Here's what you need: Private Selection® Sumatran Mandheling Medium-Dark Roast Ground Coffee, boiling water, bone-in English-cut beef short ribs, kosher salt, Private Selection™ Tellicherry Black Peppercorn, canola oil, Private Selection® Vidalia Sweet Onion, garlic, large carrots, all purpose flour, beef broth, bay leaves, fresh rosemary, Private Selection™ Petite Medley Potatoes, Private Selection™ Italian Extra Virgin Olive Oil, Private Selection™ Handpicked Broccoli Florets

¼ cup Private Selection® Sumatran Mandheling Medium-Dark Roast Ground Coffee
2 cups boiling water
3 lb bone-in English-cut beef short ribs, cut crosswise into 2-inch pieces
1 ¾ teaspoons kosher salt, divided
Private Selection™ Tellicherry Black Peppercorn, to taste
2 tablespoons canola oil
1 Private Selection® Vidalia Sweet Onion, cut into 1 in (2.5 cm) pieces
4 cloves garlic, crushed
2 large carrots, cut into 1 in (2.54 cm) pieces
1 tablespoon all purpose flour
16 oz beef broth
2 bay leaves
2 sprigs fresh rosemary
1 ½ lb Private Selection™ Petite Medley Potatoes, halved
2 ½ tablespoons Private Selection™ Italian Extra Virgin Olive Oil, divided
16 oz Private Selection™ Handpicked Broccoli Florets, defrosted

Steps:

  • Arrange an oven rack in the lower third position and the other in the upper third position. Preheat the oven to 350°F (180°C).
  • Add the Private Selection® Sumatran Mandheling Medium-Dark Roast Ground Coffee to the bottom of a French press. Pour the boiling water over the grounds. Give the coffee a quick stir, cover with the lid (leaving the plunger up) and let sit for 4 minutes. Press the plunger down all the way to the bottom. Immediately pour the coffee into a heatproof liquid measuring cup and set aside.
  • Season the short ribs all over with 1 teaspoon salt and pepper to taste.
  • Heat the canola oil in a large Dutch oven over medium-high heat. When the oil is shimmering, add short ribs, (in batches if needed) and cook until browned on all sides, about 8 minutes total. Transfer the short ribs to a plate and discard all but a thin layer of oil.
  • Return the Dutch oven to medium-high heat and add the Private Selection® Vidalia Sweet Onion, garlic, and carrots. Cook until the onion is translucent and the carrots have started to soften, about 5 minutes. Add the flour and cook, stirring frequently, until golden in color, 1 minute more.
  • Add the beef broth and use a wooden spatula to scrape up the browned bits from the bottom of the pot. Add the bay leaves, rosemary, short ribs and any accumulated juices, and 1½ cups of the brewed coffee. Bring to a boil.
  • Cover the Dutch oven and transfer to the oven. Cook for about 1½ hours, or until the short ribs are tender and the sauce has thickened.
  • Meanwhile, line 2 baking sheets with parchment paper.
  • Add potatoes to a prepared baking sheet and toss with 1½ tablespoons Private Selection™ Italian Extra Virgin Olive Oil and ½ teaspoon salt until well coated. Spread in a single layer, cut side down. On the other prepared baking sheet, toss the broccoli with the remaining tablespoon olive oil and remaining ¼ teaspoon salt.
  • After short ribs have been in the oven for 1 hour, add the potatoes and broccoli to the oven and cook until tender, 25-30 minutes.
  • Remove the Dutch oven from the oven and transfer the short ribs to a platter. Discard the rosemary stems and bay leaves. Let the sauce settle, then skim the fat from the surface and discard. Season the sauce with more salt to taste.
  • Divide the potatoes and broccoli between shallow bowls, then top with the short ribs and spoon sauce over top.
  • Enjoy!

