In this healthy rendition of the classic salad, nonfat yogurt replaces mayonnaise. It also includes fewer walnuts -- and these are toasted to bring out their flavor.

Number Of Ingredients 12

1 red apple, such as McIntosh or Red Delicious, unpeeled, cored, and coarsely chopped
1 green apple, such as Granny Smith or Crispin, unpeeled, cored, and coarsely chopped
2 stalks celery, cut into thin half-moons
3 ounces (about 1/2 cup) red grapes
3 ounces (about 1/2 cup) green grapes
1 lemon
6 tablespoons plain nonfat yogurt
2 teaspoons Dijon mustard
1 tablespoon honey
1 bunch (about 1 pound) Bibb or Boston lettuce, washed and torn into bite-size pieces
1/4 cup walnuts, toasted and chopped
Chives, for garnish

Steps:

  • Place apples, celery, and grapes in a medium bowl, and toss with juice of half the lemon. In another bowl, whisk together yogurt, mustard, honey, and juice of remaining half lemon. Pour half of the dressing over the apple mixture, tossing to combine. Serve over greens, drizzling remaining dressing over salad. Garnish the salad with chopped walnuts and snipped chives.

The original Waldorf salad was created at the Waldorf Astoria hotel in New York in the late 1890s by Chef Oscar Tschirky. It was considered the height of sophistication and originally was nothing more than apples, celery, and mayonnaise. Chopped nuts and grapes came later. This version features shrimp.Source unknown

- 1 pound large shrimp, 31 to 40 per pound, peeled and deveined
- 1/2 cup mayonnaise
- 1/3 cup buttermilk
- 1 tablespoon fresh lemon juice, more to taste
- 1 tablespoons roughly chopped fresh tarragon
- 1 teaspoon dijon mustard
- kosher salt and freshly ground black pepper
- 2 cups diced sweet apples, preferably fuji, about 1 1/2 apples,
- 2 cups red seedless grapes, halved
- 1 1/2 cups diced celery, 3 to 4 ribs, cut into 1/4 inch dice
- 1/3 cup blanched slivered almonds, lightly toasted
- 1 tablespoons thinly sliced fresh chives, optional
- 12 tender butter lettuce leaves.

Steps:

  • Put shrimp in a steamer basket over simmering water and steam until just cooked through, about three minutes. The center should still be slightly translucent. Let cool. In medium bowl, whisk the mayonnaise, buttermilk, lemon juice, tarragon, and mustard. Season with salt and pepper to taste.
  • Toss shrimp, apples, grapes, celery and slivered almonds. Toss with enough of the dressing to coat the ingredients well. You may not need it all. Taste and add more salt, pepper, or lemon juice as needed. Sprinkle with chives, if using. Serve this salad on bed of lettuce leaves or put the leaves next to the salad bowl and have guessed spoon some of the salad onto a leaf and roll it up to eat out of hand. Makes 6 to 8 servings.

1 lb large shrimp, peeled and devined (31-40 per lb)
1/2 cup mayonnaise
1/3 cup buttermilk
1 tablespoon lemon juice, fresh, more to taste
1 tablespoon tarragon, fresh, roughly chopped
1 teaspoon Dijon mustard
kosher salt
black pepper
2 cups apples, diced (preferably Fuji)
2 cups red grapes, seedless and halved
1 1/2 cups celery, diced
1/3 cup slivered almonds, lightly toasted
1 tablespoon chives, thinly sliced
12 butter lettuce leaves

Steps:

  • Put the shrimp in a steamer basket over simmering water and steam until just cooked through, about 3 minutes (the centre should still be slightly translucent). Let cool.
  • In a medium bowl, whisk the mayonnaise, buttermilk, lemon juice, tarragon and mustard. Season with salt and pepper.
  • Cut the shrimp into pieces and mix in a large bowl with the apples, grapes, celery, and almonds. Toss with enough of the dressing to coat the ingredients well.
  • Taste and add more salt, pepper or lemon juice as needed.
  • Sprinkle the salad on beds of lettuce leaves . Serve.
