This very flavorful sausage ring is easy to prepare. It has a nice texture and holds its shape well...a nice hearty meat dish that completes a brunch menu.

Ingredients

3 eggs
3/4 cup milk
2 cups crushed butter-flavored crackers (about 50 crackers)
1-1/2 cups chopped peeled tart apples
1/3 cups finely chopped onion
2 pounds bulk pork sausage

Steps:

In a large bowl, beat eggs and milk. Stir in the cracker crumbs, apples and onion. Crumble sausage over mixture and mix well. , On a 15x10x1-in. baking pan coated with cooking spray, shape pork mixture into a 9-in. ring. Bake, uncovered, at 350° for 1 hour or until a thermometer reads 160°; drain.

Ingredients

1 (14 ounce) package Hillshire Farm® Smoked Sausage, diagonally cut into 1/4-inch slices
¼ cup olive oil
2 cloves garlic, crushed
1 large red bell pepper, sliced thin
1 small yellow onion, sliced thin
1 (10 ounce) package frozen broccoli, thawed
½ cup chicken broth or water
½ cup tomato sauce
2 cups instant rice
½ cup shredded mozzarella cheese

Steps:

Heat olive oil and crushed garlic, stir in smoked sausage slices and cook until smoked sausage is browned.
Add pepper, onion, broccoli, chicken broth and tomato sauce and simmer for about 10 minutes until vegetables are tender and the liquid is absorbed.
In the meantime, cook rice according to package instructions. Stir rice into the skillet, sprinkle with cheese and serve.

Ingredients

2 lbs sausage
1 1/2 cups crackers, crushed
8 eggs, divided
1/2 cup milk
1/4 cup onion
1 cup apple

Steps:

Preheat oven to 325F and grease a ring mold.
In a bowl, combine sausage, crushed crackers, 2 eggs, milk, finely chopped onion and finely chopped apple; mix well.
Place into a greased ring mold and unmold onto a baking sheet.
Bake for 1 hour.
Move to a warm serving plate.
Scramble remaining 6 eggs in a skillet and spoon into the center of cooked sausage ring.
Serve immediately.

I came across this hearty breakfast when we were on vacation in Tennessee, and I adapted the recipe to our tastes. Now it's one of our most favorite breakfasts-especially when we have overnight guests. My husband and I are busy with our own construction company. So I appreciate recipes like this that can be made up in advance and frozen. It's quick and easy to thaw this breakfast ring overnight and then cook it in the microwave while preparing the eggs to be placed in the center.

2 pounds lean bulk pork sausage
2 large eggs, lightly beaten
1-1/2 cups crushed butter-flavored crackers

Steps:

Line a 2-1/2-qt. ring mold with plastic wrap or waxed paper. Combine all ingredients; mix well and press firmly into mold. Chill several hours or overnight. , Unmold, removing plastic/paper, onto a baking sheet with raised edges. Bake at 350° for 1 hour. , Transfer onto a serving platter; fill center of ring with scrambled eggs.