6 pieces prime pork ribs (about 1/2 pound per pork rib)
2 egg whites
2 1/2 oz. packets instant coffee mix
3 tablespoons Asian oyster sauce.
3 tablespoons cornstarch
2 tablespoons sugar
2 red chilis, chopped (preferably, bird's eye chillies)
2 sprigs spring onions
1/2 cup water
2 tablespoons cinnamon powder for dusting
Vegetable oil, as needed for deep frying
Pinch salt

Steps:

  • In a medium-sized bowl, marinate the ribs at room temperature for at least 30 minutes in egg whites along with a pinch of salt. Using your hands, rub in the corn starch, making sure that it partially coats all of the ribs. Allow them to sit for 10 minutes.
  • In a high-sided pot, heat the peanut oil to 350 degrees F and deep fry the ribs for about 5 minutes, or until roasting needle comes out clear, and set aside. Meanwhile, in a separate pan, add 1/2 cup of water, the instant coffee mix, oyster sauce and one chile and simmer over medium heat until sauce thickens.
  • While simmering, add the sugar and allow the sauce to caramelize. Add the ribs to the pan and gently toss until they are fully coated and little sauce remains.
  • Serve with a dust of cinnamon powder and top with chopped spring onions and the remaining chile.

This is one of my mother's excellent Asian recipes. These spare ribs are marinated in light and dark soy sauce, orange juice, garlic, and peppercorn, then fried briefly. After simmering the ribs, marinade, and spices such as star anise and cinnamon for an hour, they are ready to serve with white rice. Very flavorful and tender!

2 tablespoons light soy sauce
4 tablespoons dark soy sauce
1 tablespoon crushed black peppercorns
6 cloves garlic, peeled and crushed
10 fluid ounces orange juice, divided
1 ½ pounds pork spareribs
1 cup orange juice
1 cup water
5 sticks cinnamon
7 star anise
white sugar to taste
peanut or corn oil for frying
3 hard-cooked eggs, peeled

Steps:

  • In a bowl, stir together light and dark soy sauces, crushed peppercorns, garlic, and 2 tablespoons orange juice. Separate ribs between each bone into individual ribs, and place in the marinade. Cover, and set aside for at least 30 minutes. (If marinating much longer than 30 minutes, refrigerate.)
  • Transfer marinade to a large stockpot, and set ribs aside. To the stockpot add remaining 1 cup orange juice, water, cinnamon sticks, star anise, and sugar. Bring to a boil.
  • Meanwhile, heat oil in a large skillet over high heat. Carefully place ribs in oil, and fry for 2 minutes per side, or until edges are sealed. Transfer to the stockpot, and boil, uncovered, for 15 minutes. Cover, and simmer for 1 hour, adding hard boiled eggs at this point, if using.

4 pounds bone-in beef short ribs
1-1/2 teaspoons salt, divided
1 teaspoon ground coriander
1/2 teaspoon pepper
2 tablespoons olive oil
1-1/2 pounds small red potatoes, cut in half
1 medium onion, chopped
1 cup reduced-sodium beef broth
1 whole garlic bulb, cloves separated, peeled and slightly crushed
4 cups strong brewed coffee
2 teaspoons red wine vinegar
3 tablespoons butter

Steps:

  • Sprinkle ribs with 1 teaspoon salt, coriander and pepper. In a large skillet, brown ribs in oil in batches. Using tongs, transfer ribs to a 6-qt. slow cooker. Add potatoes and onion., Add broth to the skillet, stirring to loosen browned bits. Bring to a boil; cook until liquid is reduced by half. Stir in garlic and remaining salt; add to slow cooker. Pour coffee over top. Cover and cook on low for 6-8 hours or until meat is tender., Remove ribs and potatoes to a serving platter; keep warm. Strain cooking juices into a small saucepan; skim fat. Bring to a boil; cook until liquid is reduced by half. Stir in vinegar. Remove from the heat; whisk in butter. Serve with ribs and potatoes.
