Time 25m

Number Of Ingredients 8

1 tablespoon plus 2 teaspoons olive oil
Coarse salt and ground pepper
1/8 teaspoon red-pepper flakes
3 garlic cloves, thinly sliced
2 tablespoons fresh lemon juice
6 plum tomatoes, cored, halved lengthwise, and sliced 1/2 inch thick
1 1/2 pounds medium shrimp, peeled, deveined, and tails removed
2 tablespoons fresh parsley, chopped

Steps:

  • In a large nonstick skillet, heat 1 tablespoon oil over high heat; swirl to coat pan. Season shrimp with salt and ground pepper. Add half the shrimp to the pan; cook until opaque throughout, 3 to 4 minutes. Transfer to a plate; repeat with remaining 2 teaspoons oil and shrimp.
  • Reduce heat to medium; add garlic and red-pepper flakes. Stir in tomatoes; cook until they begin to break down, 4 to 6 minutes. Season with salt.
  • Return shrimp and any accumulated juices to pan. Add parsley and lemon juice; toss to coat. Serve over pasta, rice, or spinach, if desired.

QUICK SAUTEED SHRIMP IN TOMATO GARLIC SAUCE

Quick Sauteed Shrimp in Tomato Garlic Sauce image

Provided by Sunny Anderson

Time 25m

Yield 4 servings

Number Of Ingredients 9

2 tablespoons olive oil
3 scallions, finely chopped
3 cloves garlic, sliced into thin slivers
Salt and freshly ground black pepper
4 Roma tomatoes, seeded and chopped
1/4 cup clam juice
2 tablespoons fresh lemon juice
1/2 teaspoon sugar, optional
16 colossal shrimp, shelled and deveined with tail on (about 1 1/4 pounds)

Steps:

  • In a large saute pan over medium heat, add the olive oil, scallions, garlic, a nice pinch of salt and a few grinds of black pepper. Cook until the greens of the scallions are wilted and darkened with the oil and the garlic is tender and slightly golden, about 4 minutes. Add the tomatoes, season with salt and cook while stirring until the tomatoes are softened, about 2 minutes. Add the clam juice and lemon juice, bring to a light simmer and stir. Taste, and if the tomatoes and lemon juice are too tart, add sugar and stir.
  • Sprinkle the shrimp with salt and pepper and add to the pan. Cook on 1 side until the shrimp begins to turn opaque and curl slightly, 2 to 3 minutes. Then toss and cook until they just begin to turn pink on the other side, 1 to 2 more minutes. (Shrimp cooks fast and there's a thin line between done and overdone; the best rule is to remove the pan from the heat as they begin to reach the finish line. Continue tossing and the heat of the pan will continue to cook them until done.) Serve warm or chilled.

GRILLED SHRIMP WITH GRILLED TOMATO COCKTAIL SAUCE

Grilled Shrimp with Grilled Tomato Cocktail Sauce image

This zippy cocktail sauce can be made in a snap without so much as one dirty pot. Simply grill all of your vegetables and throw them into a blender with two essential cocktail sauce ingredients: Worcestershire sauce and prepared horseradish. Whether you serve the sauce warm or at room temperature alongside shrimp hot off the grill, the dish is perfect for a party or as a simple dinner-just toss a crisp salad and get some crusty bread to complete the meal.

Provided by Food Network Kitchen

Time 35m

Yield 6 to 8 servings

Number Of Ingredients 10

2 ripe Roma tomatoes
1/2 large yellow onion, cut into three or four 1/2-inch rounds
1 lemon, halved
3 tablespoons extra-virgin olive oil, plus more for oiling the grill grates
Kosher salt and freshly ground black pepper
1 teaspoon Worcestershire sauce
1 teaspoon honey
1 tablespoon prepared horseradish
Hot sauce, to taste
2 pounds large shrimp, peeled and deveined

Steps:

