COCONUT SHRIMP WITH MANGO SALSA



Coconut Shrimp with Mango Salsa image

20 jumbo shrimp
1 teaspoon unsweetened cocoa powder
1 teaspoon curry powder
1 teaspoon lemon pepper
8 ounces lager beer
1 cup self-rising flour
1 cup all-purpose flour
8 ounces shredded coconut
3 tablespoons extra-virgin olive oil
1/2 cup Pineapple Mango Salsa, recipe follows
2 1/2 tablespoons shredded coconut
1 teaspoon chopped lemon zest
2 cups cooked long-grain white rice
1 cup 1/4-inch-diced mango
1 cup 1/4-inch-diced pineapple
1 cup 1/4-inch-diced tomato
1/2 cup 1/4-inch-diced yellow onion
1 tablespoon lemon juice
1 tablespoon extra-virgin olive oil
1 tablespoon white wine vinegar
1/2 cup 1/4-inch-diced green pepper
1 tablespoon chopped fresh Italian parsley
1 tablespoon seeded and diced jalapeño pepper
1 teaspoon finely chopped garlic
1/4 teaspoon kosher salt
Pinch ground black pepper

Steps:

  • For the coconut shrimp: Peel, devein and butterfly the shrimp, leaving the tails on. Rinse and pat dry.
  • Line a sheet pan with paper towels and arrange the shrimp on top. Sprinkle with the cocoa powder, curry powder and lemon pepper. Refrigerate for 10 minutes to allow the seasoning to be absorbed.
  • Mix together the beer and the self-rising flour in a bowl to make a batter.
  • Add the all-purpose flour to another bowl, and the coconut to a third. Arrange the bowls in a row so that the flour bowl is first, batter bowl second and coconut bowl third.
  • Line a sheet pan with wax paper. Dip each shrimp into the flour, followed by the batter and finally the coconut, pressing down lightly so that the coconut adheres to the shrimp. Transfer the dressed shrimp to the lined sheet pan. Refrigerate at least 10 minutes and up to 4 hours.
  • Once ready, line a plate with paper towels and set aside. Add 1 tablespoon oil to a 12-inch skillet. Heat the oil until it is shimmering and hot enough to pan-fry the shrimp.
  • Add 6 to 7 of the battered shrimp and cook until golden brown on both sides. Transfer to the lined plate to absorb excess oil.
  • Continue until all the shrimp are cooked, adding more oil as needed.
  • For the tropical rice: Stir the Pineapple Mango Salsa, coconut and lemon zest into the rice and serve immediately with the shrimp.
  • Combine the mango, pineapple, tomato, onion, lemon juice, oil, vinegar, green pepper, parsley, jalapeño, garlic, salt and pepper in a large mixing bowl. Taste for salt and pepper and add more if needed.
  • Chill the salsa in a covered container. Will keep in the refrigerator for 4 days.

2 ounces peanut oil, plus 2 ounces
24 jumbo shrimp
3 cloves garlic, smashed
1/4 cup chopped ginger
1/4 cup chopped green onions
2 stalks lemongrass, chopped
1 green apple, cored and chopped
1/2 cup chopped galangal
2 bananas, peeled and chopped
1 teaspoon ground cumin
4 tablespoons curry powder
1 lemon, juiced
1 lime, juiced
1 orange, juiced
4 tablespoons tamarind paste
5 cups coconut milk
1/4 cup chopped cilantro leaves
1/4 cup torn Thai basil leaves
3 kaffir lime leaves
Coconut Rice, recipe follows
2 cups jasmine rice
1/4 pound butter
1 orange, zested
1 tablespoon ground cumin
1 cup fresh grated coconut
Pinch saffron
1/4 cup chiffonade cilantro, Thai basil, or mint leaves

Steps:

