ZESTY ITALIAN SAUSAGE PASTA SAUCE
Steps:
- In a large, heavy-bottomed saucepan, heat the olive oil for a minute over medium heat.
- Add the onions and carrots, and sauté for a bit until the onions are translucent but not brown.
- Add the tomatoes and the garlic. Bring to a simmer and cook for 30 to 45 minutes, uncovered, until the sauce is slightly reduced. If you like, use a wooden spoon to break up the whole tomatoes while the sauce simmers.
- Meanwhile, slice the Italian sausage and brown it in a separate skillet in a small amount of oil. Remove from heat, drain and set aside.
- Remove from heat and pass through a food mill or purée in a food processor until smooth, working in batches if necessary.
- Return the sauce to the pot, add the browned sausage, and simmer for an additional 20 minutes.
- Season to taste with kosher salt and sugar, toss with the hot cooked pasta of your choice, and serve right away. A wide pasta like fettuccine would be a good choice.

Steps:
- Removed casing from sausage links and cut into 1/2 inch slices. In a large skillet, brown sausage over medium heat for about 10 minutes; remove and set aside.
- In a large skillet, heat ground beef, olive oil, garlic and onion over medium heat until meat is nicely browned; drain.
- Pour in tomatoes and tomato sauce; mix in salt, ground black pepper, basil, oregano, bay leaf and cooked sausage. Simmer uncovered for 1 hour, stirring occasionally.
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Mix cooked sauce with hot pasta and remove bay leaf from sauce before serving.

SICILIAN ITALIAN PASTA SAUCE AND SAUSAGE

- For Sauce, Combine all ingredients except Sausage Links in separate pot and bring to boil. Reduce to simmer for a minimum of 3 hours stirring frequently. For sausage links, place in a separate pot, fill with water to cover links. Bring to boil, then reduce to simmer for 20 minutes. After 20 minutes take each link, hold over the Sauce pot and slice link in half to allow juices to fall into Sauce pot. Place halved links into Sauce pot and continue simmering. Serve over favorite pasta and top with more fresh grated romano and parmesan cheese.
ITALIAN SAUSAGE, PEPPERS AND PASTA
Although the sauce used is a jarred sauce the outcome is a Chunky, robust flavored pasta sauce, that is slow cooked for that unique homemade taste. My husband got this recipe from an Italian co-worker.

Steps:
- Slice Italian Sausage to 1/2 inch slices.
- Heat pan with 1 tbl olive oil on medium heat and saute sausage until cooked and brown. Place sausage onto paper towel to drain.
- In same pan heat 1 tbl of olive oil on medium heat and saute peppers, garlic and mushrooms for 2 - 4 minutes.

My Nana used to cook this for me when I was young and as she prepared things and we waited for the sauce to finish, she'd tell me great stories about her life in Sicily and other secret business! This recipe is the best sauce I've ever had- I really think it can bring the family together. Just prepare it and you'll see that when dinner time comes everyone's mouths will be watering because of the great smell, the entire family can gather around the table and there will be enough for everyone, I promise! Good for vegetarians too-just substitute 2 1/2 pounds of chopped zucchini for the meatballs.

Steps:
- To make the meatballs, combine bread and milk or water in a medium bowl. Mix in ground beef, eggs, Romano cheese, parsley, and salt and pepper to taste. Form golf ball-sized meatballs; place into freezer to firm up.
- To make sauce, heat olive oil in a large pot on medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes. Add garlic and 1 sausage link; cook about 3 minutes more.
- Meanwhile, in a large skillet over medium heat, brown beef chunks and pork neck bones; set aside.
- When onions and garlic are done, turn heat down to low. Add tomato paste and cook for a few minutes. Stir in the browned beef and pork, crushed tomatoes, wine, bay leaves, cinnamon, parsley, basil, and salt and pepper. Bring sauce to a simmer, then reduce the heat to low and cook for 3 to 4 hours.
- Once you add the meatballs, let sauce simmer for 1 hour. When sauce is nearly ready, bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Cover pasta with sauce and meatballs and serve immediately.
