Meet the Cook: I created this recipe during a hot spell one summer. With the temperature in the 90's every day, I didn't want to turn on the oven. So I decided to make our favorite family pizza in a skillet instead! Anyone who likes pizza, has kids or just wants a quick and simple meal would likely enjoy Skillet Pizza. It's great to take along to get-togethers, too - you can prepare it at home, then just plug in the skillet when you arrive. -Darlene Brenden, Salem, Oregon

1 package (6-1/2 ounces) pizza crust mix
1 can (8 ounces) tomato sauce
1 teaspoon oregano
1/2 cup pepperoni slices
1/4 cup chopped onion
1/4 cup chopped green pepper
1/4 cup sliced ripe olives
2 cups shredded mozzarella cheese

Steps:

  • Grease a 12-in. electric or stove-top skillet. Prepare pizza crust according to package directions. , Line bottom and 1/2 in. up the sides of the skillet with dough. Combine tomato sauce, Italian seasoning and oregano; spread over dough. Layer pepperoni, onion, green pepper and olives over sauce; sprinkle with cheese. , Cover and cook over medium heat (set electric skillet to 375°) for 15 minutes or until crust is brown on bottom and cheese is melted. Slide out onto a cutting board and cut into wedges or squares. Serve immediately.

1/2 cup ricotta
1/4 cup shredded mozzarella
1/2 teaspoon minced garlic (from 1 small clove)
1 1/2 teaspoons extra-virgin olive oil, plus more for pan and drizzling
Kosher salt and freshly ground pepper
Unbleached all-purpose flour, for dusting
1 pound store-bought pizza dough or Quick Basic Pizza Dough
1 can (13.5 ounces) artichoke-heart quarters, drained
1 cup packed baby-spinach leaves

Steps:

  • Preheat oven to 500 degrees, with a 10-inch heatproof skillet (preferably cast iron) on rack in lower third. Once oven reaches temperature, let skillet continue to heat 15 minutes. Meanwhile, stir together cheeses, garlic, oil, 1/2 teaspoon salt, and a pinch of pepper.
  • On a lightly floured baking sheet, stretch dough to a 12-inch round. Remove skillet from oven and brush with an oiled paper towel. Carefully press dough into skillet, pushing up at edges to form a crust. Bake until bubbles form, 2 minutes. Remove from oven; top with cheese mixture, artichokes, and spinach, then drizzle with oil and season with salt and pepper. Bake pizza until bubbling and crisp on bottom, about 12 minutes more. Let cool slightly, then slice and serve.

Everyone will love the chewy, golden crust in this pan-pizza made in a cast-iron skillet. Diavola, which is Italian for deviled, is a nod to the fresh jalapenos on top -- the spicy chiles cut through the richness of the sausage, mozzarella, and feta.

Number Of Ingredients 10

Extra-virgin olive oil, for drizzling
1 recipe Deep-Dish Pizza Dough for Skillet
Kosher salt and freshly ground pepper
2/3 cup No-Cook Pizza Sauce
4 ounces low-moisture mozzarella, such as Polly-O, shredded (1 cup)
3 ounces feta, thoroughly drained and crumbled (3/4 cup)
4 ounces sweet Italian sausage, removed from casings and crumbled
1 1/2 ounces pitted Kalamata olives, halved (a scant 1/4 cup)
1 fresh chile pepper, such as jalapeno or Fresno, thinly sliced (ribs and seeds removed for less heat, if desired)
2 teaspoons lightly packed chopped fresh oregano

Steps:

  • Preheat oven to 475 degrees with rack in lower third. Drizzle a 12-inch (measured from top) skillet (preferably cast iron) with oil. Wipe with a paper towel to evenly coat and remove excess. Turn dough out into skillet (do not punch down). Starting in center and using both hands, press down and stretch dough outward with your fingertips to edges of skillet, leaving a 1/2-inch border of undisturbed dough. Cover skillet with plastic wrap and let stand until dough puffs slightly, about 20 minutes.
  • Lightly drizzle dough with oil; season with salt and pepper. Spread sauce evenly to border and sprinkle with mozzarella. Top evenly with feta, sausage, olives, chile, and oregano.
  • Bake until crust is golden brown, mozzarella is melted and bubbly, and sausage is just cooked through, 20 to 22 minutes. Let cool in skillet 5 minutes. Cut into wedges and serve.