  • In a saucepan, add peanut oil and heat. When the oil is hot, add the shrimp and saute quickly, just until they start to turn pink, but are not cooked through. Remove the shrimp from the pan to a plate.
  • Add the garlic, ginger, green onion, lemongrass, apple, galangal, and bananas to the same pan and saute until soft with no color, about 4 minutes. Add cumin and curry powder and saute for 1 minute. Add the lemon, lime, and orange juice along with the tamarind paste, coconut milk, and cilantro. Bring to a boil and simmer for 20 minutes.
  • Strain the sauce and return to the heat. Add the Thai basil and kaffir lime leaves.
  • Place the shrimp in the sauce and cook until just heated through. Place some rice on each plate. Top the rice with 3 shrimp and surround with the sauce.
  • Rinse the rice 2 or 3 times and drain well. Set up a bamboo steamer on the stove. Place the rice in a metal bowl and fill with boiling water until the water is 1/2 inch above the rice. Place the bowl in the steamer and steam until tender, about 20 minutes.
  • Remove the cooked rice from the steamer and cool slightly. To the slightly cooled rice, add the butter, orange zest, cumin, and coconut. Stir until well mixed and add the saffron. Before serving, stir in the cilantro.

2 cups coconut milk
2 cups water
1 teaspoon coconut oil
1 teaspoon salt
2 pounds shrimp, raw
1 teaspoon salt
1 teaspoon black or white pepper
1 teaspoon balsamic vinegar
2 fresh oranges, squeezed
6 cloves garlic, 3 pressed and 3 chopped
1/2 cup guava jelly
3 tablespoons any dark vinegar
1 teaspoon lemon juice
4 fresh cucumbers, cut into chunks
1 tomato, diced
1 clove garlic, sliced
4 fresh mangoes, peeled and sliced
Pinch black pepper
1/2 cup chopped scallions

Steps:

  • Coconut Rice:
  • Combine all ingredients in a saucepan. Bring to a boil over high heat, cover tightly, reduce heat to very low, and simmer for 20 minutes. Fluff rice when cooked.
  • Marinated Garlic Shrimp:
  • Clean and rinse shrimp in cold water. Place in a glass bowl. Add salt, pepper, vinegar, orange juice, and pressed garlic. Cover and let marinate for 20 minutes.
  • Drain marinade from shrimp, add chopped garlic, and arrange shrimp on skewers. Grill until cooked, about 1 1/2 to 2 minutes on each side.
  • Mango Cucumber Salad with Guava Dressing:
  • In a glass bowl whisk jelly, vinegar, and lemon juice. Fold in cucumber, tomato, and garlic. Add mango, pepper, and scallions to mixture. Toss gently and keep chilled until served.

2 tablespoons olive oil
1 -2 tablespoon cajun seasoning, to taste (emerils or tony cachere's)
4 metal skewers
4 tablespoons butter
1/4 cup chopped scallion
2 garlic cloves
1/2 teaspoon grated ginger
1 cup jasmine rice
1 teaspoon fresh lemon juice
1 teaspoon fresh lime juice
2 cups vegetable broth
salt and pepper
1 cup coconut milk
2/3 cup coconut flakes
mango peach salsa (to garnish) (optional)

Steps:

  • preheat oven to 350, preheat broiler to high.
  • for the rice:.
  • melt butter in an oven safe dutch oven.
  • add scallions, garlic and ginger and cook until softened.
  • add rice, stir one minute.
  • add lemon and lime juice, vegetable broth, salt, pepper, bring to a boil.
  • cover and place in oven, bake 20 minutes.
  • remove, lift lid and let it cool 10 minutes.
  • fluff with a fork and mix in coconut milk and coconut.
  • cook over low heat until warmed through.
  • for shrimp: coat with olive oil and cajun seasoning.
  • thread 3 shrimp vertically on each skewer and broil 2 minutes per side.
  • serve shrimp over rice garnished with salsa.

1 1/2 lbs large shrimp, deveined and peeled
2 tablespoons olive oil
1/3 cup sliced then chopped green onion
3 garlic cloves, minced
1/4 teaspoon ground cumin
salt, to taste
pepper, to taste
2 tablespoons fresh lime juice
1/4 cup finely chopped cilantro
1/2 teaspoon lime zest
2 cups coconut rice (see recipe)

Steps:

  • Heat olive oil in a 12 inch skillet over medium high heat. Add green onions and garlic and saute until garlic is light golden, about 30 seconds.
  • Add shrimp, sprinkle cumin evenly over top, season with salt and pepper to taste and saute until shrimp is opaque and cooked through, about 3 minutes.
  • Remove from heat and toss with lime juice, cilantro, and lime zest. Serve with warm coconut rice. (I added mango and black beans to mine).