  • Prepare a grill or large grill pan for high heat.
  • Put the tomatoes, onion and lemon on a baking sheet. Brush with 1 tablespoon of oil and sprinkle liberally with salt and pepper. Lightly oil the grill grates.
  • Arrange the tomatoes and onion on the grill. Put the lemon halves cut-sides down on the grill. Cook until charred in spots, rotating the tomatoes and onion slices as needed to ensure even cooking, 6 to 8 minutes. Transfer the grilled vegetables and lemon to the same baking sheet that they were on before. Allow to cool 5 minutes. Leave the grill on high heat.
  • Combine the tomatoes and onions in a blender along with the juice of half of the grilled lemon, Worcestershire sauce, honey, horseradish, hot sauce and 1 tablespoon oil. Blend until smooth; the sauce should be the texture of tomato puree. Season with 1 teaspoon salt and 1/4 teaspoon pepper. Pour into a small serving bowl and reserve.
  • Toss the shrimp with the remaining tablespoon oil and sprinkle liberally with salt and pepper. Grill until lightly charred in spots on both sides and just cooked through, 2 to 3 minutes total. Transfer the shrimp to a large platter and serve with the reserved grilled tomato cocktail sauce. Cut the remaining grilled lemon into wedges and serve on the side.

Categories     Main Dish Recipes     Pasta     Spaghetti Recipes

Time 1h20m

Yield 8

Number Of Ingredients 14

20 large shrimp, deveined with shell and head left on
4 tomatoes, or more to taste
1 bunch flat-leaf parsley, divided
¼ cup extra-virgin olive oil
1 large onion, chopped
1 red bell pepper, chopped
1 fresh red chile pepper, finely chopped
4 large cloves garlic, sliced, or more to taste
½ cup water
2 tablespoons tomato paste
1 tablespoon dried oregano
salt and ground black pepper to taste
1 teaspoon paprika
1 ⅝ pounds spaghetti

Steps:

  • Peel shrimp and place skin, heads, and tails into a large saucepan. Fill pan with water and bring to a boil. Reduce heat to low and let simmer, about 45 minutes.
  • Combine tomatoes and 1/2 the parsley in a blender; puree until smooth.
  • Heat olive oil in a separate pan over medium heat. Add onion, bell pepper, and chile pepper; cook and stir until softened, about 5 minutes. Add garlic; cook until fragrant but not browned, 1 to 2 minutes.
  • Pour pureed tomato mixture into the pan with the peppers. Add water, tomato paste, oregano, salt, and black pepper. Stir well; add paprika. Let sauce simmer on low to medium heat until juices have reduced.
  • Strain shrimp shells from the water. Bring water back to a boil and add spaghetti. Cook spaghetti, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Reserve 1 cup of the cooking water and drain the rest.
  • In the meantime, add shrimp to the tomato sauce. Add the reserved water, stir well, and cook until shrimp is pink, about 3 minutes. Plate spaghetti and spoon the sauce on top; garnish with the remaining parsley.

  • In a medium bowl, combine the thawed cleaned shrimp with 1/2 teaspoon paprika, salt and pepper (about 1/4 teaspoon each), and half the minced garlic. Mix well.
  • Heat the 1 tablespoon of olive oil in a large skillet. Add the finely diced onion and the rest of the minced garlic. Saute over medium-high heat for about 3 minutes, or until the onion starts turning yellow. Don't let it burn. Use a spatula to move the onion to the edge of the skillet.
  • Add the shrimp to the center of the skillet, making sure each shrimp is touching the skillet. Cook undisturbed for 2-3 minutes, or until the shrimp tails start to turn pink. Drizzle in an additional tablespoon of olive oil if the skillet seems dry.
  • Add the can of diced tomatoes (with the liquid) and fresh herbs. Stir. Continue to cook for another 2-3 minutes, or until the shrimp is fully cooked and the tomatoes are heated through and released juices to make a nice sauce. Garnish with fresh herbs and serve warm over pasta or rice.

  • Heat a skillet to medium high heat. Once hot, add olive to the skillet and then add chopped onions. Cook onions (occasionally stirring) for 1-2 minutes until translucent and slightly browned. Add garlic to the pan can cook for 30 seconds.
  • Add tomato sauce, capers, red pepper flakes and 1/4 tsp of salt to the skillet. Stir and let the sauce simmer for 1-2 minutes. Place each shrimp into the sauce one at a time (try not to dump excess "shrimp juice" from the seasoning bowl into the sauce). Push each shrimp down into the sauce. Cover and simmer for 6 minutes.
  • Turn off the heat and add parsley to the shrimp. Stir and allow the shrimp to sit in the pan for an additional two minutes before serving. Enjoy!
