This is a quick recipe using 'canned' spaghetti. We always ate in on Friday nights before we would go to the football games. It is also excellent when served the next day, as the flavors have a chance to mix.

1 pound lean ground beef
½ cup chopped celery
½ cup chopped onion
1 (14.5 ounce) can stewed tomatoes
2 (15 ounce) cans spaghetti with sauce

Steps:

  • In a large skillet, brown the beef with the celery and onion until the onion is tender. Add the tomatoes and spaghetti and heat, stirring all together. Serve with garlic bread and a dinner salad if desired. SO easy!

2 Tablespoons vegetable oil
1 pound 90% lean ground beef
1 onion, minced
2 red bell peppers, chopped medium
2 celery ribs, chopped medium
2 garlic cloves, minced
1 (14.5 oz) can diced tomatoes
1 (15 oz) can tomato sauce
1 1/2 cups low sodium chicken broth
8 ounces elbo macaroni(about 2 cups)

Steps:

  • 1. cook beef: Heat 1 tablespoon olive oil in 12 inch skillet over medium-high heat till shimmering. Add beef and cook, breaking it inot pieces with wooden spoon, until no longer pink, about 3 minutes. Transfer to bowl and set aside. 2. Add remaining tablespoon of oil to skillet and return heat to medium-high, heat until shimmering. Add onion, bell peppers, celery, and 1/2 teaspoon salt, and cook until vegetables begin to soften, about 4 minutes. Stir in garlic and cook until fragrant about 30 seconds. 3. Stir in tomatoes, tomato sauce, chicken broth, macaroni, and browned beef. Cover and cook, stirring often and adjusting heat as needed to maintain a vigorous simmer, and macaroni is tender, about 10-15 minutes. Season with salt and pepper to taste and serve.

3 tablespoons butter
1 medium yellow onion, chopped
1 green bell pepper, stemmed, seeded, and chopped
2 garlic cloves, minced
1 pound ground beef
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon ground black pepper
Kosher salt
1 (14.5-ounce) can diced tomatoes
1 (14.5-ounce) can tomato sauce
1/4 cup tomato paste
2/3 cup tomato juice
Pinch of sugar
1 pound elbow macaroni

Steps:

  • 1. Heat the butter in a large pot over medium heat. Add the onion and bell pepper and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook, stirring, for about 1 minute. Then add the ground beef and continue to cook, stirring and breaking up the chunks of meat with a spoon. Cook until the meat is no longer pink, about 7 minutes. Sprinkle the herbs and pepper over the meat, add salt to taste, and mix in well.
  • 2. Add the canned tomatoes with their juices, the tomato sauce, paste, and juice. Add sugar to taste. Simmer while you cook the pasta.
  • 3. Bring a large pot of salted water to a boil over high heat. Add the macaroni and cook, stirring occasionally, until al dente. Drain. Mix the macaroni into the chop suey. Serve hot.

2 beef bouillon cubes
2 cups water, divided
2 tablespoons cornstarch
1 can (28 ounces) chop suey vegetables, drained
2 tablespoons reduced-sodium soy sauce
Cooked rice
Chow mein noodles

Steps:

  • In a skillet, brown beef; drain. Dissolve bouillon in 1-1/2 cups boiling water; add to skillet. , Combine remaining water with cornstarch; stir into beef mixture. Bring to a boil; reduce heat and simmer until thickened. Add vegetables and soy sauce; stir and cook until heated through, about 15 minutes. , Serve over rice; sprinkle with chow mein noodles.
