SKEWERED CROCODILE WITH LIME & GINGER SAUCE
I found this recipe in response to a request for alligator recipes. Not tried but sounds wonderful. Crocodile has a chicken like taste in some respects but is much meatier like swordfish.

Steps:
- Thread Crocodile meat onto bamboo skewers, place in flat dish, season with salt and pepper, pour lime juice over it and place in fridge for about an hour.
- Remove skewers and save the residue for the sauce.
- Heat oil in a frying pan and saute crocodile for about 5 min, set aside and keep warm.
- Combine lime juice, honey, brown sugar, ginger, chicken stock and corn flour in a saucepan.
- Bring to the boil and reduce heat and simmer for 2 min.
- Place skewers on plates, spoon sauce over meat and garnish with fresh herbs.

BARBEQUE CROCODILE SKEWERS
Not sure how to cook crocodile? This barbeque marinade with mango, lime and ginger should give you the confidence to try it yourself.

- Mix the sliced chilli, garlic, ginger, grated lime rind, lime juice and olive oil together in a bowl then cover the chunks of crocodile meat and mango until it is soaked in the marinade
- Allow to marinate for anywhere between an hour and 24 hours in the fridge.
- Thread the meat and mango onto a skewer, about three chunks of each per skewer should make six or seven skewers. If you are using bamboo skewers rather than metal ones make sure to soak them in water first so they don't burn.
- Cook the skewers on the barbeque or, if the weather's not up to it, under the grill for around 4-5 minutes, turning half way through. The skewers are done when the mango is a little blackened on the edges.

- Prepare barbecue (medium-high heat). Mix first 4 ingredients in large bowl. Add shrimp, bell peppers and mangoes; toss to coat. Alternate bell pepper, mango and 3 colossal shrimp on each of 6 skewers, or alternate bell pepper, mango and 3 jumbo shrimp on each of 12 skewers. (Can be prepared 4 hours ahead. Cover and chill.)
- Grill shrimp until cooked through, brushing with glaze during last 2 minutes, cooking colossal shrimp about 4 minutes per side and jumbo shrimp about 3 minutes per side.

- Now cut your meat in to generous cube chunks and drop them in to the mixture making sure they receive a good coating. Leave in the fridge to marinate for at least 2 hours, preferably longer if you have time.
- 10 minutes before you're ready to take the meat out of the fridge, soak your bamboo skewer sticks in water to prevent them from burning.
- For the most authentic flavour prepare a barbecue, but if you don't have a barbecue then a grill will work fine.
