them back into the pan. Scatter fresh parsley over the pork, and then serve.

- Combine flour, salt and pepper in a plastic or paper bag and add chops; shake until coated with mixture.
- Brown chops on both sides in oil in a large skillet; remove and keep warm. Drain fat off from skillet, leaving browned bits in bottom.
- Add beer, broth, garlic and mustard and bring to a boil, stirring and scraping to loosen the browned bits. Lower heat and return chops to skillet.
- Cover, simmer, turning once, until the chops are tender, about 45 minutes. Serve chops with the pan liquid spooned over them.

- Combine pork chops, Worcestershire, 3 tablespoons olive oil, garlic, and black pepper in a large, resealable plastic bag. Marinate chops in the mixture for about 30 minutes.
