ITALIAN PORK SANDWICHES



Italian Pork Sandwiches image

4 teaspoons ground fennel
4 teaspoons dried rosemary
2 teaspoons dried oregano
2 teaspoons garlic salt
2 teaspoons kosher salt
Freshly ground black pepper
Two 1-pound pork tenderloins
6 tablespoons olive oil
6 ciabatta rolls
1 clove garlic
1/2 cup mayonnaise
1 lemon, zested
5 cups arugula
2 tablespoons balsamic vinegar
3 jarred roasted red bell peppers, sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the fennel, rosemary, oregano, garlic salt, 1 teaspoon kosher salt and a generous amount of pepper in a small bowl.
  • Slice the pork tenderloins in half crosswise and rub evenly with the spice mixture. Heat 3 tablespoons olive oil in a large cast-iron skillet over a medium-high heat. Add the pork and sear, turning, until golden brown on all sides, about 5 minutes. Place the skillet in the oven and bake until the pork is cooked through and a thermometer inserted in the middle registers 140 degrees F, 18 to 20 minutes.
  • To toast the ciabatta rolls, place a dry skillet on a medium heat until it is hot, about 5 minutes. Slice the rolls in half and place the rolls in the skillet cut-side down until they are toasted how you like them, 15 to 30 seconds. Set aside.
  • Remove the pork to a cutting board and let rest for 5 minutes before slicing to your desired thickness.
  • Grate the garlic clove and combine it with the mayonnaise and lemon zest in a small bowl. Season with black pepper.
  • Add the arugula to a bowl, then drizzle over the remaining 3 tablespoons olive oil and the balsamic vinegar and toss to combine.
  • Generously spread the garlic mayonnaise on the tops and bottoms of the rolls. Place some pork slices on the bottom halves, then add slices of roasted red pepper and a generous amount of the arugula. Place the other halves of the rolls on top and serve.

1 round loaf (1 pound) unsliced Italian bread
1/2 cup pitted Greek olives, sliced
1/2 cup chopped pimiento-stuffed olives
1/4 cup minced fresh parsley
1/4 cup olive oil
1 tablespoon fresh oregano leaves
1 tablespoon balsamic vinegar
1 teaspoon minced garlic
1/2 teaspoon coarsely ground pepper
1/4 teaspoon crushed red pepper flakes
1/2 cup sliced pepperoncini
1/4 pound thinly sliced hard salami
1/4 pound sliced provolone cheese
1 jar (16 ounces) roasted sweet red pepper strips, drained
1/4 pound sliced pepperoni

Steps:

  • Cut loaf of bread in half; hollow out top and bottom, leaving a 3/4-in. shell (discard removed bread or save for another use). , In a small bowl, combine the olives, parsley, oil, oregano, vinegar, garlic, pepper and pepper flakes. Spoon half into bread shell. Layer with pepperoncini, salami, cheese, roasted peppers, pepperoni and remaining olive mixture. Replace bread top. , Wrap in plastic; refrigerate for 2-3 hours or overnight. Cut into eight wedges.

2 tablespoons olive oil
2 garlic cloves, minced
1/8 teaspoon crushed red pepper flakes
1/2 pound sliced deli roast beef
1/2 cup beef broth
2 tablespoons red wine or additional beef broth
2 teaspoons dried parsley flakes
2 teaspoons dried basil
1/4 teaspoon salt
1/4 teaspoon dried oregano
1/8 teaspoon pepper
4 sandwich rolls, split
4 slices provolone cheese

Steps:

  • In a large cast-iron or other heavy skillet, heat oil over medium-high heat. Add garlic and pepper flakes; cook and stir 1 minute. Add roast beef, broth, wine and seasonings; heat through. Place beef slices on rolls; drizzle with broth mixture. Top with cheese. Freeze option: Freeze cooled meat mixture and juices in freezer container. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally and adding a little broth if necessary.

4 tablespoons extra-virgin olive oil, plus more for drizzling
1 medium onion, thinly sliced
3 cloves garlic, thinly sliced
Kosher salt and freshly ground pepper
1 1/4 pounds minute steak
1/2 cup chopped fresh parsley
1 1/2 cups giardiniera (pickled vegetables), plus 3 tablespoons brine from the jar
4 ciabatta rolls, split open
4 ounces sharp provolone, thinly sliced
Hot sauce, for serving (optional)

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Add the onion and cook, stirring occasionally, until slightly softened, about 3 minutes. Add the garlic and cook, stirring occasionally, until soft, about 3 more minutes. Season with salt and pepper, transfer to a large bowl and set aside.
  • Lightly pound the steak between 2 sheets of plastic wrap until about 1/8 inch thick. Heat the remaining 2 tablespoons olive oil in the same skillet over medium-high heat. Add the steak in batches and cook until browned, about 30 seconds per side; season with salt and pepper. Transfer the steak to the bowl with the onion and garlic. Add the parsley and giardiniera brine and toss to coat. Drizzle the cut sides of the rolls with olive oil. Pile the steak and onion mixture on the roll bottoms and top with the giardiniera and provolone. Cover with the roll tops. Serve with hot sauce, if desired.

I found this recipe in the "Authentic Italian Recipes Cookbook", compiled by The Christopher Columbus Ladies Auxiliary of San Antonio, Texas. My husband loves this steak! It's a nice change from the normal way we grill our steaks. I serve it with either Fettuccini Alfredo or baked potatoes.

4 pieces steak, 1-inch thick, such as t-bone
2 garlic cloves, crushed
3/4 cup olive oil
1/3 cup fresh grated parmesan cheese
2 teaspoons oregano
1 cup breadcrumbs
salt, to taste
pepper, to taste

Steps:

  • Marinate steaks in garlic and olive oil for 30 minutes (15 minutes on each side).
  • Combine cheese, oregano and breadcrumbs, salt and pepper.
  • Dip steaks in the bread mixture.
  • Cook steaks under broiler, turning once.
  • For rare, cook 8-10 minutes; for medium cook 12-14 minutes; for well done cook 18-20 minutes.

6 medium sized cube steaks
2 tablespoons melted margarine
2 -3 tablespoons all-purpose flour
1 large green bell pepper, seeded and sliced
1/4 cup Italian dressing
1 large onion, sliced
2 medium tomatoes, sliced
3 small French bread, sliced in half lenghwise
6 slices mozzarella cheese, cut into quaters

Steps:

  • Sauté steaks in margarine until done; reserve dripping for gravy. Sprinkle small amount of flour into pan with dripping; cook until slightly thickened, stirring constantly.
  • In another pan, sauté green pepper in salad dressing for 5 minutes; add onion and tomatoes and cook 5 minutes more, or until tender.
  • Cover each bread half with a steak. Spoon on vegetables and gravy and top with cheese. Broil until the cheese melts.

Place a few cutlets down on a cutting board, then lay a piece or two of salami (if using) on top. Place a heaping teaspoon of filling on top of the salami, being careful not to put too much. At this point, you can choose to roll them up like cigars or bunch the meat up into a pouch and use two toothpicks to hold it closed.
