MAC AND ERNIE'S FRIED SHRIMP WITH TARTAR SAUCE

Steps:
- Fill a heavy bottomed deep pan like a Dutch oven with peanut oil. Fit with a deep-frying thermometer and heat to 360 degrees F.
- Mix together the flour, pepper, salt, Cajun seasoning and onion powder in a bowl.
- Beat the eggs in a separate bowl, then slowly beat in the evaporated milk.
- Line a sheet pan with paper towels. Put a cooling rack on top.
- Dip some shrimp into the egg/evaporated milk mixture, then toss into the seasoned flour. Shake off excess flour. Slowly lower into hot oil and fry until golden brown and delicious, about 3 minutes. Remove with a slotted spoon to cooling rack. Let oil come back to 360 degrees F. Repeat with remaining shrimp, egg mixture and seasoned flour. Serve with Tartar Sauce.
- Mix together the mayonnaise, onion, pepper, dill relish, dillweed, pepper and sweet relish. Serve on the side with the shrimp.

Shrimp and fish tacos are some of my favorite meals. Here is one that come together fast if you use prepackaged slaw mix and do all the chopping for the tartar sauce in the food processor. Found this recipe in Cuisine at Home.

- Preheat oven to 400.
- Stir together maynnaise, jalapenos, onion, cilantro, capers, and lime juice for the tartar sauce.
- Wrap tortilla in aluminum foil; warm them in the oven for 10 minute.
- Toss green and red cabbage in a bowl with 1 Tbs oil. Season with salt and pepper to taste; set asice.
- Mix chili powder with the 1 1/2 tsp salt; toss with shrimp. Sear shrimp in a large skillet in the remaining oil over high heat until shrimp are cooked through on both sides, about 3 min total.
- Serve shrimp inside a corn tortilla with cabbage and tartar sauce.

SHRIMP BURGERS WITH AVOCADO TARTAR SAUCE
You know how I love my sweet Charleston shrimp-to me there's nothing better, so I wanted to enjoy them in sandwich form. This recipe makes 8 shrimp patties, and that's on purpose. Whether I'm feeding a crowd or prepping ahead, these burgers can be shaped and frozen to be enjoyed whenever I have a craving. The Tex-Mex flavors I use to season the patties pair perfectly with my homemade avocado tartar sauce that I like to slather on the rolls.

- Make the tartar sauce: With the motor running, drop the shallot and garlic through the food chute of a food processor until minced. Remove the lid and add the avocado, lime zest, lime juice, capers, parsley, mayonnaise, Dijon and seasoning salt. Pulse until combined. Season with salt and pepper. Cover and refrigerate until ready to serve.
- For the burgers: Wash and dry the food processor bowl and blade. Add the shrimp and cilantro to the food processor. Pulse until combined. Transfer to a large bowl.
- Combine the eggs, mayonnaise, Dijon and seafood seasoning in a small bowl. Add to the shrimp mixture and stir gently to combine. Fold in the crackers. Shape the mixture into 8 patties.
- Heat a large cast-iron skillet over medium-high heat. Add some canola oil. Add the patties and brown until cooked through, 3 to 4 minutes on each side.
- To serve, spread the tartar sauce on the rolls. Top with the patties, lettuce, onion, tomatoes and roll tops.
EASY FRIED SHRIMP AND TARTAR SAUCE

- Pour the oil into a heavy-bottomed pot fitted with a deep-frying thermometer. Heat over medium-high heat to 375 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
- In a medium mixing bowl, whisk together the rice flour and beer until a smooth batter is formed. Season with 1/2 teaspoon salt and pepper.
- Lightly salt the shrimp. Holding the tails, dip the shrimp into the batter to evenly coat on both sides.
- One by one, gently drop the battered shrimp into the hot oil. Fry, flipping once if necessary, until golden brown on both sides, 1 to 2 minutes. While frying the shrimp, be sure to monitor the temperature of the oil and maintain it at 375 degrees F. Transfer the fried shrimp to the cooling rack and sprinkle generously with salt.
- Serve the fried shrimp with Tartar Sauce for dipping.
- Mix the mayonnaise, dill, cornichons, vinegar, capers, mustard and some salt and pepper in a small bowl. Refrigerate until serving.

- Bring 2 quarts water to boil in large pot.
- Add shrimp and cook until pink and firm, about 5 minutes.
- Remove shrimp from water with slotted spoon and place in large mixing bowl. Sprinkle with contents of taco seasoning mix and toss well to coat. Or, put shrimp in plastic bag with seasoning, close bag well, and shake to coat.
- Serve warm, or refrigerate and serve up to 24 hours later.
