Wish you had enough pennies to eat out tonight? No way, bae. Because this on-the-cheap version of bulgogi doesn't need pricey steak. Just ground beef, a few traditional fresh ingredients and rice. (So much rice.) Actually, you won't feel like you are eating out. You'll feel like you've tripped yourself to the motherland to get some grandma-made bulgogi fresh out the pan.

1/2 Asian pear
1/2 white or sweet onion
3 cloves garlic
1 1/2-inch piece fresh ginger, peeled
1 1/2 pounds ground beef
2 tablespoons soy sauce
2 tablespoons sesame oil
3 tablespoons honey
1/2 teaspoon sesame seeds
1 bunch green onions, finely sliced
2 cups cooked white sticky rice

Steps:

  • In a blender, puree pear, onion, garlic and ginger. Pour into a large skillet. Add ground beef and cook over medium-high heat, breaking meat up with a spatula, until beef is browned.
  • Drizzle soy sauce, sesame oil and honey over the pan, cooking meat just until coated. Serve over rice and top with green onions.

1 pound lean ground beef
5 cloves garlic, crushed
1 tablespoon freshly grated ginger
2 teaspoons toasted sesame oil
½ cup reduced-sodium soy sauce
⅓ cup light brown sugar
¼ teaspoon crushed red pepper
6 green onions, chopped, divided
4 cups hot cooked brown rice
1 tablespoon toasted sesame seeds

Steps:

  • Heat a large skillet over medium-high heat. Add beef and cook, stirring and crumbling into small pieces until browned, 5 to 7 minutes. Drain excess grease.
  • Add garlic, ginger, and sesame oil, stirring until fragrant, about 2 minutes. Stir in soy sauce, brown sugar, and red pepper. Cook until some of the sauce absorbs into the beef, about 7 minutes. Add 1/2 of the chopped green onions.
  • Serve beef over hot cooked rice; garnished with sesame seeds and remaining green onions.

Most Bulgogi recipes call for crushed pear. This is for tenderizing the meat. My boyfriend's Korean mother says Coca-Cola® can also be used for the same purpose. This recipe uses very thin-sliced meat so tenderization isn't necessary. Sugar is used instead.

¼ yellow onion, thinly sliced
2 green onions, chopped, dark green parts separated from white and light green parts
⅓ cup soy sauce
3 tablespoons white sugar
2 tablespoons toasted sesame seeds
3 cloves garlic, minced
1 tablespoon sesame oil
¼ teaspoon Korean red pepper flakes
¼ teaspoon minced fresh ginger
⅛ teaspoon ground black pepper
1 ½ pounds beef sirloin steak, cut very thin using kitchen shears
1 teaspoon honey, or to taste

Steps:

  • Combine yellow onion, white and light green parts of green onions, soy sauce, sugar, sesame seeds, garlic, sesame oil, red pepper flakes, ginger, and black pepper in a bowl until marinade is well mixed. Add steak slices to marinade; cover and refrigerate, 1 hour to 1 day.
  • Heat a skillet over medium heat. Working in batches, cook and stir steak and marinade together in the hot skillet, adding honey to caramelize the steak, until steak is cooked through, about 5 minutes. Garnish bulgogi with green parts of green onions.

This ground beef bulgogi recipe makes an easy Korean beef bowl within 20 minutes. It is perhaps one of the most satisfying ground beef recipes.

1 lb ground beef (preferably 90% lean)
1/2 onion (finely chopped)
2 cloves garlic (minced)
2 green onion (finely chopped, optional)
4 tbsp soy sauce
2-3 tbsp brown sugar
2 tbsp sweet rice wine (mirim)
1 tbsp sesame oil
1 tsp pepper
1 tbsp toasted sesame seeds

Steps:

  • Mix all the bulgogi sauce ingredients in a small bowl and set aside.
  • Heat oil in a skillet over medium high heat. Add onion and garlic, and cook until soft, about 1-2 minutes. Add ground beef and cook until beef is browned and fully cooked.
  • Pour the sauce mixture over the beef and stir to combine. Allow the mixture to simmer until it is heated through and the sauce reduces, about 2 minutes. Garnish with green onion and sesame seeds, if desired. Serve immediately.
