In my Mexican steak fajitas recipe, tender strips of sirloin pick up plenty of spicy flavor from a marinade seasoned with cayenne pepper and cumin. This colorful dish is speedy and satisfying. -Shirley Hilger, Lincoln, Nebraska

1/4 cup orange juice
1/4 cup white vinegar
4 garlic cloves, minced
1 teaspoon seasoned salt
1 teaspoon dried oregano
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
1 pound beef top sirloin steak, cut into 1/4-inch strips
1 medium onion, thinly sliced
1 medium green pepper, thinly sliced
1 medium sweet red pepper, thinly sliced
2 tablespoons canola oil, divided
6 flour tortillas (10 inches)
Optional: Shredded cheddar cheese, picante sauce and sour cream

Steps:

  • In a large bowl, combine the orange juice, vinegar, garlic and seasonings; add the beef. Turn to coat; set aside. In a skillet, saute onion and peppers in 1 tablespoon oil until crisp-tender; remove and set aside., Drain and discard marinade. In the same skillet, cook beef in remaining 1 tablespoon oil until it reaches desired doneness, 2-4 minutes. Return vegetables to pan; heat through. Spoon meat and vegetables onto tortillas. If desired, top with cheese and serve with picante sauce and sour cream.

Just something easy I throw together, found recipe on back of fajita seasoning packet. I used two kinds of peppers and omitted the tomato.

1 lb sirloin, cut into thin strips
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 red onion, sliced
1 cup baby portabella mushrooms
1 package flavorite fajita seasoning mix
2 tablespoons olive oil, halfed
1/4 cup water
8 soft taco-size flour tortillas (8-10 inch)

Steps:

  • In large skillet, heat 1 tbsp of olive oil; saute the onion, peppers and mushrooms, until tender. Remove from skillet and set aside.
  • To the same skillet add the remaining oil , sear the sirloin, add the seasoning and 1/4 cup of water, stir well. Bring to a boil; reduce heat and simmer, uncovered, 3-5 minutes, stirring occasionally.
  • Return vegetables to skillet to heat!
  • Warm the tortillas and place 1/2 cup filling on each tortilla.
  • Serve with your choice of sour cream, salsa or guacamole.

1 lb beef steak, sirloin tips
1 cup pineapple juice
8 flour, fajitas
4 cups spinach or 4 cups kale
1 (12 ounce) can diced tomatos with lime and cilantro
12 ounces shredded cheese
2 bell peppers, thin sliced
3 tablespoons olive oil
1 teaspoon cumin
1 teaspoon chili powder
1 teaspoon curry
1 (12 ounce) can refried beans
4 cups prepared jasmine rice
1 avocado, slices
4 lemons
1 (12 ounce) can black olives

Steps:

  • Thinly slice pappers.
  • 1. Marinade meat overnight in pineapple juice.
  • 2. Thinly slice peppers into long strips.
  • 3. Chop Spinach.
  • 5. Heat oil and stir fry meat strips for one minute until medium rare.
  • 6. Remove meat from pan.
  • 7. Add peppers to pan with more oil if needed and toss until tender.
  • 8. Add spices and one cup of water OR, preferably, add one one ounce package of prepared fajita sauce mix and once cup of water to a soft boil. Add meat to the pepper sauce and heat through.
  • 9. Serve over soft tortilla shells with chopped spinach and cheese and drained tomatoes.
  • 10 Roll each fajita and microwave if necessary.
  • 11. Serve with additional toppings if desired such as avocado slices or black olives.
  • 12. Squeeze Lemon juice over entire plate for the best experience.

2 teaspoons canola oil
1 medium green pepper, cut into thin strips
1 medium onion, quartered and thinly sliced
3 garlic cloves, minced
1/2 teaspoon chili powder
1/4 teaspoon dried oregano
1/4 teaspoon pepper
1 cup salsa or picante sauce
5 flour tortillas (8 inches), warmed

Steps:

  • In a nonstick skillet, brown beef over medium heat in oil; drain. Add the green pepper, onion, garlic, chili powder, oregano and pepper. Cook and stir for 5 minutes or until vegetables are crisp-tender. Add salsa; cook 3 minutes longer or until heated through. , Spoon 3/4 cup beef mixture down the center of each tortilla. Fold one side over filling and roll up.

These fajitas are my husband's favorite quick-and-easy dinner. They are so tasty! If you do not have the time to marinate the meat for 2 or more hours, just leave it out at room temperature, keeping the bag zipped tightly for about 20 to 30 minutes. Serve with sour cream, Cheddar cheese or Monterey Jack cheese, and lime wedges.

4 cloves garlic
1 tablespoon kosher salt
3 tablespoons lime juice
3 tablespoons olive oil
3 tablespoons minced fresh cilantro, or more to taste
1 teaspoon chili powder
½ teaspoon white sugar
½ teaspoon paprika
¼ teaspoon cayenne pepper
1 ½ pounds beef skirt steak, cut across the grain into 1/4-inch strips
6 whole wheat tortillas, or as needed
1 tablespoon canola oil, divided
1 large onion, cut into slices
1 red bell pepper, cut into strips
1 clove garlic, minced
¼ teaspoon salt

Steps:

  • Grind garlic with kosher salt with a mortar and pestle until a paste forms. Whisk garlic paste, lime juice, olive oil, cilantro, chili powder, sugar, paprika, and cayenne pepper together in a bowl; pour marinade into a resealable plastic bag. Add skirt steak strips, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator, 2 hours to overnight.
  • Remove steak from marinade and shake off excess; discard remaining marinade.
  • Preheat oven to 300 degrees F (150 degrees C). Wrap tortillas tightly in aluminum foil to form a packet and place packet on a baking sheet.
  • Bake in the preheated oven until warmed through, about 10 minutes. Keep warm.
  • Heat 1 teaspoon canola oil in a large skillet over high heat until oil begins to smoke. Saute onion and bell pepper in hot oil until browned and almost tender, 4 to 5 minutes. Transfer onion and pepper to a plate.
  • Heat 1 teaspoon canola oil in the same skillet over high heat until oil starts to smoke. Cook 1/2 of the steak in hot oil until browned on all sides but still pink in the center, 4 to 6 minutes. Transfer cooked steak to the plate with onion and pepper.
  • Heat remaining canola oil in the same skillet. Cook remaining steak in hot oil until browned on all sides but still pink in the center, 4 to 6 minutes. Stir cooked steak, onion, bell pepper, and any accumulated juices back into the skillet. Add minced garlic and salt; cook and stir until fragrant and heated through. Remove from heat. Divide steak mixture between warm tortillas.

  • Set a large cast iron skillet or pan over high heat and let heat up for a couple of minutes. Add the steak to the pan and fry on each side for about 3-5 minutes or longer if you'd like it more done. Feel for desired firmness. The 3 minutes/side will yield a medium rare doneness. If the pan becomes too hot, reduce the heat to medium high. Remove the steak from the pan and allow to rest for several minutes tented with a piece of foil. Slice the meat against the grain into thin slices. I like to do so on an angle so the meat slices are tender and thin.
  • FAJITA VEGGIES: Add the remaining tablespoon of oil to the pan over high heat, add in the onions, poblano, and bell peppers. Let the veggies begin to sizzle and toss as necessary, cook for a total of 2-3 minutes or longer if you prefer them softer, season with a pinch of salt and pepper.
