Official Contest Entry: Simply Potatoes 5Fix. I love this recipe because it is a quick, tasty way to incorporate a serving of vegetables into breakfast or brunch, as well as adding important early day protein, contained within the Greek yogurt. The crunchy hash brown crust makes it all come together. The dish is best served when cooled for 5-10 minutes from oven.

Steps:
- Press thawed hash browns between paper towels to remove moisture. Press hash browns into a greased 10-inch pie plate, and brush with melted butter. Bake at 425 degrees for 25 minutes.
- Meanwhile, prepare Mediterranean vegetables according to package directions. Stir diced vegetables, and yogurt together with cheese and half and half. Pour into prepared potato crust, and bake 30 to 40 minutes in a 350-degree oven or until knife inserted comes out clean. Salt and pepper to taste.

SAUSAGE GRAVY AND POTATO BREAKFAST BAKE #SP5
Official Contest Entry: Simply Potatoes 5Fix. This recipe is a perfect combination of one of my favorite dishes, Sausage Gravy, and one of my husband's favorite side dishes, hash browns. The addition of the runny egg oozing down into the gravy and hash browns makes for one perfect breakfast dish.

Steps:
- Preheat oven to 400°.
- Remove potatoes from bag and place in a colander. Rinse and drain well. Using a clean dish towel, place potatoes in towel and wring dry.
- Divide potatoes among 4 ramekins. The ramekins I used were 5 1/2" rounds that were 2" deep. I got around 3/4 cup of potatoes into each ramekin.
- Heat a large skillet over medium heat then add sausage. Cook until done, about 5 minutes.
- Add flour and cook, stirring often, for 2 minutes.
- Add milk slowly, stirring until incorporated. Bring to a boil and cook for 5 minutes, stirring often, until thickened.
- Pour 3/4 cup gravy into each ramekin over the potatoes.
- Crack one egg into each ramekin, on top of the gravy and place into oven and bake for about 20 minutes, or until egg white is set and yolk is still runny.
- Note: Each oven bakes differently. Watch your eggs closely and adjust cooking time if needed.

Steps:
- Preheat oven to 375 degrees F.
- In a small bowl, combine hash browns and vegetable oil.
- Using a mini-cupcake pan (spray first), fill 12 mini-cups with hash brown mixture, about halfway up. Cook for 20 minutes in oven.
- Remove from oven and add bacon and half of the cheese, enough to cover the hash browns.
- Pour eggs into each one until it is even with the top.
- Add other half of the cheese, then cook for 15 minutes, or until slightly brown on top.
- Allow to cool for 5 minutes, then remove from pan and enjoy!

- Grease a 9 inch pie pan.
- In a large bowl, combine all ingredients except paprika and bacon.
- Mix well.

Made with Simply Potatoes Steakhouse Potatoes, eggs, light cream, cheddar cheese, and a spice blend. The potatoes are still the star of the recipe. I created this recipe based on ease of preparation and convenience; my family tends to like Southwestern cuisine and food which is on the spicier side. Reduced fat ingredient substitutes may be used for the dairy ingredients.

- Preheat oven to 350 °F.
- Lightly spray 2 1/2 quart casserole dish with cooking spray, coating bottom and sides. Set aside.
- Cook Steakhouse Seasoned Diced Potatoes according to package directions, adding the California Style seasoning, mixing thoroughly.
- While potatoes cook, beat eggs in a separate bowl; add light cream and whisk until smoothly blended. Set aside.
- Transfer potatoes to prepared casserole dish.
- Pour egg mixture evenly over Steakhouse Potatoes.

- Butter a 9" X 12" baking dish well and press Simply Potatoes Hash Browns along the bottom and up sides of the dish.
- Crack eggs into blender and add canned soup. Blend well.
- Add remaining ingredients and pour over hash browns in prepared baking dish.
- Bake at 350 degrees for 1 hour or until egg mixture has set.
- Cut into squares and serve warm.