12 ounces crushed pineapple in juice
3/4 cup sweetened flaked coconut
2 teaspoons vegetable oil
1 large banana
2 cups quick-cooking rice

Steps:

  • Drain juice form pineapple can into bowl with shrimp in it and set aside.
  • Prepare rice as directed on box and add 1/4 cup of coconut to water while cooking.
  • Cut banana in half long ways but do not seperate. Then slice banana across in 1/2 inch thick pieces.
  • Add vegetable oil, banana slices and crushed pineapple to frying pan. Toss fruit to coat it and cook on low heat. Mix constantly until banana begins to break up.
  • Transfer shrimp and pineapple juice into clean frying pan and add 1/2 cup coconut. Begin to cook on medium to high heat for 5 minutes.
  • Add banana and pineapple mixture to shrimp and cook until juice is nearly evaporated.
  • Serve over rice.

1 cup coconut flakes
1 cup panko breadcrumbs
3 eggs, Beaten
1 cup flour
3 cups frying oil
1 cup guava, concentrate
1/2 cup rice vinegar or 1/2 cup white vinegar
1/2 cup pineapple juice
1/2 cup sugar
1 tablespoon cornstarch
1 tablespoon water

Steps:

  • Pre-heat oil to 350 degrees in medium frying pan.
  • In a medium, mixing bowl, combine coconut and panko.
  • Dredge shrimp in flour, then in the egg mixture, then in the panko and coconut mix, pressing down firmly to ensure proper breading.
  • Fry shrimp until golden brown being sure not to burn. (The coconut contains a high sugar content, which may burn quickly.)
  • In a separate saucepan, combine sugar, vinegar, and pineapple juice. Bring to a boil and allow sugar to incorporate into the sauce.
  • Add guava concentrate and allow to boil.
  • Mix the cornstarch and water to make a slurry. (You may use cornstarch slurry to thicken the sauce to the correct consistency. The sauce should be able to coat a spoon.)
  • You may use the sauce as a dip or simply pour the sauce over the shrimp when ready to serve.

1 1/2 cups sweetened flaked coconut
1 cup long grain rice

1 small yellow onion, sliced
8 leaves napa cabbage, thinly shredded
1 cup shredded carrot
1 teaspoon crushed red pepper flakes
3 large garlic cloves, chopped
fresh ginger, peeled and grated (3-inch piece)
1 red bell pepper, seeded and thinly sliced
3 tablespoons tamari
5 scallions, thinly sliced

Steps:

  • In a saucepan, combine 1 ½ cups chicken stock with 1 cup shredded coconut; bring to a simmer; add in the rice.
  • Return to a simmer over low heat and place a tight-fitting lid on the pan; cook the rice for 18 minutes.
  • Heat a small skillet over medium heat; add in the remaining ½ cup shredded coconut; stir frequently and toast until golden, about 2-3 minutes (once the coconut starts to brown it will go from golden to burnt quickly, so keep an eye on it).
  • Remove coconut from pan and reserve.
  • Heat a big skillet over med-high heat with a tablespoon vegetable oil.
  • Season shrimp with salt and pepper; add to the hot skillet.
  • Stir/saute for 2 minutes on each side, or until they turn pink but are not yet firm, then remove from the pan to a plate; reserve.
  • Return the skillet to the heat and add remaining 2 tablespoons oil; add in onions, cabbage, carrots, red pepper flakes, garlic, ginger, red bell pepper to the pan.
  • Cook, stirring often, for 3-4 minutes.
  • Add in the tamari and remaining cup of stock, then toss the shrimp back into the pan; stir to combine.
  • Cook the shrimp and veggies for 2 more minutes, or until the shrimp are cooked through.
